Introduction to the Wine List

On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list.

May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine at unusually good – let’s say unheard of – pricing.

We have adopted a wine pricing policy for the sale of wines in the bar and dining room which limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure.

To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600.

FRANCE Champagne or Sparkling—Non-vintage W109 Taittinger Brut Prestige Rose Champagne NV 102.00 Blended from Pinot Noir and Pinot Meunier grapes, this is a succulently fruity, supple and aromatic Champagne with fine bubbles and a crisp, refreshing finish of extended length. Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely fine, persistent pinpoint bubbles rising in delicate strands to the surface of the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries is offset by elegant, subtle floral and earth nuances. The appellation is 100% Carneros. The Brut was aged in the bottle for three years before release. It will continue to develop further depth and complexity as it ages. Wine Spectator Appealing aromas of Gala apple, toasted almond and vanilla lead to focused, creamy Asian pear and spice flavors that finish with a vibrant crispness. Drink now through 2012. R15 Ch. Cos d’Estournel (2ieme Cru Classé) (St. Estèphe) 1988 274.00 * “The 1988 has an intriguing bouquet of exotic spices and black fruits. Savagely tannic in its youth, the wine has softened and developed more charm and appeal. Still deep ruby/purple in color, with little signs of age, this medium- bodied, slightly austere wine possesses good cassis fruit, excellent purity, and an elegant, classic style.” Robert Parker R53 Ch. Ducru Beaucaillou (2ieme Cru Classé) (St. Julien) 1989 274.00 * R31 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1990 261 .00 * Gruaud-Larose was superb at the most recent tasting. Moreover, this might be a 1990 that is still affordable. The wine exhibits a thick-looking, plum/purple/garnet-like color. A sensational nose of jammy black-cherries, earth, cedar, and herbs has become far more intense and striking. The wine displays sensational richness and power, but not quite the burly, monstrous size and hulking weight of the 1986 or 1982. Yet it reveals impressive stuffing and power. The low acidity emphasizes the thick, juicy, succulent fruit in this backward yet rich, chewy wine. This was the finest showing yet for the 1990 Gruaud Larose. Score 93 – Robert Parker R156 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1996 145.00 * Jancis Robinson 17/20 Robert Parker’s Wine Spectator: 90 points “This has a Gruaud signature etched onto its enticing, rich and decadent nose. This is a superb example of Bordeaux and particular St Julien at its very best. Really silky and creamy on the palate with a fabulously exotic, powerful, ripe and sweet black/red fruit core. Long finish and very classy indeed. Medium to full bodied with pure, rich blackcurrent flavours, liquorice and herbs. A very elegant wine, steering away from the massive, muscular styles provided by many other Chateaux in '96.

R147 Ch. Palmer (3ieme Cru Classé) (Margaux) 1996 258.00 * This wine, a blend of 55% Cabernet Sauvignon, 40% Merlot, and 5% Petit Verdot, is performing well after its July, 1998 bottling. It boasts an impressively saturated purple color, in addition to a backward yet intense nose of black plums, currants, licorice, and smoke. Following terrific fruit on the attack, the wine's structure and tannin take over. There is plenty of sweet fruit, and the tannin is well-integrated, but the wine requires 7-8 years of cellaring. Anticipated maturity: 2007-2028. Score 91, Robert Parker. R80 Mouton-Rothschild Grand Cru Classé (Pauillac) 1996 393.00 * Wine Advocate Score: 94 Maturity 2007-2030. Cabernet Sauvignon 77%, 13%, Merlot 10%. From magnum. This wine has a superb colour compared to the maturing wines tasted alongside; it has a dark core, a dense rim, with plenty of red pigment still. This is very impressive. The nose here is divine; it has a very typical profile for the vintage, full of iron and rust, but enticingly perfumed with violets. It kicks off very elegantly on the palate, and it has a wonderful texture, composed rather than showy. It has great style; the tannins and acidity show through and there is plenty of perfumed character as there is on the nose. There is structure and grip, and a fine persistence. This very superb wine, with its reserved character, will go for more than ten years yet. At its apogee this will be truly remarkable. 19+/20 (February 2008) The Wine Doctor – Chris Kissack R138 Ch. Latour Grand Cru Classé (Pauillac) 1998 270.00 * Steven Tanzer IWC: Red-ruby. Deep aromas of cassis, licorice and lead pencil. Deeper than Les Forts but currently rather mute in the middle. Strongly minerally. Offers classic Latour structure and spine. Finishes with sneaky, subtle persistence. Score 91 R158 Ch. Pavie (St. Emilion) Magnum 1999 406.00 * The inky/ruby/purple-colored 1999 exhibits a tight but promising nose of crushed stones, a liqueur of blackberries, cherries, and black currants, and subtle smoke and licorice in the background. Powerful, with impressive elegance, fine harmony among its elements, a multi-layered texture, it has a finish that lasts for 50+ seconds. There is considerable tannin, but it is well-integrated. Give it 3-4 years, and drink it over the next two decades. A profound effort for the vintage, it is an example of a perfectionist proprietor pushing the envelope of quality. "The 1999 Pavie is a candidate for "wine of the vintage". It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is

warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners." - Robert Parker’s Wine Advocate: 95 points R205 Ch. De Lamarque Cru Bourgeois 1999 60.00 * Wine Advocate: “This is an excellent, seductive, lower level cru bourgeois with loads of blackberry and cherry fruit intermixed with a smoked herb component. Some spicy is also evident. The wine is medium-bodied, with good fruit, and balance.” R217 Ch. Cantemerle (Haut Medoc) 2000 82.00 * The Wine Advocate: “This fully mature, elegant 2000 tails off slightly in the finish. Notes of forest floor, bay leaf, licorice, red currants, and cranberries are offered in a Burgundian-like, fresh, vibrant format. The tannins have melted away in this medium-bodied, finesse-styled effort. Best drinking 2010-2018” R224 Ch. Cambon la Pelouse (Haut Medoc) 2000 68.00 * The Wine Enthusiast: “The 2000, which has a slightly more saturated ruby/purple color than the 2001, is fleshier, with a more substantial mouthfeel. Exhibiting sumptuous fruit, ripe tannin and a seamless texture, this serious Haut- Medoc is equivalent to many classified growths.” Decanter, 4 out of 5: Classic cassis/cedar Medoc bouquet, quite dry and restrained. Fine fruit and good elegant wine, shows elegance, depth and finesse. Drink 2-10 years. R220 Ch. Rauzan-Segla (Margaux) Magnum 1.5 Ltr 2000 495.00 * Score 90 Robert Parker: “The dark ruby/purple color is saturated and impressive. With coaxing, notes of lead pencil shavings, black currants, earth, cedar, and spice box emerge from a relatively closed, firm, medium to full-bodied wine or, as the French would say, a classic vin de garde (for long-term cellaring). There is no denying the classicism and purity of this 2000. Best drinking: 2010-2025.” R226 Ch. Rauzan-Segla (Margaux) 2000 269.00 * Score 90 Robert Parker: “The dark ruby/purple color is saturated and impressive. With coaxing, notes of lead pencil shavings, black currants, earth, cedar, and spice box emerge from a relatively closed, firm, medium to full-bodied wine or, as the French would say, a classic vin de garde (for long-term cellaring). There is no denying the classicism and purity of this 2000. Best drinking: 2010-2025.” R232 Ch. Rauzan-Segla (Margaux) 2003 112.00 * Robert Parker Score 88-91: “the 2003 exhibits an herbal, peppery, spicy nose, a dark plum/ruby color, good ripeness on the attack, a constrained, narrow mid-palate, and a moderately tannic finish. It is a wine of elegance, finesse, and medium body, with sweet notes of forest floor, spice box, red currants, and sweet herb-tinged red cherries. Manager John Kolasa told me the alcohol was an extremely high 13%, and that the 2005 is even higher at 13.5% Best drinking 2008-2023” R203 Les Forts de Latour (Pauillac) 2000 180.00 * Score 92 Robert Parker: “The 2000 Les Forts de Latour is a seriously endowed wine with notes of black walnuts, black currants, crushed rock, tobacco and spice box. Full-bodied, luscious but still in need of another 2-3 years to hit full maturity, it certainly can evolve for another 15 or more years, and looks to be slightly richer and longer-lived than I originally predicted.” Drink 2012-2027 R221 Ch. Gazin (Pomerol) 2000 135.00 * Score 92 Robert Parker: “A big, backward, full-bodied Pomerol, the 2000 Gazin appears to have added weight as well as structure. Still young, it exhibits beautiful notes of sandy, loamy soil intermixed with mulberries, black cherries, cedar, and licorice. Tightly wound, powerful, and rich, with noticeable oak, it needs another 3-5 years of bottle age, and should drink well for two decades. Best drinking 2010-2030” R214 Ch. Figeac (St. Emilion) 2000 201.00 * Score 93 Robert Parker: “Figeac has become a more consistent wine over the last few years. A profound effort, the surprisingly full-bodied 2000 Figeac has an opaque purple color accompanied by a terrific bouquet of camphor, graphite, black currants, licorice, and smoked herbs. With well-balanced, powerful tannin, concentration, and pinpoint precision, finesse, and purity, this expressive as well as textured effort will drink well between 2004-2018. When Figeac hits on all cylinders, one can understand why some tasters believe it is as complex as Cheval Blanc. This is undeniably the estate's finest effort since 1996.” R97 Ch. La Conseillante (Pomerol) 2000 385.00 *

