Steven Savels has been fishing, in good weather and bad, for more than 30 years. He catches 30 different types of fish, from sole and monkfish to pout whiting and horse mackerel. He was not brought up in a fisherman's family. His parents ran a fishermen's café where he undoubtedly learned to love the sea. He is one of the few fishermen who did not learn the trade from his father. Even more remarkably, he was able to purchase his own ship. His two sons now man that ship. A love for fishing turns out to be genetic.

Steven knows that you learn the tricks of the trade over several years. ‘You must sense when it is time to fish. A good fisherman knows where to find the best grounds and when his nets are full. You cannot learn that in a book, you figure it out through trial and error.’ Even though fishermen are currently experiencing turbulent times, Steven is holding up courageously. ‘I didn't force my sons to become fishermen, on the contrary. It is a tough trade. You are away from home for long stretches of time and you miss your family. But I couldn't stop them and now I support their decision. It is the most beautiful profession in the world. You are your own boss, you are one with nature and you experience nature to the fullest. Not from the sidelines, you experience it full on and that is an enormous rush. Sailing for hours, arriving at a location and then noticing that your suspicions were correct and that your nets will be full - that is pure adrenaline. Don't be mistaken, the sea is full of fish. You simply have to know where

Zeebrugge – 10 to find them. Every time I sail out of Zeebrugge I know that this is my calling. This is what I should be doing. Believe me, I count my blessings every time the sun sets. I never get tired of sunsets, even though I have seen a thousand of them.’

We cannot sail out every week. ‘I only go fishing when my sons want to get out, but a captain has always got work to do. I repair nets or figure out how to do things better.’ Steven has made lots of ingenious alterations and now his ship (Z.53 Van Eyck) uses half as much fuel and is much more ecological. He pursues that ecological approach on other fronts too. As one of the eight North Sea fishermen he demands attention for all the species of fish in the North Sea, not just the expensive classics. ‘Everything I catch is delicious, but people often only want to eat the species that they know. That's a shame.’ Steven eats fish every day with great relish. Even though the fish market moved to a brand-new complex in the inner port almost two decades ago, thereby making room for the Seafront Maritime Theme Park, the popular and mysterious atmosphere surrounding the old fishing dock remains intact. The Visserskruis (Fishermen's Cross), the old shrimp cutter Virtus and the many fishermen's cafés add to the atmosphere. Until about 20 years ago fishermen unloaded sole, plaice, whiting and turbot at this location. They arrived early in the morning then sorted and auctioned their catch. Today everything is computer-controlled in the new fish market in the inner port, but in the Seafront Maritime Theme Park you can learn how the fish used to be auctioned on the quay by the auctioneer.

Zeebrugge's fleet currently consists of roughly 40 ships that are active in different zones. Fish is sold in the new fish market on Mondays, Wednesdays and Fridays. Sole, plaice, cod, lemon sole, skate wings, haddock, squid, scallops, shrimp, monkfish, brill, turbot and langoustines are all on offer. Specially adapted machinery and 60 employees inspect and sort the fish, which is then sold via a high-tech auction system. This low-lying marsh was created when the Cistercians extracted clay, which they used to make bricks. The bricks were used to expand the abbey and to build the church in Lissewege. Willem Van Saeftinghe lead a busy but peaceful life as a lay brother in Ter Doest Abbey until the Battle of the Spurs in 1302. He promptly left Lissewege, travelled to Courtrai and dragged Robert van Artois, leader of the French army, from his horse to make him a bit more humble. Then he eliminated 40 French knights.
