With a distance of only 10km., in a straight line, from the Adriatic sea. The climate is temperate, in the winter blows the easterly and northerly winds and in the summer the southerly and south-westerly ones. The Republic of San Marino borders onto two Italian regions: south and west the Marche (province of Pesaro) and north and east Emilia Romagna (province of Rimini). It is a shame that the rapid and progressive abandon of the countryside, the development of tourist and commercial activities, the radical social and economic transformation that was brought about by industrial publicity imposed by the mass media, have all in some way or another turned upside down the antique traditions of the San Marino kitchen. One thing that hasn't changed from the old days is the passion for the piada (a type of pita bread) which even nowadays accompanies all kinds of food from the greens of the countryside, various cheeses and even the more elaborated dishes that have a meat base. Made by mixing white flour and water together, in the past they would also add a touch of yellow flour, and for those important occasions even a bit of lard that would make the piada a bit puffy. Another antique dish which is still cooked is polenta (served in a trencher, it is a type of pudding made from cornmeal) that used to be served up with a sausage sauce with pecorino cheese grated on top, there is also the richer version that contains a game sauce, garnished with lard and sage. Of the different types of pasta that are still favoured today there is "strozzapreti", prepared with flour, water and salt with a sauce of meat and cheese. On Christmas eve the tradition is to make chick-pea pasta whilst on Christmas day itself there is “cappelletti in brood” (ringlets of dough filled with seasoned minced meat in broth). Another dish that is more adaptable for the more courageous diner, simple but tasty and typically for the winter months, is cotiche di maiale con i fagioli (pig skin and bean soup). A dish that nowadays is hardly ever served is the minestra dei poveri (poor peoples soup), called "bobolotti" it is composed of a sheet of pasta made up of flour, water and salt, cut up into small squares, boiled in water and seasoned with lard and dark beans.We must also mention the typical San Marino sweets: la Pagnotta (round loaf) that is eaten at Easter, prepared with raisins and aniseed, il Bustrengo which is prepared with grated bread and corn flour, widely used in Romagna and Marche tradition as a substitution for rice. And last but definitely not least are the Republics wines: the red "Sangiovese", the golden "Albana", and also the "Biancale" and "Moscato". It is possible to uncover these antique flavours at the numerous restaurants in San Marino, a good idea would be to profit from the week that is dedicated to the Giornate Medievali (Medieval Days), a period in which the restaurants in the old town centre offer tourists antique foretastes. Water : Tap water is completely safe for drinking. Electricity : The electric current for use in homes and hotels is 220 volts (50 Hz) and the plugs used are two round pins. Telephone : Public telephones are installed everywhere in Italy, most will allow calls. There are some telephone booths which accept coins and others which operate with telephone cards. It is possible to buy telephone cards in the hotels. Some telephones will also accept international credit cards.
