D E C E M B E R 1 5 , 2 0 2 0 SAMGYETANG KOREAN GINSENG CHICKEN SOUP By Sarah Kim-Lee IG: sarahkim_lee About Samgyetang Ingredients Samgyetang is not just your ordinary chicken soup. Samgyetang is 1 fresh young chicken or cornish game hen healthy. It helps you with the blood circulation and to restore the lost 3 dried jujube (washed) energy and appetites. It might be the answer when you need pick-me-up 1-2 small fresh ginseng root (washed) food during summer or winter. 4-5 clove garlic (peeled) Samgyetang is made with a number of healthy ingredients — a young 1/2 inch peeled fresh ginger chicken stuffed with glutinous rice, ginseng, garlic, jujube, and fresh 1/2 Korean leek (daepa) chestnuts. 10-12 cups water Salt to season According to the Dongui Bogam (동의보감), Encyclopedia of Oriental 5 whole black pepper corn Medicine, 100% organic cotton cooking thread 1 to 2 green onions, chopped (for garnish) Ginseng – has beneficial antioxidant properties, helps with memory function, and boosts the immune system. It also helps to fight fatigue, For stuffing: promote energy, and much more. 1/2 cup short-grain sweet rice 1-2 clove garlic Garlic – helps with blood circulation. It has vitamins and minerals 2 peeled fresh ginger, thinly sliced such as manganese, selenium, vitamin C, vitamin B6, and other 1 small fresh ginseng root antioxidants, including allicin. 3 peeled fresh whole chestnuts Jujubes - help with blood circulation and curing insomnia. Jujube has Dipping Sauce: vitamin C and antioxidants, and it's a good source of calcium and 3 green onion (chopped finely) phosphorus. 1 inch peeled ginger (julienne) 2T vegetable oil Chicken - restores gut health; promotes healthy digestion; reduces 1T chili flakes joint pain and inflammations; and strengthens skin, hair, and nails 1 tsp vinegar 1/2 tsp sugar D E C E M B E R 1 5 , 2 0 2 0 Directions How to prepare chicken: 1./Wash short grain sweet rice with cold water until water runs clear, and drain and set aside for 30 minutes until the rice soaks water. 2. Wash ginseng root, peel the garlic, and slice ginger. 3. Wash chicken, clean the cavity well, and trim away the extra skin and fat around the tail. Sprinkle salt inside and out evenly. 4. Stuff chicken cavity with prepared short grain sweet rice, ginseng root, sliced ginger, and peeled chestnuts. Close flaps over the cavity using 100% organic cotton thread or a skewer. 5. In a large heavy pot, add 10 cups of water, bring it to boil, and place stuffed chicken carefully. 6. Water should cover the chicken. Add the remaining ginger, garlic, leek, and black peppercorn. Bring to boil over high heat while skimming foam until no more foam appears. Cover the pot with the lid, reduce heat to medium, and gently simmer for about 45 minutes. Add ginseng root and jujubes and cook for another 20 minutes. D E C E M B E R 1 5 , 2 0 2 0 Directions Plating and Serving 1. Preheat an earthenware pot with boiling water and pour out. Add the chicken and broth. 2. Place the earthenware on the stovetop and heat until the samgyetang broth starts to boil. 3. Remove from the heat and garnish with green onion.
