We honour the pouring tradition… I The Purification, your bartender will always use a clean glass, which is rinsed and then chilled with cold water, allowing the glass to reach the same temperature as the beer. II The Sacrifice, ensuring every drop of beer is fresh, your bartender allows the first foams from the tap to wash away. III The Liquid Alchemy Begins, the chalice is held at 45 degree angle allowing the perfect amount of foam to start forming the head of the beer. IV The Head, the glass is straightened and the head forms creating the vital protection for the beer ensuring maximum freshness and flavour. V The Removal, your bartender then closes the tap in one swift motion and moves the glass away to prevent drips entering the beer that have had contact with the air, these drops have oxidized and are not worthy of your beer. VI The Beheading, while the head is still forming, your bartender cuts it gently with a knife to eliminate the larger bubbles, bursting easily they accelerate the dissipation of the head. VII The Cleansing, your bartender rinses the bottom and sides of your glass, this keeps the outside of the chalice clean and comfortable to hold. VIII The Bestowal, your beer is served to you on a coaster. Chimay Premiere (rouge) Bieres de Chimay Hainaut, Belgium 7.0% 750ml $40.0 The Chimay Red from the world famous Notre-Dame of Scourmont. This Trappiste can be matched to food in the same ways as a hearty red wine, with its strong flavour & beautiful bouquet with a slight bitterness. Chimay Cinq Cents (white) Bieres de Chimay Hainaut, Belgium 8.0% 750ml $40.0 With a bouquet of Muscat grapes and raisins, the Chimay Tripel succeeds remarkably in blending both sweetness and bitterness . Dupont Biere De Miel Brasserie Dupont Tourpes-Leuze, Belgium 8.0% 750ml $40.0 Literally ‘beer with honey’. This saison beer has a marvelously delicate scent of honey, balanced by a dry palate, resulting in a beer that is both estery and refreshing. Dupont Cervesia Brasserie Dupont Tourpes-Leuze, Belgium 8.0% 750ml $40.0 A light but complex beer. Citrus notes on the nose tied along to hints of caramel. Sweet with medium carbonation. A delightful traditional style beer sure to intrigue. Duvel Duvel Moortgat Breendonk, Belgium 8.5% 750ml $40.0 A top fermentation beer, re-fermented in the bottle. Blonde in colour with a nice, creamy head. Smooth on the palate, hoppy and full of taste. Excellent sweet/ bitter balance. Pleasant aroma and long-lasting aftertaste. 3 Liefmans Kriek Brut Duvel-Moortgat Oudenaarde, Belgium 6.0% 750ml $40.0 This classy beer represents the perfect marriage between the fresh accents and slightly acidic flavour of the black cherries. A perfect blend of Oud Bruin and Goudenband from different vintages. The beer is matured for 18 months, bringing out the very best of its intense flavour. Saison Dupont Brasserie Dupont Tourpes-Leuze, Belgium 6.5% 750ml $40.0 A classic Belgian farmhouse ale. This is a beautifully balanced, complex beer that has a refreshing fruitiness and long, dry finish. It is bottled unfiltered so it may be cloudy or have a slight sediment but this is normal and perfectly natural. Mc Chouffe Brasserie d'Achouffe Achouffe, Belgium 8.0% 750ml $40.0 Deep mahogany in colour with a soft tan head. Tastes similar to its aroma, with dark fruits, caramel, spices & a little hop bitterness La Chouffe Brasserie d'Achouffe Achouffe, Belgium 8.0% 750ml $40.0 A hazy, pale-golden brew with a frothy white head. A little spice, a touch of lemon, cinnamon, & light malts. Medium body, with a lasting finish. Kasteel Tripel Brouwerij Van Honsebrouck Ingelmunster, Belgium 7.0% 750ml $40.0 This powerful blond triple is a great mixture of sweet fruitiness and mild bitterness Leifmans Goudenband Duvel-Moortgat Oudenaarde, Belgium 8.0% 750ml $40.0 One of the most distinctive dark beers in the world. You'll immediately pick up on the wonderful aromas of caramel, apple, rhubarb, cherries and malt. On the taste buds you will find hints of apple and cherries, combined with woody notes, while the aftertaste hints at nuts and dried raisins. 4 Authentic Trappist Beer Trappist is a high fermentation beer brewed by monks inside monasteries; only 11 Trappist-monasteries are producing beer in the world. A “Trappist” has to satisfy a number of strict criteria, including beer must be brewed within the walls of the monastery by monks or under direct supervision, and the brewery is not intended to be a profit- making venture. The art of Trappist dates back to the middle ages when the beer was brewed for its nourishing properties. There are 6 Trappist breweries in Belgium and we have 5 on offer. Westmalle Tripel Trappisten van Westmalle Malle, Belgium 9.5% 330ml $16.6 This Tripel is smooth, dry & hoppy. It has a hint of fruity flavours and its aroma is spicy with plenty of vanilla. Westmalle Dubbel Trappisten van Westmalle Malle, Belgium 7.0% 330ml $15.6 The Dubbel is rich in colour & complex in taste, beginning with a hint of malt followed by warm dark fruit undertones & finishing with a touch of bitterness. 5 Rochefort 6 Brasserie Rochefort Rochefort, Belgium 7.5% 330ml $14.3 The 6, the oldest of the three Rochefort Trappist beers, has the reddish colour of autumn leaves, a soft body and an earthy, herbal palate (a hint of Darjeeling tea), which develops into a deep fruitiness. Rochefort 8 Brasserie Rochefort Rochefort, Belgium 7.5% 330ml $16.1 The 8 is oak brown with a red tinge & a huge creamy head. Brown sugar, strawberry, & orange preserves on the nose before soft caramel, a hint of chocolate, then pepper, spice & orange liqueur to end. Lots of body Rochefort 10 Brasserie Rochefort Rochefort, Belgium 11.3% 330ml $16.6 The top product from the Rochefort Trappist brewery. Dark colour, full and very impressive taste. Strong plum, raisin, and black currant palate, with ascending notes of vinousness and other complexities. Wit & Saison Witbier (white beer in Flemish) are yet another example of a style that nearly expired, but is now quite popular following an enthusiastic rebirth. There are two requirements of this style: first, it must contain up to 50 percent wheat and secondly, the use of spices namely coriander. Saison (French for season) , also known as farmhouse ales, are traditionally brewed in the winter, to be consumed throughout the summer months. Look for earthy yeast tones, mild to moderate tartness and lots of spice Titje Blanche Brasserie de Silly Silly, Belgium 5.0% 330ml $13.5 Classic Belgian Witbier using their special blend of spices including coriander and curacao dried orange peel along with Hallertau hops. This is a refreshing beer, producing a big white head in the glass, creamy mouthfeel and a lightly bitter finish. Traditionally, Tripels are bright yellow to gold in colour, which is a shade or two darker than the average Pilsener.