Score 96 Robert Parker: the 2000 La Conseillante has a deep ruby/plum/purple color and an unbelievably expressive nose of sweet kirsch liqueur intermixed with raspberries, incense, toast, and licorice. Full-bodied yet ethereal in the sense that it seems to combine power along with eloquence and delicacy, this is a beautifully pure wine that has just hit its plateau of full maturity, although ideally I think it would benefit strongly from another 4-5 years of bottle age and drink well for two to three decades. (Jun 2010) R98 Ch. Mouton Rothschild (Pauillac) 2000 727.00 * Score 96+ Robert Parker: “Perhaps the most beautiful packaging ever on a Bordeaux bottle, Baroness Philippine de Rothschild literally produced a work of art in the gold-engraved bottle of 2000 Mouton Rothschild. Of course, one can’t drink the glass, but this is a top-flight Mouton Rothschild, eclipsed only by the 2006 and 2009. A rich, tannic, earthy style, with loads of creme de cassis and floral notes, the final blend of 86% Cabernet Sauvignon and 14% Merlot is a full-bodied wine with plenty of coffee, earth, chocolatey notes, and still plenty of tannin to resolve. I gave it an anticipated maturity range of 2015-2050 back in 2003, and that looks on target. The 2000 Mouton Rothschild is at its best with about 24-48 hours of decanting. A blend of 86% Cabernet Sauvignon and 14% Merlot, the wine offers a saturated ruby/purple color in addition to reticent but promising aromas of toast, coffee, licorice, creme de cassis, and roasted nuts. Dense, chewy, and backward, with tremendous purity and density in addition to obvious toasty oak, it is full-bodied, powerful, tannic, and backward. Twenty-four to 48 hours of aeration only hints at its ultimate potential. This blockbuster will be exceptionally long-lived R216 Ch. Pavie Macquin (St. Emilion) 2000 191.00 * Score 95+ Robert Parker: “A wine of great density, concentration, and intensity, the opaque blue/purple 2000 Pavie Macquin needs considerable aeration, but with decanting the prodigious bouquet of graphite, camphor, blackberry, blueberry, mineral, coffee, and smoky oak finally makes an appearance. Persuasive, expansive, full-bodied, and muscular, this enormously endowed, rich wine looks set for a long life, at least three decades. A terrific effort that rivals the compelling 1998. Anticipated maturity: 2010-2030+ R219 Ch. Canon (St. Emilion) 2000 165.00 * Score 90 Robert Parker: “This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post- bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Best drinking 2010-2025” R166 Ch. Belgrave Grand Cru Classé (Haut-Medoc) 2001 54.00 * Decanter: 4 out of 5 points: Matured in oak barrels for 15-18 months, good extraction of fruit with spicy notes and fine toast. Full bodied on the palate, balanced acidity with rich black fruit, velvety on the finish. Drink 2010-15. R165 Ch. La Garde (Pessac-Leognan) ` 2001 37.00 * Score 89-91 Wine Spectator. Decanter: “Very deep, rich colour, masses of wild blackberry fruit on the nose and cassis on the palate, excellent ripeness and good balance and length. Very good for short to medium term. (Tasted )” R228 Ch. Ducru-Beaucaillou (St. Julien) 2002 108.00 * Score 89 Robert Parker: “The wine has a deep ruby/purple-tinged color, excellent density, and medium body in an elegant style with a hint of road tar and sweet fruit. It should drink well young but age nicely for 12-15 years.” R234 Ch. Grand-Puy-Lacoste (Pauillac) 2003 100.00 * Robert Parker: “A deep ruby/purple-tinged color is followed by a moderately intense bouquet of black currants and underbrush. It hits the palate with good fruit and medium body, but tails off in the finish. It is an elegant, lighter- styled example of this generally high-class performer. It can be consumed over the next 10-12 years.” Best drinking 2006-2018 R238 Ch. Grand Puy Lacoste (Pauillac) 2004 78.00 * Score 89 Robert Parker: “This excellent offering displays sweet black currant notes intermixed with notions of licorice, scorched earth, and spicy herbs. Medium-bodied and elegant with abundant fruit on the attack and mid-palate, and light to moderate tannin, it should drink well to 2022.” R239 Ch. Cos d’Estournel (St. Estephe) 2004 137.00 * Score 92 Robert Parker: “A beautiful example of the vintage, proprietor Michel Reybier and his top-notch winemaker, Jean-Guillaume Prats, have fashioned an exceptional wine displaying a dense ruby/purple color as well as a sweet perfume of boysenberries, black currants, cherries, pain grille, roasted herbs, and licorice. Medium-bodied with impressive density for the vintage, sweet tannin, and outstanding richness and length, it should be at its finest between 2009 and 2020+.”

