Pale straw color, soft and elegant, not heavily oaked, medium bodied, showing green apples, white peach, citrus, pear, quince, clean, crisp, with well defined acidity and minerals. Ramey Cellars Chardonnay, Russian River Valley 2006 Light gold, strong smoke and minerals complement fresh pear and apple aromas, crisp and linear, with vibrant orchard fruit flavors, a gentle hint of smoked meat and lively acidity on the close. Lots of flavor here, but no undue weight or fat, striklingly racy. Kistler “Les Noisetiers” Chardonnay, Sonoma Coast 2006 Classic style of white burgundy, intensely flavored with delicate mineral characteristics, with a firm acid balance. Rich flavors of ripe fruits, nut oil, toasted almond, long lingering finish. FLIGHT No. 2: RIESLING, IRSAI & SAUVIGNON BLANC $8.50 Carl Graff Riesling Kabinett, Mosel-Saar-Ruwer 2007 Kabinett is a sweetness level, being the driest of the levels. Delicate fruits of peaches, apricots, flower-scented bouquet, long finish, semi-dry, pairs well with spicy foods. Irsai Olivier, Nyakas Cellars, Budai, Hungary 2006 Crisp, dry, light, aromatic, apple, citrus, pear, lychee fruit, Muscat like. White Haven Sauvignon Blanc, Marlborough New Zealand 2007 Unoaked, crisp acidity, gooseberry aromas, herbaceous, citrus fruits, grassy, medium body, green bell pepper, clean lingering finish. Grüner Veltliner, #1 “Estate Bottled” Hirsch, Niederösterreich Austria 2007 Elegant, crisp, fruity, white pepper, spiciness, mineral characteristics. Château Routas Viognier, “Estate Bottled” Provence 2006 (Blend of 90%Viognier and 10%Chardonnay) Floral nose, honeysuckle, exotic fruits, pineapple, white flowers. 4 RED WINE FLIGHTS 2 ounce tasting FLIGHT No. 1: PINOT NOIR $19.75 Bouchaine Vineyards Pinot Noir, Carneros, Napa Valley 2005 Plums, black cherries, tart red cherries, roses, plums, cranberries, shows bright acidity with a touch of earthiness followed with a lasting finish. Rex Hill Vineyards Reserve Pinot Noir, Oregon 2005 Located on Rex Hill in Oregon, the grapes for this wine are sourced from 10 different single vineyards. Flavors consist of sweet plum, red and black cherry, blackberry, spice, finishing with good length on the palate. Hamilton Russell Vineyards Pinot Noir, Walker Bay, South Africa 2006 Made from naturally low yielding vines on stony, clay-rich soils. All grapes are hand harvested on 52 hectares (130 acres). Light cherry red color, sweet cherry nose, bacon fat, smoked bacon, earthy, bouillon with a nice balance. A little rustic in style. FLIGHT No. 2: CABERNET & CABERNET BLENDS $24.00 Faust Cabernet, Rutherford, Napa Valley 2005 Made by Quintessa Vineyards, this wine has a burst of intense ripe fruit on the nose of black currant, blackberry, chocolate, showing bold flavors yet elegant and concentrated with a long lasting finish. Lail Vineyards “Blueprint” Napa Valley 2004 Lail Vineyards traces its Napa Valley origins back five generations. Blueprint is named after the stylistic outline of the original vinatages of the flagship wine, J. Daniel Cuvee. This is a blend of 50% Cabernet,34%Merlot, 16%Cabernet Franc. Elegant with flavors of blueberry, vanilla, oak, dry herbs, weedy tobacco. Long sweet vanilla and red cherry finish. Ristow Cabernet, “Quinta de Padras Vineyard,” Napa Valley 2000 Ristow Vineyards in located on the Silverado Trail in Napa Valley on an 18 acre vineyard planted only to Cabernet. Quinta de Padras, means “place of stones” due to the rocky soil. Grapes are harvested by hand, rocky terrain imparts a distinctive minerality with dark fruits, exotic spice, black currants, chocolate, cassis, pencil shavings, cigar box, with a rich supple elegant concentrated finish. FLIGHT No. 3: OTHER RED VARIETALS $15.50 Marques de Caceres “Gran Reserva” Spain 2000 Made primarily with tempranillo grape, aged 5 years-2 years in French oak, ruby color, aromas of almonds, vanilla, tobacco, plums, soft tannins, cinnamon, spice, leather, hint of coconut. Trentadue “Old Patch” Zinfandel, Alexander Valley 2005 (Blend of 76% Zinfandel, 16% Petite Sirah and 8% Carignane).

