日本人將觀賞櫻花盛放的年度習俗稱為「花見」。由於開花情況取 決於天氣，日本國家旅遊局設有網站提供櫻花開花期的預測，網址為 www.jnto.go.jp/sakura。一般來說，京都的櫻花會比大部分城市較遲 盛開，加上這個古都久遠的歷史文化，在京都賞櫻絕對值得期待。

Hanami is what the Japanese call the yearly ritual of watching the cherry blossoms bloom. Generally speaking, Kyoto’s blooms open later than most and given the city’s historic backdrop, it’s well worth the wait.

年，屯門區內各式食肆如雨後春筍般湧現， 近有些更深得老饕歡心，慕名而至。美食博客、 旅遊書及飲食專欄作者何穎家住屯門，最愛 是鑽進區內巷里尋找美食。今期，我們跟著她的美食 地圖邊走邊吃。

漁港風情 何穎認為沒有吃過三聖邨的海鮮，不算到過屯門。在 三聖邨經營了13年的嘉彩漁村酒家，其總經理梁志洪 表示，青山灣三聖街的海鮮聞名全港，全因有口皆碑， 明碼實價。食肆歡迎顧客攜帶自行購買的海鮮，顧客 也可以到三聖街的市場選購，忠仔記是其中一家頗具 名氣的海鮮攤檔，酒樓主廚之後會按顧客的要求，將 海鮮烹調成色、香、味俱全的菜餚，例如海大蝦沙律、 芝士 焗 龍 蝦和 胡 椒 蟹。 喜歡新派裝修及環境的話，何穎推介廣東名門，而 位於熟食亭的則有泰海鮮、南記，以及除海鮮外，炮 製燒鵝也十分出色的興記，她認為燒鵝的水準比深井 的還要高。用餐後，食客可以在毗鄰的青山灣海濱長 廊 漫 步，欣 賞 海 灣 夜 景。 另 外，何 穎 亦 推 介有 超 過 60年歷史的容龍海鮮酒 家，其招牌菜包括缽酒焗蠔、金銀蒜肉蟹糯米飯及芝 士焗龍蝦等。午市則有點心供應，何穎特別推薦懷舊 糯米雞及奇異米網炸兩，酒家更連續六年獲米芝蓮指 南 美 食 推 介。

國際品味 如果想度過一個悠閒的下午，何穎推介到訪位於屯 門舊區，開業約一年半的海圖，該咖啡店以夢想為主 題，供應咖啡、意粉及「全日早餐」。她說：「我最喜歡 那 裡 的 翠 香 汁 意 粉，醬 汁以 果 汁 (包 括 菠 蘿汁、橙 汁、 檸檬汁)、沙 律 醬 及 少 許 芥 末 拌 成，十 分 醒 胃。這 道 菜 的靈感源自店主廖智聰的父親，他父親在新加坡任職 廚師時，便是以此汁來烹煮鹿肉。這種美食傳承的故 事，令人格外窩心。各式單品咖啡也值得一試。」 此外，小曼谷是街坊最愛光顧的泰國家常菜館，何 穎笑道：「如果作為屯門人，不認識小曼谷實在太過份 了。」由於價錢實惠，餐廳每到晚市都座無虛席。必試 美食包括豬頸肉飯伴咖喱汁、海南雞飯、咖喱蝦碌及 冬 蔭 功 等，令人 回 味 無 窮。

