Fall | Winter Signature Menu INFORMATION & GUIDELINES GUEST COUNT It’s your party, you can invite as many guests as you like! In order to serve all your guests with the same quality service, we just ask that you give us a guaranteed guest count 10 business days prior to your event date. Additions to the final guaranteed guest count, including special dietary needs, additional meals or equipment rentals must be provided 5 days to your event date. Any additions made after this deadline will be subject to a 15% surcharge. PAYMENTS Once the contract is signed, a non-refundable deposit payment of 25% of the estimated total is due. Final and full payment will be due 10 business days prior to your event date based on your guaranteed guest count. In the event that your total cost exceeds the total estimate paid, the difference will be due and processed on the day of the event. Failure to provide above payments will cause your contract to be void. We accept money orders, Visa, Mastercard, Discover and American Express. Personal checks are only accepted 14 days prior to your event date. All deposits are non-refundable. The catering sales tax will be applied to your final bill. FOOD COST Food and beverage pricing is based on menu selections. Sample menu prices are based upon a minimum of 60 guests. 101 Recipes For The Deep Fryer Deep Fryer Italian Zeppole 2-1/2 cups all purpose flour 1/8 tsp. salt 2-1/2 cups water 1/2 cup white wine olive oil 1 Tbs. ground cinnamon 1 cup sugar Sift flour and salt together in a bowl and set aside. Combine water and wine in a saucepan over medium high heat. Do not boil. When bubbles appear on the bottom of the pan, add flour mixture all at once. Stir constantly with a wooden spoon until dough comes together into a ball. Transfer to a lightly oiled work surface. Pound with a rolling pin about 10 minutes, until smooth. Roll dough into strips about 1/2 inch around. Cut into 8 inch lengths and pinch ends together to make rings. Heat oil in an electric deep fryer to 375°F. Without overcrowding, deep fry 2-3 pieces at a time 3-4 minutes until golden, pricking each one with a skewer as it fries. Drain on absorbent paper. Combine cinnamon and sugar in a bowl. Dip zeppole in sugar mixture while still hot. Deep Fryer Sopaipillas vegetable oil 1 cup all purpose flour 1/2 tsp. salt 1/2 tsp. baking powder 1-1/2 tsp. nonfat dry milk 1 tsp. vegetable shortening 1/2 cup cold water Heat oil in an electric deep fryer to 370°F - 380°F. Combine flour and next 4 ingredients in a food processor and pulse 3-4 times. With machine running, pour in water through feed tube and process about 15 seconds, or until ingredients begin to come together. -

Recipe Category / Pies and Tarts Galatopita – Milk Pie 2 hours Family Ηands on Portion(s) Ingredients For crust 6 sheets of phyllo dough 150 g walnuts, coarsely chopped 2 tablespoons granulated sugar 1 teaspoon ground cinnamon ½ teaspoon ground cloves olive oil For filling 2 liters milk 170 g all-purpose flour 170 g granulated sugar 2 packets vanilla powder 2 eggs, lightly beaten 2 tablespoons butter For homemade phyllo (if you choose to make your Method own) 300 g all-purpose flour Ingredients for a 42x32 cm baking pan 1 tablespoon olive oil For the crust a small amount of vinegar Brush the baking pan with olive oil and spread out the first sheet of phyllo dough. salt Drizzle lightly with olive oil, cover with another sheet of phyllo and drizzle again. less than 1 glass of water extra flour, for rolling out dough Cover with the third sheet of phyllo and spread half of the sugar, walnuts, cinnamon and cloves over it. Cover with the fourth sheet of phyllo and drizzle with olive oil. Cover with the fifth sheet of phyllo dough and add the remaining amount of sugar, walnuts, cinnamon and cloves. Cover with the sixth sheet of phyllo dough. For the filling Preheat oven to 200* C (390* F) Fan. Place the milk, flour, sugar and vanilla in a pot. Whisk to combine. Place pot over medium to low heat and whisk continuously until the crème thickens. Remove from heat and reserve 1/3 of the crème in a bowl. Add the butter and stir until it melts and is incorporated. -