    How to Buy Eiswein Dessert Wine Eiswein is a sweet dessert wine that originated in Germany. This "late harvest" wine is traditionally pressed from grapes that are harvested after they freeze on the vine. "Eiswein" literally means "ice wine," and is called so on some labels. If you want to buy eiswein, know the country and the method that produced the bottle to find the best available "ice wine" for your budget. Does this Spark an idea? Such wines are characterised by undesirable sensory characters described as smoky, burnt, ash, smoky bacon, medicinal and ashtray. This review summarises the knowledge about the composition of smoke from forest and grass fires, describes relationships between smoke exposure of vineyards and smoke taint in wine, and outlines strategies for managing and reducing the risk to producing smoke-affected wines. The sensitivity of grapes and vines at different phenological stages to the uptake of contaminants from smoke, especially smoke-derived volatile phenols, is outlined, and the pathways for entry and metabolic transformation of volatile phenols are discussed. The potential for translocation of phenolic contaminants within the grapevine and the differences in uptake of smoke contaminants of different grape cultivars are also discussed, along with preliminary work on dose/response relationships regarding concentration and duration of exposure and subsequent expression of smoke taint in wine. The chemical basis of smoke taint in wine is described, and the relationship between volatile phenols from combustion of wood/lignin and their glycosides, and sensory panel ratings of smoke attributes in affected wines is discussed.

They cater to a very select clientele in 85 countries, and even then only exports 40 percent of its limited production of 130,000 bottles a year. The other 60 percent is sold in Spain. The jewel in the winery’s crown, Vega Sicilia Unico, takes 10 years to produce. The Valbuena is not a second wine. Rather, it is a different expression that has aged for less time, and will drink sooner, than Unico. It is a wine that comes from the younger vines and, it is mostly made with the varieties of Tempranillo and Merlot, rather than Cabernet Sauvignon. Bodegas Alión was formed in 1986 as a winery which would be run independently to its big brother, the great Vega Sicilia. This 85-hectare wine estate was founded by the Álvarez family to provide a modern expression of Ribera del Duero wine. 35 hectares of the estate is located around the winery, with a further 50 hectares dedicated to Alión within the historic Vega Sicilia vineyards. Unlike Vega Sicilia, where we find a merging of the traditional and modern winemaking techniques, Alión is made using state-of-the-art equipment. Forward and uncompromising, these are wines with impressive frames and show an alternative side of Tinto Fino. Pintia realizes the desire of the Álvarez family to make the best Toro wine, a designation that gives wines body, exoticism, an explosion of aromas, and a modern personality and character.

For many years, as was the case with other famous wine families like the Frescobaldis and Ricasolis, they were involved in the buying and selling of wine estates as well as having interests in many other trades. In 1506 Nicolo Antinori purchased the beautiful palazzo in Florence which, to this day, remains the HQ of today’s Marchese Piero Antinori and his sprawling wine empire which encompasses 24 estates in 6 different countries. For hundreds of years after the Marchese and his descendents had moved in to the palazzo, the wines of the Antinori family established a reputation as an excellent source for Tuscan wines and they began accumulating land in some of the region’s most famed viticultural areas - in particular Chianti Classico. By 1863, the family business was doing well enough that the ‘Fattoria dei Marchesi Lodovico e Piero Antinori’ was formed in order to fully professionalise what they were doing and with the aim of “establishing some order among the various winegrowing activities developed by the previous generations of Antinoris since the XIV century.”. Before long, this new company had become one of the star performers and the family’s influence continued to grow as the wines were exported throughout the world. This ambassadorial role was continued by today’s Marchese, Piero, who is widely heralded as the most important man in Tuscan wine thanks to his wide reaching efforts to improve the quality and reputation of Tuscan wines.

Catalunya Variety: 100% White Garnacha Vine Training: Goblet Vine Age: 50 Years Vineyard Info: The Vineyards located in the Terra Alta region in the far southwest of the Catalunya DO, west of the province of Tarragona, near the town of Gandesa. The region is perched high above the coast where the climate is an extreme Mediterranean with very low rainfall, approximately 14” per year, but with the peculiarity of a near constant presence of either the "Cers wind" (from the interior land to the sea) or the "Garbí wind" (offshore breeze). The area has a very high diurnal temperature variation. Soils are compact calcerourous clay with a very alkaline pH. Combined with very cold winters and very hot summers, all of these factors produce very special fruit. 90% of the entire world production of white Grenache is situated in the Terra Alta region, and is therefore considered an authentic and native grape variety that has a long history in the region. Vintage Info: 2012 was a dry growing season. Low rain during the year and very high temperatures turned made both harvest and vinification very complicated. It was made difficult by low acidity, over‐ripeness, and high pH. We are very proud of our Grenache blanc vineyard as this vintage really proves only the best old vineyards can make good wines even in the worst conditions. Our low production per vineyard and resistant soils allow this wine to keep full flavor and still be fresh and fruity. White fruit aromas mix with tropical fruit and floral notes to make this wine elegant and structured.
