Jigar means “liver /heart /mind” Thanda means “cooling”. Jigarthanda Popsicle is prepared with almond tree gum (Badam Pisin), nannari syrup, milk and sugar. I already posted the authentic madurai Jigarthanda recipe in my blog. This is my favourite drink and I will never miss this drink when ever I go to Madurai. Coming to the jigarthanda popsicle recipe, here I used vanilla extract in place of nannari syrup and I used condensed milk in place of ice cream. I have no idea whether this jigardhanda popsicle available in shops, this is my own creative recipe by following the jigarthanda recipe. The idea of making this popsicle was in my mind for long time, at last I tried it last week. Woo-ooh, it was so rich, creamy and yummy. Here in US, summer has started it’s getting hot so this madurai jil jil jigarthada kulfi helps me to cool the body instantly. I bet the kids will love this for sure. This will get sticky but dont panic. Knead of abour 3-4 minutes to make a dough. Cover and leave for 15 minutes. 03 Pre heat the oil in a karahi or wok on a gentle heat until the oil is heated through. It is vital that the oil is not too hot or they will not cook through. The oil should be at about 250ºC. You can test it by dropping in a little batter - if it rises to the top straight away it’s ready. 04 Roll the dough into smooth little balls with your hands. Ingredients They should be about 4cm in diameter and not have any cracks in them (you will probably get about 12-15 balls.) Molecular composition of recipes in a cuisine reveals patterns in food preferences. Indian cuisine encompasses a number of diverse sub-cuisines separated by geographies, climates and cultures. Its culinary system has a long history of health-centric dietary practices focused on disease prevention and promotion of health. We study food pairing in recipes of Indian cuisine to show that, in contrast to positive food pairing reported in some Western cuisines, Indian cuisine has a strong signature of negative food pairing; more the extent of flavor sharing between any two ingredients, lesser their co-occurrence. This feature is independent of recipe size and is not explained by ingredient category-based recipe constitution alone. Ingredient frequency emerged as the dominant factor specifying the characteristic flavor sharing pattern of the cuisine. Spices, individually and as a category, form the basis of ingredient composition in Indian cuisine. We also present a culinary evolution model which reproduces ingredient use distribution as well as negative food pairing of the cuisine. Our study provides a basis for designing novel signature recipes, healthy recipe alterations and recipe recommender systems.
