    Resultados del estudio estadístico de impacto económico y social de la cultura, aplicado durante la XXXIX Muestra Gastronómica de Santiago de Anaya En el marco de la XXXIX Muestra Gastronómica de Santiago de Anaya, la Secretaría de Cultura, en coordinación con el Ayuntamiento de Santiago de Anaya y la Universidad Tecnológica del Valle del Mezquital, por tercer año consecutivo, realizaron un estudio estadístico que consistió en la aplicación de tres encuestas: cocineros tradicionales, artesanos y visitantes; lo anterior con el objetivo de conocer el perfil sociodemográfico de los mismos, así como la creación de un catálogo de cocineros y cocineras tradicionales, conocer los tipos de artesanía que se ofertan y la derrama económica aproximada que genera este evento. Entre los principales resultados de la encuesta de cocineros tradicionales, se registró la participación de 1470 personas, de las cuales fueron encuestadas 1437 provenientes de Santiago de Anaya, San Salvador, Ixmiquilpan, Actopan, El Arenal, Cardonal, Francisco I. Madero, Mixquiahuala de Juárez y Chilcuautla principalmente. En este contexto, el 92% de las cocineras y cocineros entrevistados pertenecen o se identifican dentro de los tres grupos étnicos que prevalecen en el Estado de Hidalgo, y el 81% manifestó hablar una lengua indígena. Se estima una mayor participación de mujeres con un 92%, comparado con el 8% de hombres. Con base a la convocatoria emitida para esta muestra se presentaron 1269 platillos tradicionales de los cuales, 736 se registraron en la categoría de platillos, 154 en la categoría de postres, 308 en la categoría de bebidas y 71 pulques. Además de este conjunto de categorías, 168 platillos fueron considerados por el participante como de nueva creación.
