2017 February Wine List.Pdf THE UNIVERSITY CLUB OF TORONTO WINE LIST: 2017 V.1 Introduction to the Wine List On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a wine pricing policy for the sale of wines in the bar and dining room which limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely fine, persistent pinpoint bubbles rising in delicate strands to the surface of the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries is offset by elegant, subtle floral and earth nuances. On the palate, the ripe, full berry flavors are vibrant yet refined, delicately balanced by a fresh acidity which carries into a crisp, refreshing finish of persistent length. "A swirl of bubbles carries fresh raspberry flavors along with a lively green edge of acidity. The appellation is 100% Carneros. The Brut was aged in the bottle for three years before release. It will continue to develop further depth and complexity as it ages. Wine Spectator Appealing aromas of Gala apple, toasted almond and vanilla lead to focused, creamy Asian pear and spice flavors that finish with a vibrant crispness. Drink now through 2012. Cos d’Estournel (2ieme Cru Classé) (St. Estèphe) 1988 274.00 * “The 1988 has an intriguing bouquet of exotic spices and black fruits. Savagely tannic in its youth, the wine has softened and developed more charm and appeal. Still deep ruby/purple in color, with little signs of age, this medium- bodied, slightly austere wine possesses good cassis fruit, excellent purity, and an elegant, classic style.” Robert Parker R53 Ch. Ducru Beaucaillou (2ieme Cru Classé) (St. Julien) 1989 274.00 * R31 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1990 261 .00 * Gruaud-Larose was superb at the most recent tasting. Moreover, this might be a 1990 that is still affordable. The wine exhibits a thick-looking, plum/purple/garnet-like color. A sensational nose of jammy black-cherries, earth, cedar, and herbs has become far more intense and striking. The wine displays sensational richness and power, but not quite the burly, monstrous size and hulking weight of the 1986 or 1982. Yet it reveals impressive stuffing and power. The low acidity emphasizes the thick, juicy, succulent fruit in this backward yet rich, chewy wine. This was the finest showing yet for the 1990 Gruaud Larose. Score 93 – Robert Parker R156 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1996 145.00 * Jancis Robinson 17/20 Robert Parker’s Wine Spectator: 90 points “This has a Gruaud signature etched onto its enticing, rich and decadent nose. This is a superb example of Bordeaux and particular St Julien at its very best. Really silky and creamy on the palate with a fabulously exotic, powerful, ripe and sweet black/red fruit core. Long finish and very classy indeed. Medium to full bodied with pure, rich blackcurrent flavours, liquorice and herbs. A very elegant wine, steering away from the massive, muscular styles provided by many other Chateaux in '96. R147 Ch. Palmer (3ieme Cru Classé) (Margaux) 1996 258.00 * This wine, a blend of 55% Cabernet Sauvignon, 40% Merlot, and 5% Petit Verdot, is performing well after its July, 1998 bottling. It boasts an impressively saturated purple color, in addition to a backward yet intense nose of black plums, currants, licorice, and smoke. Following terrific fruit on the attack, the wine's structure and tannin take over. There is plenty of sweet fruit, and the tannin is well-integrated, but the wine requires 7-8 years of cellaring. Anticipated maturity: 2007-2028. Score 91, Robert Parker. R80 Mouton-Rothschild Grand Cru Classé (Pauillac) 1996 393.00 * Wine Advocate Score: 94 Maturity 2007-2030. Cabernet Sauvignon 77%, Cabernet Franc 13%, Merlot 10%. From magnum. This wine has a superb colour compared to the maturing wines tasted alongside; it has a dark core, a dense rim, with plenty of red pigment still. This is very impressive. The nose here is divine; it has a very typical profile for the vintage, full of iron and rust, but enticingly perfumed with violets. It kicks off very elegantly on the palate, and it has a wonderful texture, composed rather than showy. It has great style; the tannins and acidity show through and there is plenty of perfumed character as there is on the nose. There is structure and grip, and a fine persistence.

John Gilman, View From The Cellar Working out of a humble 60’ by 10’ winery, winemaker Chris Camarda launched Andrew Will Winery (Named after Chris’s son Will and Nephew Andrew) with his inaugural 1989 vintage. He has spent the last two decades producing some of Washington’s most well respected wines. Structured, elegant, and age worthy, they are a singular voice that has never adjusted in an attempt to chase scores or suit trends. Although always a focus, Chris’ attention to terroir has only intensified over time. Since 2001 he almost exclusively produces single vineyard blends as he feels this shows the terroir more clearly than a single varietal bottling. Currently he only sources from four vineyards that he feels provide the finest fruit: Champoux, Discovery, Two Blondes, and Ciel du Cheval. All Andrew Will wines are treated more or less the same in the cellar; 25-35% new oak barrels, aged for around 21 months, followed by a year of aging in bottle.

Made from 100% Syrah that was fermented with 50% Scheduled to be bottled in November, after two years in barrel, the whole clusters and aged in a scant 10% new French oak (and never flat out sensational 2014 Syrah Les Collines Block 50 (Name TBD) was racked), it has loads of ripe dark fruits, lavender, peppered meat and fermented with 100% whole clusters and aged all in older French oak olive to go with rock-solid concentration, sweet tannin and a killer barrels.

    The Robert M. Parker Wine Cellar The Robert M. Parker Wine Cellar is named in honor of the man often considered to be the world’s foremost wine authority, a born and bred Baltimorean. The Robert M. Parker Cellar is primarily focused on special, superb small production American wines, although we also have a broad selection of many very fine vintages from around the world. Our goal is to offer unique labels with which one may not ordinarily be familiar. In doing so, we endeavor to support those artisans who are striving to create exceptional wines. Most, but not all, of our wines have been rated in the Wine Advocate by Mr. Parker and are so noted. They had gotten close with a “99.5” but that isn’t 100. After Cyril’s father had spent almost 50 years devoting his life to Pritchard Hill, helping to encourage high- altitude “mountain grown” Cabernet, it seemed to his children that he didn’t fully receive the full recognition that he deserved creating some of the most long lived Napa Valley wines, rivaling some of the Bordeaux greats. Molly and Donn Chappellet in 1968 CHAPPELLET Cyril’s father was none other than Donn Chappellet who had been a serious wine collector going back to his college days and although he co-founded Interstate United Corporation, a coffee-vending distributorship in the mid- 1950s, he soon left the rat race to pursue his passion for wine. In 1967, at the age of 34, Donn, with his wife Molly and their five kids, said goodbye to their home in Beverly Hills to make a new life purchasing 320 acres of land on Pritchard Hill in Napa Valley; they would make fine wine from Cabernet Sauvignon that was planted at high-altitude, something that was unheard of in California back in the 1960s, and it is still an unorthodox idea as only 3% of the wine grapes grown in California are from altitudes above 1,000 feet and some of the Pritchard Hill vineyards are as high as 2,000.
