THE UNIVERSITY CLUB OF TORONTO WINE LIST: 2017 V.1 Introduction to the Wine List On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a wine pricing policy for the sale of wines in the bar and dining room which limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. We hope that you enjoy all the benefits the Club has to offer – a wonderful meal prepared by Chef Patrick Desmoulins accompanied by the best quality and value provided by our expansive cellar. Santé! SEVIRI HRV Fog RGB Quick Guide Aim: Distinguishing of fog/low clouds from snow-covered land in high resolution. Area and time period of its main application: Mid-latitude region, daytime during winter. Application and guidelines: The identification of foggy and low cloud-covered areas is important for traffic and aviation security. Winter fog/stratus frequently forms over snowy cloud-free surfaces in high pressure conditions. Fog/water clouds have good colour contrast against snow and snow-free land. This is a daytime RGB as it uses shortwave channels. SEVIRI HRV Fog RGB for 7 March 2014, 08:40 UTC Background The table shows which channels are used in the HRV Fog RGB and lists some of the land and cloud features which typically make a low or high contribution to the colour beams in this RGB. Snow's reflectivity is much higher in the HRV than in the NIR1.6. As water clouds reflect much of the radiation in both channels they can be used in combination to distinguish snow and water clouds. Derived, complex words and analytical structures transmit shades of colors. Four colors have the highest use frequency in Ossetian language: black, white, red and blue. Black and white colors have the greatest semantic and stylistic meaning in the speech of Ossetian linguistic culture. These colors are precisely the part of mental language formations. An important role in color features of objective world is played by yellow and gold that is close to it. Blue, green and gray are named by one color. Color words have connotative meanings, express the peculiarities in people mentality and participate in symbol formation and stereotypes. Individual author’s development of color vocabulary enriches visual and expressive possibilities in Ossetian language. This study gives an idea of color picture of the world in the minds of the Ossetians.

  • THE WINES of WASHINGTON 2019 Andrew Will Winery Defining the Terroir of Washington State
THE WINES OF WASHINGTON 2019 Andrew Will Winery Defining the Terroir of Washington State “I am not interested in the similarities of my wines but the differences. The different identities of our vineyards and varietals which explore the identity of Washington State as distinct from California or Bordeaux.” Chris Camarda, Owner & Winemaker "[Chris Camarda] makes a bevy of incredible wines that will stand toe to toe with Bordeaux's 3-4+ times their going rates.” - Jeb Dunnick, The Wine Advocate "...These single vineyard bottlings are amongst the most superb wines made in the US today and are built to age long and gracefully in the cellars and only reveal their entire complement of aromatic and flavor complexities in the fullness of time." John Gilman, View From The Cellar Working out of a humble 60’ by 10’ winery, winemaker Chris Camarda launched Andrew Will Winery (Named after Chris’s son Will and Nephew Andrew) with his inaugural 1989 vintage. He has spent the last two decades producing some of Washington’s most well respected wines. Structured, elegant, and age worthy, they are a singular voice that has never adjusted in an attempt to chase scores or suit trends. Although always a focus, Chris’ attention to terroir has only intensified over time. Since 2001 he almost exclusively produces single vineyard blends as he feels this shows the terroir more clearly than a single varietal bottling. Currently he only sources from four vineyards that he feels provide the finest fruit: Champoux, Discovery, Two Blondes, and Ciel du Cheval. All Andrew Will wines are treated more or less the same in the cellar; 25-35% new oak barrels, aged for around 21 months, followed by a year of aging in bottle.

  • Quilceda Creek Knows, It’S Cabernet Sauvignon
Singularly Focused on the Pursuit of World-Class Cabernet Sauvignon If there’s one thing Quilceda Creek knows, it’s Cabernet Sauvignon. From our very first vintage in 1979, we have dedicated ourselves to doing one thing, and doing it right. We made the decision to focus on our greatest asset, the prolific vineyards of the Columbia Valley, and from the best of its grapes, create the highest caliber Cabernet Sauvignon. This decision continues to be our guiding philosophy today. We are proud to have set the benchmark for Cabernet Sauvignon, not only for Washington State but of all Cabernet Sauvignon producing regions. We create our wine with passion and intentionality. Dedicated to quality over everything else, our head winemaker, Paul Golitzin, marries precision with artistry. We produce Cabernet Sauvignon that compete with the cult wines of Napa Valley such as Screaming Eagle and Harlan Estate, and with France’s First-Growth wineries like Chateau Lafite Rothschild, Chateau Latour, Chateau Margaux or Chateau Haut-Brion. Producing world-class wine with uncompromising quality year after year is as much science as it is art. In order to be successful, we keep our focus on small batches, with quality always taking precedence over quantity. With today’s changing climates, we continuously update our growing approach and integrate technology to maintain consistency in our vineyards. We drive the 250 miles to Eastern Washington every week, checking on our grapes personally, religiously tending the vineyards, harvesting them at the absolute peak, then transporting them back to our estate in Snohomish, WA for the crush.
