In the tradition of the old tenets of Bohemian , it’s fitting that such a simple recipe would be one of the most beloved dishes in the local . This soup packs a punch with a whole head of garlic in it - may garlic lovers rejoice and others beware!

5 minutes PREP TIME INGREDIENTS minutes 25 COOK TIME Soup Croutons (Optional) • 2 tablespoons butter • 1 baguette, cut into ½ - 1 inch cubes • 6-12 cloves garlic, crushed (but not minced) • 2 tablespoons olive oil • 1 small yellow onion, diced • 1 teaspoon garlic powder • 6 cups or chicken stock (preferably • 1 teaspoon oregano homemade) • 1 teaspoon ground black pepper • 2 medium sized potatoes, peeled and cubed • 1 teaspoon sea salt • 1 teaspoon sea salt • 1 teaspoon ground black pepper • 1 teaspoon caraway seeds • 1 handful fresh , chopped for garnish • ½ cup grated parmesan cheese for garnish (optional, but recommended)

Stage 1: Combine Soup Ingredients

1. In a large stockpot, melt your butter over medium-high heat

2. Next, add your garlic and sauté for 1-2 minutes as it becomes fragrant

3. Add your onion, caraway seeds, pepper and salt then sauté for another 1 minute

4. As the onion starts to sweat and become translucent, begin adding in your vegetable stock into the pot

5. With your stock added, bring everything to a boil. Once boiling, add in your potatoes and reduce the heat to medium. Here you’ll let the potatoes simmer for 15-20 minutes as the potatoes cook through and start to “flake” off a bit which will thicken the

Stage 2: Tend to the Croutons

1. While the garlic soup is simmering together, preheat your oven to 350 degrees Fahrenheit

2. Take your cubed baguette pieces into a mixing bowl, and toss in your olive oil along with your (garlic powder, pepper, oregano, sea salt)

3. Once well tossed, lay your croutons onto a flat baking dish and place into the oven for at least 10 minutes or until golden brown

4. By this point, your garlic soup is fully simmered and ready to take off the heat. To serve, add some croutons, grated cheese and chopped parsley over your soup, and enjoy!
