Allergen Alert Reference Guide for National Menu Items

VALID FOR: Fall C4 - 2021 Effective 9/1/2021 VERSION 1 Below is a listing of our national menu items, categorized under specific allergens. There are 8 major categories of allergens, which may be of concern to our customers: Wheat (and Gluten also included though not an allergen), Tree Nuts, Peanuts, Milk (Dairy), Soy, Egg, Fish and Shellfish. Place this document in the front of your Nutritional Guidebook. Use this as a general guide. If a customer requests a "special order", such as a change to another bread, it will require you to refer to the full nutritional documents for a complete listing of ingredients. Nutritional documents are available on the online ops manual and our Panera on SharePoint. NOTE: Those items that do "NOT" contain any listed allergens will reflect "No Major Allergens Present" under the allergen categories. NOTE: Many of our products may come into contact with common allergens during production and preparation. NOTE: "Advisory Warning" has been added for menu items that are manufactured on the same equipment as products with allergens not normally present in the menu item. For allergen information on variance menu items that are not national menu items, please refer to the full nutrition, ingredient and allergen information documents.
