RESTAURANT ~ BAR PRESS KIT Panama Restaurant & Bar Potsdamer Strasse 91 | 10785 Berlin PANAMA PARADISE RIGHT HERE, RIGHT NOW Berlin, June 23rd 2016: On Potsdamer Strasse, one of the most diverse and most interesting Berlin neighbourhoods, opened Panama, hidden in the courtyard of an old factory building. Restaurant & bar merge the longing for the exotic with the comfortable feeling of being at home. Near & far determine the aesthetics and the culinary concept of the restaurant, the menu expresses a modern German cuisine that is embracing cultural diversity and the integration of other countries’ inuence to create new avours and contemporary richness. After Katz Orange, Panama is the second restaurant and bar project of Contemporary Food Lab. It follows the vision of owner & CEO Ludwig Cramer-Klett, who found inspiration in the popular German children’s book “Oh wie schön ist Panama” by author and illustrator Janosch: to build a place that satises your longing for exotic wonderlands but feels like home at the same time. Panama harmonizes the antagonistic elements of closeness and distance. It is a place of deceleration that inspires to see the world with your heart, to open your eyes and discover paradise right here, right now. KITCHEN Head chef and Culinary Director Sophia Rudolph was born in Berlin and grew up in France where she learned and studied at the renowned Institut Paul Bocuse. After returning to her hometown she worked at Michelin-starred Weinbar Rutz, where she was sous chef before taking over the leading position at Panama. Her menu combines familiar ingredients and surprisingly exotic accents, naturally integrating inuence from other countries. Seabass ceviche, salted lemon & capers, parsley or Green pea soup, kimchi, chorizo: the regionally sourced produce, the German base, gets a new interpretation by adding a surprising detail or using an unusual cooking technique. Many of the dishes are vegetarian, sh and meat become highlights on the menu. Like the food ingredients, Panama’s wines are true to their origin and reective of the environment in which they have been made. Next to well-known grapes and winemakers there are up and coming regions, countries and grape varieties on the menu to show unknown pleasures and create a balance between the familiar and the surprising. All wines are complementary to the food menu with its sharing dishes, and they all had enough time to develop and to be drunk right now. ARCHITECTURE & DESIGN Restaurant and bar stretch across two storeys of the brick rear building. Additionally, the complex covers an idyllic courtyard and Tiger Bar, a smaller backyard studio that oers its own intriguing selection of terroir cocktails. e interior design is a collaboration of Ludwig Cramer-Klett and the two interior architects Nora Witzigmann and Karoline Butzert. e overall inspiration reects the Panama philosophy: a symbiosis of exotic elements and familiar materials and styles. e historic space of Potsdamer Strasse 91 with its high ceilings, pillars and brick walls was furnished with bright ash wood and terrazzo tiled tables and classic wooden onet chairs, accented with colourful fabrics and details as well as exotic plants and succulents. e art collection has been curated by Ludwig Cramer-Klett himself: Works of artists from his personal environment, such as a neon installation by Kerim Seiler, a clock by Alicja Kwade and two photographs of Julius von Bismarck, are accompanied by other, up and coming international artists. Panama is not only a new restaurant on one of the most important connections between the former East and West Berlin, but a space for encounters and inspiration: “ere are only few places in the world like Berlin, a city that gives us the opportunity to create our own worlds and shape our own realities” says Ludwig Cramer-Klett, “that’s why Berlin feels right for Panama.” ABOUT CONTEMPORARY FOOD LAB Contemporary Food Lab is a food venture based in Berlin dealing with matters of food & nutrition in various elds. We develop and implement up to date concepts for catering & gastronomy (including restaurant Katz Orange, deli Candy on Bone and restaurant Panama). We also publish an online journal discussing food from dierent angles and disciplines, sharing knowledge and discussing various aspects of food. Four base spirits are aged in specic German terroirs with two dierent cocktails created from each. is innovative selection of drinks coincides with Tiger Bar’s philosophy of discovering the regionality of ingredients and the eects place has on taste. “While kitchens can use local farms and great wines to showcase the region that they represent, we felt like cocktails are put at a disadvantage, as most spirits are largely commercial products. We are now setting out to nd a way to bring regional authenticity to cocktails.„ – Joshua Lange, F&B Director Various kinds of stones were brought to Berlin from regions of Germany such as Mosel, Rheingau and Pfalz. ese dierent terroir produce uniquely aged spirits that compose not only a multifaceted avour prole, but add a story behind each drink for the guests to discover e possibilities of new avours and combinations using terroir are endless- giving cocktails of such layered complexity that they rival anything coming out of our kitchen or cellar. Tiger Bar, which opened December 1st 2016, as the extension of renowned restaurant Panama, has explored the concept of terroir from the outset, being inspired by Panama’s kitchen and wine menu. e close collaboration between kitchen and bar, that includes the selection of bar snacks created by Head Chef Sophia Rudolph, as well as the shared and sustainable use of produce, inuenced terroir-themed menus in the past. While the theme was implemented playfully through single ingredients or conceptually, in terms of the product’s origins, the bar team is now exploring it on a universal and ground breaking level by making terroir spirits the base element of every cocktail on the menu. e new Tiger Bar menu not only shows the determination to pioneer terroir cocktails, but also the complexity terroir spirits oer.
