MIX BEAN FAJITA'S with baby spinach, avocado, chimichurri & tortillas

Mix Beans 1. Place mix beans in a bowl and evenly sprinkle over the mix. Drizzle over a little oil and stir the spice mix through the Spice Mix beans. Leave while you prep veggies. Chimichurri 2. Remove the outer layer of your onion and slice into wedges. Remove cheeks of capsicum and cut into 1cm slices. Slice Onion avocado in half and then remove seed. Remove skin and then slice into wedges. Wash baby spinach. Set avocado and baby Baby Spinach spinach aside. Avocado 3. Heat a frypan on your cooktop over medium high heat and Tortilla's add a little oil. Add onion into the pan and cook until just softening. Add the capsicum to the pan and cook until a little golden and onion has caramelised a little. Add beans into the pan and cook, stirring for 3-4 minutes or until are fragrant. Season well with & pepper. Taste test and adjust if required. Our spice mixes do not contain salt. E Q U I P M E N T 4. If you'd like to heat your tortilla's you can do so in a clean Frypan frypan by adding them a couple at a time and allow to toast gently then turn and do the same on the second side. Bowl Alternatively you can place in your microwave for 15-20 Chopping board & knife seconds.

5. Plate up with tortillas, fajita mix, baby spinach, avocado and top with chimichurri to your liking. Enjoy.