Hing Kee serves up great seafood dishes, but its roast goose is even more delicious than that found in Sham Tseng, which has a reputation for the best roast goose. Dragon Inn Seafood Restaurant has been around for more than 60 years and its signature dishes include port wine oysters, steamed glutinous rice with crab and garlic, and lobster with cheese sauce. In the afternoon, dim sum is served. "The steamed glutinous rice with chicken and fried dough is amazing", says Ho. Dragon Inn has received a Bib Gourmand from the Hong Kong and Macau Michelin Guide for six consecutive years. TASTES OF THE SEA A trip to Tuen Mun is not complete without trying the seafood at Sam Shing Estate in Castle Peak Bay. Leung Chi-hung, manager of the 13-year-old Kar Choi Fishing Village Restaurant, says the seafood on Sam Shing Street is popular thanks to the reasonable prices. There is a wet market where stalls such as Chung Chai Kee sell the freshest catch – and restaurants can prepare dishes with ingredients provided by the diners and according to their specific demands. 48 Horizon April 2016 of Japan, but also offers a fascinating glimpse of ancient traditions thanks to the area’s location at the very ends of the Tokaido and Nakasendo roads that once connected Tokyo (formerly called Edo) with Kyoto. In the early 1700s, the shogunate (military government) ordered that all fish be sold through a central wholesale market near the Nihonbashi Bridge. Restaurants nearby developed a creative new cuisine called Edomae sushi, which combined the freshest of raw fish wrapped around rice seasoned with vinegar. Reflecting this past, many of the small shops in the area still sell traditional cooking products such as knives, lacquerware and dried seaweed, even though the fish market moved to the Tsukiji district after the Great Kanto Earthquake of 1923. Still, food is a big drawcard to the district; it ranges from Michelin-starred cuisine at the Mandarin Oriental, Tokyo to sushi and tempura in discreet eateries. 54 Horizon April 2016 沿著Ribes Roges Promenade漫步，欣賞 延綿的沙灘和感受清涼 的海風 ust 40 kilometres southwest of Barcelona, Feel the breeze: stroll along Spain, and right on the Mediterranean, the Ribes Roges Promenade beside the sandy beach JVilanova i la Geltrú has a lot to offer: four kilometres of fine beaches, a certain Cuban vibe, picturesque strolls along broad avenues called ramblas, shopping, dining, festivals, a fishing port, water sports and a marina for super-yachts. And then there is the 19th-century railway, linking Vilanova to the rest of the region and revitalising its economy. It also divides the town in two: the town side and the sea side. Las Ramblas connects Vilanova’s two halves in the most delightful way. More than a kilometre long, this tree-lined, pedestrian- only boulevard is one of the longest ramblas in Catalonia, ideal for an evening walk. It runs from the church of Sant Antoni Abat with its 17th-century leaning bell tower right down to the port. Famous Spanish brands such as Massimo Dutti, Zara and Mango are there, as well as outdoor dining until very late. Vilanovan Josep Tomàs Ventosa Soler was a textile magnate who made his fortune in Cuba in the 19th century. He and those who also made their fortunes in Cuba – indianos – returned to the town and built beautiful mansions in the Moderniste (Art Nouveau) style. Many indiano mansions are now eateries, such as the Gaudí- esque Casa Renard, now Pizzeria Gilda, and El Fornet, a bakery-café with a turtle pond out back. The iconic Plaça de la Vila (Town Square), with many public buildings financed by Ventosa, is the focal point for the famous castellers (human towers) and other exciting events during the Festa Major. For indie boutiques, quality shoe shops, cosy bars and historic plazas, wander up Capuxinos Street. For more than 2,000 years, wine has been produced in the Penedès area, which puts Vilanova in the midst of one of Spain’s most popular wine tourism regions. Famous for sparkling cava wine – it produces 95 per cent of the bubbly in Spain – visitors can tour cava cellars; the adventurous can visit on horseback.

Tomorrow’s classics are probably being mixed today in bars in Hong Kong and Macau. New gins, vodkas, rums, whiskies, tequilas, liqueurs and bitters are coming onto the market and Asia is playing a role. Gin and vodka are distilled in China at a time when a new appreciation of traditionally distilled Chinese spirits is growing. Japanese whisky is a requirement in any well-stocked bar. “Bartenders are a lot more knowledgeable, can introduce people to new things and craft drinks to suit their palates,” says Martin Newell, brand manager at Moët Hennessy Diageo Hong Kong. “More people are educated about spirits.” These days, mixologists are members of a respected profession, with new techniques and IMAGES. In Hong Kong, Antonio Lai of Quinary (ranked 39th on Drinks International’s World’s 50 Best Bars 2015 list) introduced liquid-nitrogen cocktails. He’s currently evaluating vaporised cocktails, which the drinker ‘smokes’. Often 澳門雅詩閣心醉吧的調酒 described as a ‘molecular mixologist’ (he prefers 師正調配Negroni雞尾酒； the term ‘multisensory’), Lai makes drinks with 澳門文華東方酒店御苑酒 廊供應的招牌雞尾酒包括 scientific precision. He uses a Brix meter to test 這款意指「無問題」的 the sugar level of fruit juices for proportionate, M.O. When meeting fellow bartenders for a drink, his favourite venues include the Island Shangri-La’s Lobster Bar and Grill (18th on the World’s 50 Best Bars 2015 list), Butler in Tsim Sha Tsui (for its Japanese bar service) and The Pontiac in Soho. “The cocktail culture in Macau is a little behind Hong Kong,” Lai says, but he singles out Heart Bar When Quinary opened in 2012, the Hong Kong at the Ascott Macau and The Macallan Whisky cocktail scene moved up a gear.
