Champagne

Dear String of Pearls,

The region of Champagne is in the far North of France where grapes struggle to ripen and maintain lots of tartness. The production of Champagne is the most complex and thought out winemaking in the world. There are huge producers and small farmers making a little wine, each with unique advantages to making quality bubbley. Like anywhere else, great Champagne starts with healthy grapes from a good vintage. And following, the winemaker will have to decide how long to age the wine on the dead yeast cells from fermentation (lees), which delivers its dough flavors and rounder texture.

Champagne producers also need to consider whether to age their vin clairs (base wines) in oak which imparts nuttiness and spice. The addition of a small amount of sweet wine liquor called the dosage has a balancing and mouthcoating on the wines if applied, especially if the wine is very tart. Sauvignon Blanc

Dear Savage Mother,

Known as the Savage Vine due to its high maintenance wild growth. It is the mother to both Cabernet Franc and Cabernet Sauvignon and shares a similar herbal bouquet of flavors. Sauvignon Blanc is one of the most diversely grown grapes around the world leading to a large range in styles. Flavors range from aggressively grassy to sweet and tropical. It can be zesty and light such as in cool climate examples or round and oaky from warmer .

My first experience with Sauvignon Blanc was from New Zealand which is the most pronounced expression of Gooseberry and Grapefruit aromatics. During my studies for wine exams we used to put actual fruit and grass in wine glasses to practice getting these aromatics right. I remember drinking much more subtle expressions such as cool vintage Vacheron from Sancerre where the limestone minerality and grassiness comes into the fore, and we really had to search for those subtle citrus and tropical aromatics.

Nonetheless, compared to other varietals, it is generally a highly aromatic grape by nature with notes of Grapefruit and Passionfruit. And It is a truly universally loved expressions of wine in the dining room, especially in the warm summer months. WHITE - SAUVIGON BLANC 14

Chardonnay

Dear Queen of the Land,

Chardonnay is from the village of its namesake in the Macconais in Southern Burgundy. It is the Queen to whites, as Cabernet Sauvignon is King to reds, as it makes consistently complex, rich, and ageable wines. It is a seamlessly, and most-honestly conveys the minerality of the lands and climatic influence similar to Riesling. Chardonnay is very well integrated with production techniques like oak barrel ageing, lees contact (Gives biscuit, doughy richness), and malo-lactic (Which adds creaminess and sometimes buttery qualities to the wine). These facts along are why it uis best suited for Champagne production which relies on mineral base wines and ageing methods to create each houses style. Furthermore, globally Chardonnay is one of the most widely diversified wines in terms of styles and terroirs and can be found in nearly all great wine producing areas (Champagne, Australia, North America, Chile), though only a few are truly great. Harvesting Chardonnay in Burgundy at Dujac was an experience that changed the way I think about wine. Minimalistic intervention between the fields and the cellar resulting in truly fantastic wines with a distinct limestone minerality, flinty-toastiness, and round honeyed melon flavors that balanced with the keen acidity backbone. When compared to a harvest of Chardonnay I did in Friuli, Italy at Ronco de Gnemiz where warmer climates and different clones resulted in more exotic yellow peach flavors, rounded texture, and baking spiced oak aromatics in the wine. Similarly unique. One of my favorite memories was nosing a wine glass full of oyster shells and some fresh cut grass and then comparing it to a Louis Michel Chablis. The ancient seabed soils comprised of fossilized oyster shells were actually coming back to life in the wine, which was a truly magical moment. There is no question why the Cistercian monks of Medieval France (Experts of the land) chose to plant Chardonnay in the best sites of Burgundy and beyond. WHITE - CHARDONNAY 16

Dear Disloyal Gaamez,

What once was an outlawed cultivar by the Dukes of Burgundy has now become the new infatuation of wine drinkers worldwide. Also, often reduced to the celebratory Beaujolais Nouveau which comes out the third week of every November, and is more a symbolic gesture of the season. The new school of Gamay (championed by Lapierre, Foillard, Goddard, Dm. de Fa, and more) is a seriously structured wine hailing from the acidic Granite soils of the Northern Beaujolais territory. There are 13 Cru’s all with a distinct style that relates to the aspect and altitude of the vines such as the deepest Moulin au Vent to the lightest Chiroubles. Acidic soils are necessary to soften this otherwise intensely tannic wine as well as a fermentation style known as ‘Semi-Carbonic Maceration’, which lends fruitier high tones of fruity lingonberry and sift coffee grip from the stems. The culture of winemakers in Beaujolais is ambitious and determined to make their mark in the world of haute quality wine. RED - GAMAY 26

Pinot Noir

Dear Red Chameleon,

Pinot Noir, deriving from Black Pine Cone, is an ancient varietal from Eastern France (Notable Burgundy and Champagne). The grapes genetic instability makes it prone to stylistic mutation leading to its numerous styles and levels of quality from various climates and soils around the globe (similar to Chardonnay). Its finest styles favor slightly cooler climates and limestone soils to achieve maximum aromatic qualities and freshness. It is a wide-spread favorite of many because of its ability to adapt and translate the vineyard land so clearly into its wine expression.

