Arroz Con Leche (Costa Rican Rice Pudding)
Arroz Con Leche is one of the most traditional desserts in Costa Rica.
1 cup rice(uncooked) Nutrition Facts Per Serving (1 cup): 1 can condensed milk(sweet) Calories: 200 1 can evaporated milk Protein: 9 gm 4 cups milk 1/2 cup water 1/2 tsp vanilla extract 2 sticks cinnamon 1/2 cup raisins 6 cloves
Preparation for Arroz Con Leche
In a saucepan, bring rice, milk, water, cinnamon sticks, nutmeg and cloves to a boil over high heat. Boil for 5 minutes, stirring constantly. Add the sweet condensed milk and simmer over low heat for 10 minutes. Add the evaporated milk, the vanilla extract and the raisins and cook for 10 more minutes until it thickens to the desired consistency. Add more milk if you want your Arroz Con Leche thinner, as it will thicken once it cools down. Serve it chilled or at room temperature. Gallo Pinto Costa Rican Rice and Beans

Preparation of Gallo Pinto Over medium heat, sauté the onion and bell pepper in a pot until the onion turns a light brown color. Add the garlic and sauté for 1 more minute. Add the water and salt and bring the water to a boil. Add the rice, bring the water back to a boil, cover the pot, and reduce the heat to low. Cook the rice for about 20 minutes. Remove from the heat, stir in the beans, and dress the Gallo Pinto with hot sauce.
