Flank Steak Salad Recipe Grilled Flank Steak Salad 6 cups Fresh mixed baby greens (spring mix) For the Red Wine Vinaigrette 2 ea Medium Vidalia onions, sliced 1/2 cup Red wine vinegar 2 Tbsp Olive oil 2 Tbsp Dijon mustard 12 ea Cherry tomatoes, halved 2 tsp Honey 4 oz Gorgonzola, coarsely crumbled 1/2 tsp Salt 12/3 cup Red wine vinaigrette* 1 cup Olive oil 11/4 lb Flank steak, lightly oiled & rubbed Freshly ground black pepper generously with beef spice mix, grilled to 130˚ F internal temperature For the Beef Spice Mix Ingredients 6 cups Oil for frying 1 Tbsp Montreal steak 1 large Idaho potato, julienne fine (cut like seasoning potato sticks) 1 tsp Kosher salt Salt and freshly ground black pepper 1 tsp Black pepper 1 Tbsp Granulated garlic 1 Tbsp Granulated onion 1 Tbsp Cajun spice 1 Tbsp Crushed red pepper flakes 1 Tbsp Thyme 1 Tbsp White pepper 1. In a hot sauté pan, place half the olive oil and sliced onions and cook on medium high heat until caramelized. Onions should have an even brown color. Set aside. 2. Heat frying oil to 375° F. Place julienne potato sticks carefully into hot oil. While cooking, stir with a long handled pair of metal tongs. Cook potatoes until crispy and lightly browned (about 2 minutes). 3. In a large bowl, combine the mixed baby greens, caramelized onion, cherry PREPARATION tomatoes, and half of the cheese. Toss the salad with enough vinaigrette to coat. Season the salad with salt and pepper, to taste. Arrange the salad on a platter. 4. Cut the steak crosswise into thin slices on an angle. Arrange the steak slices atop the salad and sprinkle with the remaining cheese. Drizzle more vinaigrette over the steak slices. Garnish with crispy potato sticks and serve. For the Red Wine Vinaigrette 1. Mix the vinegar, mustard, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. For the Beef Spice Mix 1.     International Journal of Science and Research (IJSR) ISSN: 2319-7064 Index Copernicus Value (2016): 79.57 | Impact Factor (2017): 7.296 Enrichment of Traditional Spice Mix Powder with Niger Seeds Shaheera Afsheen, Varsha Peram Abstract: Iron Deficiency Anemia and Calcium Deficiency in adolescent girls, pregnant and lactating women is the prevailing concern globally, nationally and even at the regional level. The aim of the present study was to nutritionally enrich the traditional spice mix powder with Niger seeds which are an excellent source of Iron and Calcium. Using different amounts of Niger seeds three variations (Basic and 2 Variations) were developed. The Basic standardized recipe consisted of maximum amount (60g) of Niger seeds along with different spices and condiments. Variation 1 was developed in the ratio of 2:1 (2 parts of Niger seeds and one part of Sesame seeds) and Variation 2 was developed in the ratio 2:1 (2 parts of Niger seeds and one part of Bengal gram dal). The sensory attributes i.e. the Color, Flavor, Texture, Taste, After taste and Overall acceptability were evaluated by 70 panelists. The Basic recipe was the most acceptable one with the overall mean score of 8.54 followed by Variation 1(8.41) and Variation 2(8.3). Shelf life study done for 4 weeks revealed that at 5% level of significance there is a significant decrease in the acceptance due to high Fatty acid content of Niger seeds. The serving size was determined to be one tablespoon (15gms). The developed products i.e. Basic, Variation 1 and Variation 2 were able to meet 7.7%, 5% and 7% respectively of the RDA of Iron of an adolescent girl whereas in regards to Calcium it was able to meet 6.8%, 4.8% and 9.4% of the RDA respectively.