Capet-Guillier Grand Cru (Saint Emilion) 2005 64.00 * Rich and robust, this is an old-fashioned style of Saint Emilion, composed in most years of 80% Merlot and 20% Cabernet Sauvignon. R70 Les Brulières de Beychevelle (Haut Medoc) 2006 56.00 * The appearance is deep crimson. The bouquet displays aromas of violets, blackcurrant, cedar and spice. On the palate flavours of truffle, cedar and blackcurrant emerge. Excellent structure, with fine grained tannin, followed by a long aftertaste of spice, cedar, truffle and confectionery. Overall, Brulières is a standout, classic Claret rivalling most Cru Bourgeois wines and which clearly benefits from the attentions of the Château Beychevelle team. R149 Chateau Les Hauts de BelAir 2014 25.00

Capet-Guillier Grand Cru (Saint Emilion) 2006 60.00 Chateau Capet-Guiller is a rather lovely, elegant Saint Emilion planted on clay-limestone slopes, in the commune of St Hippolyte, with an average vine age of 35 years. A Merlot-dominated blend, enriched by 20% new oak, makes for a wine which is, at once, supple and accessible, with dark, berried fruit and spice, supported by fine-grained tannins. R243 Ch. Smith-Haut-Lafitte (Pessac-Leognan) 2006 104.00 * Score 93 Robert Parker: “A top-notch success, the dense ruby/purple-colored 2006 Smith-Haut-Lafitte offers aromas of smoky, juicy black currants, graphite, earth, truffles, and forest floor. Full-bodied with superb purity, noticeable but sweet tannins, this round, generous, long wine should drink nicely for 15-20+ years. One can’t say enough about the work proprietors Daniel and Florence Cathiard have done at Smith-Haut-Lafitte since 1990.” Best drinking 2009-2029 R37 Ch. Saintem Grand Cru 2009 58.00 Rounded, ripe and inviting, with freshly crushed plum, blackberry and blueberry fruit woven with toasty spice and framed by a lingering cocoa edge on the finish. Merlot. D’Aggasac (Haut Medoc) 2009 72.00 “Fine fragrant lifted cassis nose, classy modern Cabernet fruit, very good expression of southern Medoc fruit, classy and classic. Drink 2013-18.” 16.5 points Decanter. 16 pts Jancis Robinson

R188 Chateau Teyssier Montagne (St. Emilion) 2010 38.00 R171 Chateau Rahoul Recolte (Graves) 2010 55.00 Polished and alluring, with black tea, dense plum and blackberry fruit, followed by a long, licorice- and tar-filled finish that glides along with surprisingly polished structure. An echo of smoky tobacco lingers as well, and this offers good range and depth. Best from 2014 through 2021. Score - 90. (James Molesworth, Wine Spectator, web only, 2013)

R89 Ch. Grand Terrier des Eyriaux Bordeaux Superieur 2011 33.00 Ripe black plum and cassis fills out the nose and this black fruited power is there on the palate. Ripe feeling tannins give a mid suppleness lovely and fleshy. The ripe cassis is backed by firmer black cherry with towards the back coffee and spice giving an added complexity. It has a bright red fruit flavors, light tannins and a smooth finish that makes this wine incredibly drinkable. While delicious on its own, like most Italian reds this wine really comes to life with food. We suggest trying it with pasta, lamb or young cheese.

