The last menu we dedicated cocktails to all our favourite books, this time we are writing our own story… Enjoy your drink with The untold legend of Jahn Collins Junior 2 The Legend of John Collins Junior John Collin Jr. £12.50 Pecan infused Bulleit Bourbon, Lemon and Black Walnut Bitter, Stout Syrup, Coconut water, Soda, Butterscotch. John Collins Junior was a young Sheriff, son of the famous john Collins. He was himself not very famous – but this would change very soon. He was from “New Cork,” a deserted land where only weeds grew. Nothing ever happened there, until one day a Gunslinger came to town. Out of fear that he would cause problems within the town, the town elected him sheriff. John was so ashamed of his people that he could not stay in the town any longer. He headed out west, but on his long, hot journey, he collapsed from exhaustion. when he woke up he was in an unknown village front of a wanted man… The Shaman. The Shaman was celebrating, for he had captured his tribe’s worst enemies. The two prisoners were in cages. the Spaniard invader and the Dutch priest had been wanted men for a decade. John had been found near the two criminals and he quickly realised he had been confused for one of them. He was ready to accept his fate: A man that had spent his life serving the law was to be executed with two criminals. from the outlaws so to be confused for one of them. Very sarcastic the destiny! He sat in his cage, looking over the clouds and thinking how he had wasted his life in a tiny town, without ever seeing the world. He had never even seen the sea. How can a man live without even seeing the sea? A life that has not really been lived is even worse to lose, he thought. He knew that if only he could survive this capture, he would live a different life, hunting his dreams and not letting days just pass by. But That surely could not happen. There was no eay he could escape the shaman and his tribe. He had resolved himself to death when he heard a gunshot. And again, and again. He Looked up. He would had recognised the sound of that gun everywhere, it was Jackie -Rose, his sister – who he had not seen for years. The Shaman’s tribe were frozen in place. Jackie-rose grabbed john, punched the shaman, and ran away faster than the wind. As they rode, Jackie told him about a land with Golden Soil. The few survivors were shell shocked, claiming that their land had been destroyed by a band of devil musicians. John and Jackie did not want to give up. A group of desperate farmers confirmed the story of the buffalo hunter. Their land had been raided by a group of skeletons. He had to touch it with his own hand. he jumped off the horse, he threw off his shoes and ran down the beach. He stopped to stare at the sea, he could stay there forever to listen to the waves. Then he sat down and put a message in a bottle and threw it as hard as he could into the sea. Jackie asked him what he had written. John slowly turned to her and with a smile told her… …. Garnish lemon or lime wedge/peel Moscow Mule 2 oz vodka ½ oz lime juice 4 oz ginger beer Add all ingredients to a copper mug (or rocks glass). Garnish with the lime hull. Audrey Saunders’ delicious riff on the Moscow Mule, the Gin-Gin Mule ¾ oz fresh lime juice 1 oz simple syrup 2 mint sprigs 1¾ oz Tanqueray London dry gin 1 oz homemade ginger beer* Shake all ingredients well, strain into a tall Collins glass filled with fresh ice. Garnish with a lime wheel, a sprig of mint and a piece of candied ginger. Serve with a straw. *Ginger Beer 1 gallon water 1 pound ginger root, peeled 4 oz light brown sugar or 6 oz light agave syrup 2 oz fresh lime juice Place the water in a sauce pan, bring to a boil. Cut the ginger into smaller pieces and mix this in a food processor with some of the hot water until the mixture resembles mulch. Then add this back into the pot of water, turn off the heat, cover, and allow it to steep for one hour. Once cooled, strain the mixture through cheese cloth or a sieve, extracting as much flavor from the solids as you can. Discard the solids. Add the lime juice and sugar/syrup, stir. Let cool, then transfer to bottle(s). Store in refrigerator. Note: this will not yield a conventional, carbonated ginger beer.

The name of the cocktail most likely resulted from The Great Tom Collins Hoax of 1874. (We don't make this stuff up -- read on…) At that time, a popular practical joke in New York and Pennsylvania was to begin a conversation on the street by asking, "Have you seen Tom Collins?" When the listener predictably responded that he did not know Tom Collins, the speaker would act concerned, noting that Mr. Collins had been making some unpleasant and untrue statements about him. When the listener (predictably) became agitated, he was told that Collins was last spotted just around the corner or at a nearby bar. The flummoxed listener would then dash off to find the offending (but fictitious) Mr. Collins. Several newspapers of the era promulgated the joke by publishing stories of false sightings of Tom Collins. The Tom Collins holds such a significant place in mixology that the preferred glass for serving the cocktail -- a tall, narrow 10-14 oz. tumbler -- is called a Collins glass. With its relative simplicity, the gin-based Tom Collins has numerous variations that go by multiple names: John Collins – served with bourbon as base spirit; scotch in western U.S.) Juan Collins – white or silver tequila replaces gin Ron Collins – made with rum Brandy Collins / Vodka Collins – you’ve got these figured out!
