A mail merge glitch resulted in members receiving the passports at their given mailing address but with an incorrect addressee. We apologize for the confusion this has caused but assure all that we do have your accurate information in our database. We subsequently sent out a letter, after discovering the glitch, explaining the circumstance and requesting members to hold on to the passport and start using it at their next and every visit to the club. If you did not keep the passport, please let us know so that we may replace it. Two courses offered at $20.00, three courses offered at $25.00. 2 Executive Chef Kevin’s Recipe Corner Thai Curry and Prawn Bisque Ingredients Directions 3 Tbsps canola or grapeseed oil 1. Heat oil over medium heat in a soup pot. Add the ginger, garlic and shallots. 1 Tbsp minced ginger Cook until softened without browning. Add the shrimp and cook, stirring until the shrimp 1Tbsp minced garlic have turned red. Add the green curry paste and kaffir lime leaves and sauté briefly. Add the 1 Tbsp minced shallots whipping cream and simmer on low heat for approximately 20 minutes. Remove from heat, 1 lb. shell-on uncooked shrimp add the lime juice and salt. Let cool slightly. 1 tsp green curry paste 2 kaffir lime leaves 2. Cut the cilantro leaves from the stems and place in a blender pitcher. Add the soup and (substitute the zest of 2 limes) purée finely. (You may need to do this in 2 batches.)     Coq Au Vin from The New York Times ​ Ingredients: 3 pounds chicken legs and thighs 2 ½ teaspoons kosher salt, more as needed ½ teaspoon freshly ground black pepper, more to taste 3 cups hearty red wine, preferably from Burgundy 1 bay leaf 1 teaspoon chopped fresh thyme leaves 4 ounces lardons, pancetta or bacon, diced into 1/4-inch pieces (about 1 cup) 3 tablespoons extra-virgin olive oil, more as needed 1 large onion, diced 1 large carrot, peeled and diced 8 ounces white or brown mushrooms, halved if large, and sliced (about 4 cups) 2 garlic cloves, minced 1 teaspoon tomato paste 1 tablespoon all-purpose flour 2 tablespoons brandy 3 tablespoons unsalted butter 8 ounces peeled pearl onions (about 12 to 15 onions) Pinch sugar 2 slices white bread, cut into triangles, crusts removed ¼ cup chopped parsley, more for serving Preparation: Season chicken with 2 1/4 teaspoons salt and 1/2 teaspoon pepper. In a large bowl, combine chicken, wine, bay leaf and thyme. Cover and refrigerate for at least 2 hours or, even better, overnight. Man braucht dazu: Ca 6 Baked Potatoes ½ Buechse Maiskoerner 2 EL gebratene Speckwuerfel (ich habe die Gekauften genommen, die ich noch von den Baked Potato Toppings hatte) 3 Fruehlingszwiebeln, gehackt 1 handvoll Reibkaese 100 g Frischkaese Salz und Pfeffer Paprika Chili Die Kartoffeln halbieren und das Weiche der Kartoffeln bis auf 5 mm aus den Kartoffeln kratzen.     Coq Au Vin Recipe Coq Au Vin Recipe Coq au vin, or chicken in wine, is a lovely, comforting dish for fall. Once the initial prep work is completed, this dish is mostly hands off, left to gently simmer on the stove top. As with most braises and stews, this recipe is a guideline, easily adapted to your own taste. There are as many versions of coq au vin as there are people who’ve made it — follow the basic method and trust your instincts. Each ingredient is meant to increase the depth of flavor, so adjust the ingredients to your own palate. I’m not a fan of pearl onions, for instance, so I used a combination of leeks, shallots and onions. Feel free to use the more traditional pearl onion in your dish if that is your preference. Be mindful to use a wine that you would want to drink from a glass — it will be the underlying flavor of the dish.I like Côtes du Rhone or Pinot Noir. This is a great dish if you don’t like last minute fussing before company comes. Make it the day before and let the flavors mellow and improve. Gently reheat on the stove top before serving. Coq au vin is delicious with roasted potatoes or over egg noodles. Time: 1 1/2 hours Ingredients: 1/2 cup bacon, cut into 1/2 inch slices 3 – 4 pounds chicken (legs or a whole, separated chicken with bones) 1/4 cup Brandy or Cognac 1 cup diced onion (or peeled pearl onions or shallots, leeks or white onion) 4 garlic cloves, smashed 2 carrots, sliced into 1/2 inch pieces 1 cup fresh mushrooms, sliced (white button or cremini are nice) or 1/4 dried wild mushrooms (submerge in boiling water to rehydrate, after 15 minutes, drain and coarsely chop) 1 Tbs tomato paste 2 Tbs flour 1 bay leaf 1 tsp Herbes de Provence 1 1/2 cups red wine 1 cup, approximately, chicken stock (or vegetable stock or water) Kosher salt and pepper to taste Method: 1.
