Smith Since 2011 Vienna’s world famous coffee house culture has been designated and protected as “Intangible Cultural Heritage” by UNESCO making it every bit as important as the Argentine Tango, the Mediterranean diet, and the Panama hat. According to the listing the Viennese coffee house is a place “where time and space are consumed, but only the coffee is found on the bill.” Armenian Traders The Vienna coffee house tradition goes back to the late 17th century when Armenian traders were allowed to roast and sell coffee beans by royal decree. The new beverage was well received and coffee houses sprang up rapidly throughout the city. In the early days, however, the various varieties of coffee had no official names and customers would make their selection using a colour chart! These days popular varieties include Schwarzer Brauner (espresso), Mélange (espresso with milk and foam), Verlängerter (espresso diluted with water), and Einspänner (black coffee served in a glass with whipped cream). The latter was traditionally popular with Vienna’s fiacre drivers as they waiting for clients outside coffee houses and named after the one-horse cabs common when fodder was short after the First World War. Bentwood Chairs The traditional Viennese coffee house has a distinctive atmosphere and a specific protocol dating back to its fin de siècle heyday. This is linked to regional differences in terms of society and economics. Coffee offers the best example of this. While fresh ground coffee is still the most popular coffee subsector in Slovakia, the most developed region, Bratislava (capital city), prefers instant coffee (61% instant coffee, 38% fresh ground coffee, 1% fresh coffee beans). Lately, coffee shops have another function, which is a place to work. People come to the coffee shop not only to enjoy free time, but to use it for productive activities. Activities such as meetings, working on projects, or doing assignments for students are common things that are easily found in coffee shops. This study aims to review the readiness of coffee shops in Bandung to face the culture of productive coffee drinking. The research method used is the mix method. Data collection is done by survey and observation techniques. There are 25 coffee shops surveyed to meet the needs of research data. The type of coffee shop that was sampled was a local brand coffee shop. This is based on another mission of this research, which is to build a local brand that has a competitive advantage. The results showed that basically the majority of coffee shops in Bandung were eligible for productive activities. However, there are still quite a lot of aspects that need to be improved to enhance its conduciveness. Layout of the shop, level of price, availability of parking area, level of privacy, and availability of prayer room are aspects that are less prepared. The main idea was to make a business plan for it and research that is it a profitable idea to establish a café at this time in Kajaani. Additional research on different types of cafés in Finland and abroad was also done. The thesis deals with business plan; what it consists of, what are the factors that make a good business plan. The thesis also deals with the law issues concerning establishing a new café. The thesis consists of actual planning of a café; décor, style and operational environment and assessment on biggest competitors. Thesis shows that for the café to be able to succeed in Kajaani, it should have a wide target market and be able to appeal to a wide range of people with various kinds of products. The café should also have something that makes it different from the others since there are so many cafés in the area. The longer opening times are one factor that would set the café apart from the others and selling alcohol in the premises would also differentiate the café from most of the competitors.
