The key challenge is taste in the crop, and we have no perfect years. So diversification works for us.” One of the most successful additions to the orchard was Asian pears. “We were the first in El Dorado County to grow Asian pears,” said Barbara Hoover, family matriarch. “And we are still the biggest producer of Asian pears in the county,” adds Chris. One of California’s oldest wine-producing areas, vineyards and wineries first flourished here during the Gold Rush era. A century later, in the 1970s, a renaissance in the growth of premium vineyards and wineries began again. Today, the county has more than 2,000 acres of vines producing 50 grape varieties and home to more than 70 wineries. Each passionately tended by winemakers who love coaxing from each diverse acre its perfect harvest and each different in their approach. Come explore the El Dorado Wine Country and discover some of California’s most sophisticated wines. Corn - Tarragon Soufflé Ingredients 1/3 cup milk 1 Tbsp. sugar 1/2 tsp. salt 1/2 tsp. black pepper 3 Tbsp. all-purpose flour, plus extra for coating baking dish 3 eggs, separated 2 cups corn, fresh or frozen (thawed), pulsed in food processor until very coarse puree 1/2 cup (4 oz.) grated Monterey Jack cheese 2 Tbsp. chopped fresh tarragon

Preparation 1. Preheat oven to 350˚F. Spray 9-inch square baking dish or 8-inch soufflé dish with nonstick cooking spray and dust entire baking surface lightly with flour. 2. Combine milk, sugar, salt and pepper in a small saucepan and bring just to a simmer over medium heat. Add flour all at once and beat with a wooden spoon until the mixture is smooth and stiffened. Set aside, stirring occasionally, until hot mixture becomes touchable, about 140˚F. Add egg yolks and stir until just combined. 3. Fold in corn, cheese and tarragon. 4. Bake, uncovered, 55 minutes or until set and puffed in the center but still with a little jiggle. Let stand 15 minutes before serving.

Ingredients Preparation 2 Tbsp. olive oil Heat oil in heavy, extra-large skillet or flameproof casserole over 3 lbs. pork shanks, approx. 1 1/2 inches thick medium-high heat. Dredge shanks in flour, shake off excess. All purpose flour, for Add to skillet and cook until brown, turning occasionally, about 1 very large onion, chopped 12 minutes. Transfer shanks to bowl. 4 large garlic cloves, chopped Reduce heat to medium-low. Add onion and garlic and sauté 1/2 cup tomato paste until tender, about 4 minutes. Return shanks and any liquid in 2 cups chicken broth bowl to skillet. Season shanks with salt and pepper. Add paste, 1 cup Miraflores Chardonnay broth, wine, basil and lemon peel to skillet. Cover partially and 6 fresh basil leaves simmer until pork is very tender and begins to fall off bones, 1/2 tsp. grated lemon peel about 2 hours. While Osso Buco is cooking, prepare Gremolata.

Gremolata Ladle meat and sauce into bowls and top with Gremolata. (traditional topping for osso buco) Can be prepared up to 3 days in advance (without Gremolata). 2 Tbsp. minced fresh parsley Cover and refrigerate until ready to reheat. 2 garlic cloves, minced 1/2 tsp. grated lemon peel 1/2 tsp. capers Combine all ingredients in a small bowl and set aside.
