It's smelly and expensive. It represents a new direction in the store as we turn our attention to seafood based soups with a no expenses spared approach, using some of the best local seafood. This soup is perhaps my favourite Vietnamese soup of all and originates from the Mekong Delta region of Southern Vietnam (miền tây) which is famous for producing fermented fish and fish sauce. The broth is infused with lemongrass and fermented fish, accompanied with roasted egg plants, garlic shoots, thick vermicelli noodles, crackling roast pork, cuttle fish, local prawns, fish cake, seasonal fresh fish of the day (that's right it's not frozen!)
