THE UNIVERSITY CLUB OF TORONTO WINE LIST: 2017 V.1 Introduction to the Wine List On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a wine pricing policy for the sale of wines in the bar and dining room which limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. We hope that you enjoy all the benefits the Club has to offer – a wonderful meal prepared by Chef Patrick Desmoulins accompanied by the best quality and value provided by our expansive cellar. Santé! John Gilman, View From The Cellar Working out of a humble 60’ by 10’ winery, winemaker Chris Camarda launched Andrew Will Winery (Named after Chris’s son Will and Nephew Andrew) with his inaugural 1989 vintage. He has spent the last two decades producing some of Washington’s most well respected wines. Structured, elegant, and age worthy, they are a singular voice that has never adjusted in an attempt to chase scores or suit trends. Although always a focus, Chris’ attention to terroir has only intensified over time. Since 2001 he almost exclusively produces single vineyard blends as he feels this shows the terroir more clearly than a single varietal bottling. Currently he only sources from four vineyards that he feels provide the finest fruit: Champoux, Discovery, Two Blondes, and Ciel du Cheval. All Andrew Will wines are treated more or less the same in the cellar; 25-35% new oak barrels, aged for around 21 months, followed by a year of aging in bottle. -

part one A California Wine Primer Olken_Ch00_FM.indd 1 7/13/10 12:07:51 PM Olken_Ch00_FM.indd 2 7/13/10 12:07:52 PM A Brief History of Wine in California more than two hundred years after Spanish missionaries brought vine cuttings with them from Mexico’s Baja California and established the first of the California missions in San Diego, researchers at Madrid’s National Biotechnical Center, using DNA techniques, have traced those first vines back to a black grape that seems to be a dark-colored relative of the Palomino grape still in use for the production of Sherry. That humble beginning may not seem like it would have much to do with today’s bur- geoning wine industry, but the fact is that the Mission variety became the vine of choice in California as its population grew first through the arrival of trappers and wealthy landowners, then with the small but steady stream of wagon trains that came west out of the country’s heartland and the establishment in the 1840s of the clipper ship trade. By the time the trans- continental railroad was completed in 1869, California’s wine economy had become established, and despite world wars and periods in which the sale of alcohol was banned, the industry hung on and finally exploded into its current shape with the wine boom of the 1970s. Today, the Mission grape is gone, but the wine industry it helped spawn now boasts over a half million acres of wine grapes from one end of the state to the other. -

APPELLATION SOCIETY COLLECTORS CLUB MAY 2016 \ GREETINGS, CLUB MEMBERS In this issue you’ll read about how we’re replanting part of the Estate Vineyard that surrounds our winery here in the Stags Leap District. It’s a tricky process, as this is a steeply terraced vineyard that reaches way back into the canyon behind the winery. But I’m excited about the Cabernet Sauvignon we’ll eventually get from these blocks. We know so much more now about rootstocks and clones and what works best with the soils and varietals we want to grow. The quality should be fantastic. In the meantime, we hope you’ll savor the wines in your shipment, especially the 2013 Rutherford Cabernet, one of my favorites. You can read about our Rutherford appellation vineyards in this issue. Over the years, these vineyards, and particularly certain blocks, have produced some of the finest wines we make. Trentadue History
TRENTADUE HISTORY ARRIVING IN SONOMA COUNTY The Trentadue family arrived in Sonoma County long before the region gained a reputation as the Wine Country. Life-long, hands-on agriculturists, Evelyn and Leo Trentadue contributed significantly to the advancement of their region over the years. In 1959, the Trentadues decided to flee the developers encroaching on their apricot and cherry orchards in Sunnyvale, the area known today around the world as Silicon Valley. To preserve their way of life, these hard-working Italian ranchers purchased 208 acres of land in Sonoma County’s then remote Alexander Valley. There was little market for the region’s dry-farmed apples, prunes, pears, and grapes in the late 1950s, so land was cheap and plentiful. Scores of ranches were for sale but, because it was blessed with an excellent combination of climate, soil, and water, Leo settled on a special piece of property in the heart of the Alexander Valley. Little did he know what this ranch had once been, much less what it was to become. The piece of land, which is now home to Trentadue Winery, has a remarkable history. In 1868, a French botanist named Andrew Bouton established Heart’s Desire Nursery on this excellent site east of the railroad tracks. With a passion for breeding new and improved strains of fruit trees, Bouton devoted himself to plant propagation, becoming a major supplier of young tree stock to orchardists throughout the western United States. His reputation attracted the attention of a young man named Luther Burbank who visited Bouton frequently. Influenced by Bouton, Burbank conducted his own work in nearby Sebastopol and Santa Rosa. -
