Mix Tape Menu Illustration by Mariam Carothers 3Rd Tuesday, Every Month Gogo Dancers U DJ U Drink Specials 10 P.M Vol. 3 No.1, 2016 mix tape Menu Illustration by Mariam Carothers 3rd Tuesday, Every Month GoGo Dancers U DJ U Drink Specials 10 p.m. to 2 a.m. Sponsored by HOLIDAY MIXTAPE LOUNGE – Liner Notes by (DJ) Patrick A. Reed The difficult and essential aspect of making a mix – whether playing a live DJ set, tweaking an iTunes or spotify playlist, or sitting with your finger poised on the pause button of your tape deck, trying to start recording at exactly the right instant – isn't just the selections you make, or the order you put things in. It's the personal element: sharing how YOU hear music, giving other people a direct line to the radio station in your head. You determine the format, you set the parameters, and sometimes you decide to break your own rules. ("Can I really use two songs by the same artist on this? JUST WATCH ME.") You use other people's sounds and words, and use them to express your own feelings, whether that's "I think I really like you" or "this has been a rough week" or "these are tunes you should know" or "we should totally dance". In short, you take the pieces you want, use them to fashion cocktails, and serve them to an audience. Some work best when sipped slowly, some are meant to be consumed in one quick shot. You get to make those calls, you draw the through line, you decide when to use rare imported ingredients with names you can't pronounce, and when to bring old favorites back into the spotlight. And when you come up with just the right combination, when the flavors blend just right, the context you've created becomes the work itself. It's no longer about what components you've used, it's a whole new thing made up of these things you love. And that, right there, that synthesis… That's the true magic of mixology. Cut the ginger into smaller pieces and mix this in a food processor with some of the hot water until the mixture resembles mulch. Then add this back into the pot of water, turn off the heat, cover, and allow it to steep for one hour. Once cooled, strain the mixture through cheese cloth or a sieve, extracting as much flavor from the solids as you can. Discard the solids. Add the lime juice and sugar/syrup, stir. Let cool, then transfer to bottle(s). Store in refrigerator. Note: this will not yield a conventional, carbonated ginger beer.

CLASSIC COCKTAILS Classic Champagne Cocktail Probably dating back to the 19th century, but nobody really knows on which side of the Atlantic it was first created. As a rule, the ingredients should never be mixed. Champagne, Cognac, Angostura bitter, sugar .................. 12.00 Bellini Guiseppi Cipriani of Harry’s Bar in Venice was inspired by the paintings by Giovanni Bellini to create this fresh Champagne cocktail. This cocktail was a favourite of Noel Coward and Ernest Hemingway whenever they visited the bar. Enjoy it traditionally with gin or if you prefer like James Bond with vodka. Gin or vodka, Vermouth ................................ from 9.00 Cosmopolitan The origins of the Cosmopolitan is somewhat disputed. It’s believed it started in the 1970’s in San Francisco, but it was in 1987 Tony Cecchini in New York made the cocktail famous. Ketel One citron, Cointreau, cranberry juice, fresh lime juice ....... 9.00 Tom Collins The origin can be traced back to the headwaiter John Collins at the Limmer’s Coffee House in London in 1817. • Fill a Collins Glass with Cubed Ice and Add: 2 Oz. of Gin 1.5 Oz. of Fresh Lemon Juice 1 Tsp
With a legend that can be traced back to the 19th century, the assumption is often made that the Tom Collins cocktail is named after an historical figure -- the answer is, yes and no. The recipe for the Tom Collins -- gin, lemon juice, sugar and soda water -- first appeared in print in the 1876 The Bartender's Guide, authored by Jerry Thomas, widely considered to be the father of American mixology. The name of the cocktail most likely resulted from The Great Tom Collins Hoax of 1874. (We don't make this stuff up -- read on…) At that time, a popular practical joke in New York and Pennsylvania was to begin a conversation on the street by asking, "Have you seen Tom Collins?" When the listener predictably responded that he did not know Tom Collins, the speaker would act concerned, noting that Mr. Collins had been making some unpleasant and untrue statements about him. When the listener (predictably) became agitated, he was told that Collins was last spotted just around the corner or at a nearby bar. The flummoxed listener would then dash off to find the offending (but fictitious) Mr. Collins. Several newspapers of the era promulgated the joke by publishing stories of false sightings of Tom Collins. The Tom Collins holds such a significant place in mixology that the preferred glass for serving the cocktail -- a tall, narrow 10-14 oz. tumbler -- is called a Collins glass. With its relative simplicity, the gin-based Tom Collins has numerous variations that go by multiple names: John Collins – served with bourbon as base spirit; scotch in western U.S.) Juan Collins – white or silver tequila replaces gin Ron Collins – made with rum Brandy Collins / Vodka Collins – you’ve got these figured out! Tom Collins Fill a Collins glass with cubed ice and add: 2 oz.
