The Presidents Message

Oh my gosh, March already!! Did you know that March is the month with the most snowfall - historically snow falls for 9.5 days and accumulates 229m of snow. isn't that just what we all want to look forward to? On the other hand, March is also the beginning of spring and with any luck at all that will signal the end of the snow and all the hazards it brings with it.

With March comes Daylight Savings time - ugh! While "springing ahead" is easy enough to do, it's the falling back on November 1st that we all hate. At any rate, the date in question is March 8th so mark your calendars so as not to be late for church that day.

Another special day in March is St Patrick's Day, March 17th. As we all know , St Patrick's day is a global celebration of Irish culture. It is also the one day of the year when there are only two kinds of people in the world- those that are Irish and those who wish they were. Remember to wear green so the leprechauns can't see you and sneak up on you and pinch you. I'm sure that only happens in Ireland, while here in Canada, March 17th is in fact a day when drinking green beer is the norm. Happy St Patrick's Day everyone.

Our name "Go-Getters" is becoming more and more widely known and as a result we have more and more walk-ins and phone calls enquiring about our club. I'd like to take this opportunity to say "Welcome" to all our new members and encourage our membership in general to make everyone feel at ease whenever they walk in our doors. One way to help with everyone's intermingling, if I may suggest it, is if we make a habit of purchasing and wearing one of our name tags. Oh yes I know, I better practice what I preach and start wearing my name tag more frequently.

As always I am looking forward to seeing all of you at our March luncheon, and although I'm not sure what they will be serving, I am sure it will be delicious, to say nothing of the very social aspect of sharing a meal with friends, keeping in mind that strangers are just friends we haven't met.

I'd be remise if I didn't leave you with an Irish Blessing or two for Irish luck, so I wish for each of you: May love and laughter light your days and warm your heart and . May good and faithful friends by yours, wherever you may roam. May peace and plenty bless your world with joy that long endures. May all life's passing season's bring the best to you and yours.

I also wish for you: Ample food and sturdy drink, A clean pillow for your head, And may you be forty years in heaven Before the devil knows your dead!

Stay Warm and A Happy St Patrick's Day everyone.

Cheers,

Diane Allen President

Please use beef chuck stew meat that is well marbled with fat. Prep time: 25 minutes Cook time: 1 hour, 50 minutes Yield: Serves 4 to 6 INGREDIENTS 3 teaspoons of salt (more to taste) 1/4 cup extra virgin olive oil 6 large garlic cloves, minced 4 cups beef stock or broth 2 cups water 1 cup of Guinness extra stout 1 cup of hearty red wine 2 tablespoons tomato paste 1 tablespoon sugar 1 tablespoon dried thyme 1 tablespoon Worcestershire sauce 2 bay leaves 2 tablespoons butter 1 large onion, chopped (1 1/2 to 2 cups) 1 1/4 pounds well-marbled chuck beef stew meat, cut into 1 1/2-inch chunks 3 pounds russet potatoes, peeled, cut into 1/2-inch pieces (about 7 cups) 2 cups 1/2-inch pieces peeled carrots and/or parsnips (3 to 4 carrots or parsnips) 1/2 teaspoon freshly ground black pepper 2 tablespoons chopped fresh parsley

METHOD 1 Brown the beef: Sprinkle about a teaspoon of salt over the beef pieces. Heat the olive oil in a large (6 to 8 quart), thick-bottomed pot over medium-high heat. Pat dry the beef with paper towels and working in batches, add the beef (do not crowd the pan, or the meat will steam and not brown) and cook, without stirring, until well browned on one side, then use tongs to turn the pieces over and brown on another side. 2 Add garlic and sauté, then add stock, water, Guinness, wine, tomato paste, sugar, thyme Worcestershire, bay leaves, simmer: Add garlic to the pot with the beef and sauté 30 seconds or until fragrant. Add the beef stock, water, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, and bay leaves. Stir to combine. Bring mixture to a simmer. Reduce heat to the lowest setting, then cover and cook at a bare simmer for 1 hour, stirring occasionally. 3 Sauté onions, carrots in separate pan: While the pot of meat and stock is simmering, melt the butter in another pot over medium heat. Add the onions and carrots. Sauté the onions and carrots until the onions are golden, about 15 minutes. Set aside until the beef stew in step 2 has simmered for one hour. 4 Add onions, carrots, potatoes to beef stew, simmer: Add the onions, carrots, and the potatoes to the beef stew. Add black pepper and two teaspoons of salt. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard the bay leaves. Tilt pan and spoon off any excess fat. Transfer stew to serving bowls. Add more salt and pepper to taste. Sprinkle with parsley and serve. from Simply Recipes ~ https://www.simplyrecipes.com/recipes/irish_beef_stew/