Apuglia R20 Li Veli ‘Pezzo Morgana’ Salice Salentino 2004 37.00 This is Negroamaro at its finest. Separate lots are aged in both wood (for complexity) and steel (for freshness) before being blended. This wine is beautiful to the eye with a core of deep ruby with some garnet notes at the rim. Negroamaro is renowned for its highly perfumed, lingering sweet fruity notes, and "Pezzo Morgana" does not disappoint. R28 J. Palacios Pétalos Bierzos 2011 53.00 The wine is very aromatic and flowery (violets), almost heady, with clear notes of blueberries and licorice. The oak is perfectly integrated, almost imperceptible, save for a touch of spices and a lactic hint denoting a very young wine. It has a medium body, with a thick silky texture, is very tasty, with some acidic strawberry flavors. This is one of my go-to wines at restaurant lists, as it offers very good value for money and is widely available in Spain (and elsewhere, I hope!), as 320,000 bottles were produced. Aged in both tank and French oak, it comes from 60-80-year-old vines planted in limestone soils at a relatively high elevation of over 1,600 feet. Its opaque purple color is followed by copious aromas of blueberries, black raspberries, camphor, licorice, white flowers and a chalky limestone/dusty character. Offers good fat without excess weight, finishing with a fine dusting of tannins and very good length. Sweeter and more expansive than the 2011 bottling. Not yet an adolescent, this youthful 2005 reveals an inky/purple color as well as notes of lead pencil shavings, charcoal, black currants, cedar and underbrush. Full and rich, but backward and structured, it needs to be forgotten for another 3-4 years, and drunk over the following 25 years. An extraordinary amount of rain fell between January and June of 2005, causing some flooding in lower areas of Napa Valley. The flowering was enormous and it was clear a potentially huge crop was in store for growers unless crop- thinning was employed. The warm summer, with a few heat spikes in July and August, was followed by a cooling trend that ushered in a perfect Indian Summer that allowed growers to extend their hang-time, and harvest throughout the month of October. Some of the mountain vineyards did not finish picking until mid-November – very late for Napa. The 2005 Insignia, made from 100% estate fruit, is composed of 92% Cabernet Sauvignon, 7% Petit Verdot and 1% Merlot that achieved 14.5% natural alcohol. That said, it also seemed quite concentrated this year on opening while very much retaining its elegance. It was rich in flavor and delicious, yet quite serious, not particularly fruity as such. There is just a touch of lemon on the finish, but that resolves quite quickly. It will be interesting to see where this goes and I suspect it will improve notably - it showed better in Portugal. It is a bit closed now. The evidence suggests that these have no problem holding well for several years and this will become far more expressive in the next year or two. Drink now-2019. Score - 91. W6 Kenwood Sauvignon Blanc (Sonoma Valley) 2011 31.00 Lively varietal aromas of grass, Meyer lemon and freshly cut honeydew melon. Fresh,and crisp, with lively body and a lingering finish.

W96 Rodney Strong Chalk Hills Chardonnay 2012 38.00 Hazy, green-tinged straw. Meyer lemon, quince and honeydew aromas are enlivened by a zesty white pepper nuance. Dry and nervy on the palate, offering tangy citrus fruit and ginger flavors and a touch of quinine. Closes taut and dry, with lingering citrus and bitter herb qualities. PORT, SHERRY & MADEIRA

PORT Port is a fortified wine made in Portugal from various grape varieties grown in the Douro valley. Brandy is added to halt fermentation at a point where sufficient natural sugar remains to give the wine its characteristic sweetness. There are many different types of port. Vintage port is wine of an exceptional year, kept in cask for two or three years, then matured in bottles. Late Bottled Vintage (LBV) ports are generally the produce of a single vintage. They are left in wood for four to six years, then fined and filtered before bottling. Ruby port, generally a blend of wines of different vintages, is stored in wood and bottled before it loses its clear, red color. Vintage Character port is essentially premium ruby port. Tawny port remains longer in the cask, losing some color and alcohol. Colheita is a tawny port from a single vintage. Crusted port is vintage or ruby port kept in bottles until it has formed a crust-like sediment. Single Quinta Ports are made in both tawny and vintage styles but with the distinction that they come from only one vineyard. White port is a sweet, amber- coloured port that is delicious served chilled as an aperitif. SHERRY

Sherry is a fortified wine that comes from white grapes that are grown near the town of Jerez de la Frontera in Andalusia, Spain. Sherry is produced in a viariety of dry styles made primarily from the Palomino grape, raning from light versions similar to white table wine, such as Manzanilla and Fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and Oloroso. Sweet dessert wines are also made, from Pedro Ximinez or Moscatel grapes, and are sometimes blended with Palomino- based Sherries.