Its styles can range from the tart red cherry and mineral flavors to sun kissed blueberry and dark cherry often with nuances of root vegetables and black tea. Pinot Noir integrates well with oak as the baking spice character dances with the bright fruity nature of the grape like a baked cherry pie.

My experience with the magic of Pinot Noir was during harvest at Dujac which is in the town of Morey St. Denis, Burgundy. As grapes were coming into the winery, naturally we would taste the grapes. The grapes all tasted so different, even from within the same vineyard, some fruitier, some spicier, some lighter and more mineral, an endless array. Finally, it occurred to me, that explains the lengthy multi-layered flavors that are unique to Pinot Noir. RED - PINOT NOIR 28

Dear Sanguis Jovis,

The name also translates to ‘Blood of Jove’ and was born in Tuscany, Italy; Cultivated by the Etruscans. The parentage of the grape is Cilegiolo and Calabrese Montenuovo, which indicate Southern Italian roots in the bloodline. The grape thrives in the sunny Mediterranean climate particularly in Montalcino where it is known as Brunello. Also, in Chianti Classico where the seaborne soft friable Galestro soils provide an ideal habitat. In general, it is high tannin with equally high acidity and a rich flavorful body of dried cherry and balsamic stewed tomato. Often it is blended with other local indigenous grapes (ex. Canaiolo and Colorino) and sometimes with Bordeaux varietals, particularly in Chianti. Sangiovese grown in its natural habitat is always very herbal due to its proximity to the Mediterranean Sea because many natural herbs are grown there, such as Basil and Lavender. As such it is the perfect pairing with classic Central and Southern Italian tomato-based pasta dishes made with red wine, herbs, and topped with cheese. In most cases, its sturdy tannic nature also can stand up to any cut of red meat, particularly a Lamb Osso Bucco or Bistecca.

In modern times Sangiovese has traveled to other regions to become a successful Cultivar such as Mendoza, Corsica, and California. Nebbiolo

Dear Fog Hat,

Nebbiolo hails from the Piedmont region of Northern Italy and takes its name either from the thick fog around harvest or the foggy skin that forms at maturity. Unlike Tuscany, the climate up North is more Continental resulting in darker savory fruit flavors and spice. The warm Ligurian climate combines over Barolo with the cool downflow of the Alps to produce wines of balance and intensity. The best of which have high tones or Apricot and Root beer and always a foundation of tar and rose petal aromatics. The densely planted, hilly areas of Barolo and Barbaresco are quilted with vineyards, packed in by the limited space of the appellation. The Tanaro River and it’s runoffs are responsible for the variations in soil that characterize the different iterations of Nebbiolo (ex. Tortonian or Helvetian). Even further North in Lombardia where the grape is known as Chiavennasca, you find more alpine aromatics and brighter acidity. Many rumor that the grape finds its origins here instead of the highly lauded Barolo, just a couple of hours South. In the winery, careful production is required to moderate the otherwise intense tannic nature of this grape (such as warm fermentations) in order to create an elegant balance with supple tannins and fruit.

Syrah

Dear Majestic Periwinkle,

The birthplace of Syrah is South East France around the Rhone River Valley where granite slopes can exceed 45 degrees in steepness. The soils are extremely poor and produce small quantities of top tier grapes, resulting in tremendous value wines. Not only are their a wide range of styles in this area but it is perhaps one of the most diverse grapes around the globe in style and flavor. Various climates and soils around the world create styles ranging from moderate body fresh blueberry with lavender and pepper to full brooding chocolate eucalyptus and game meat flavors. I think the resulting wines are some of the most fun to pair with food, such as with peppery and fruity reduction sauces over beef for example. Syrah has the propensity to age and gain in gamey complexity with the best of them, such as from the famous hill of Hermitage, or the legendary Penfold’s Grange of South Australia. Tuscany, Chile and theWest Coast of the United States are also producing world class Syrah.

Grenache

Dear Strawberry Fields Forever,

Originally from Aragón in North East Spain, Grenache spread across coastal/Island Mediterranean anywhere there was warm sunny climate. The Grenache vine is known to be able to sustain intense heat especially as older vines (100 years +) which have adapted over time. The resulting flavors ranges from wild strawberry, laced with coastal herbal scrub like thyme and lavender to deep brooding maraschino cherry flavor with notes of pepper and game. Grenache is often found as a blending partner to Mourvedre, Cinsault, and Syrah in Southern France. Globally it has found homes in South Australia and California where premium expressions are being produced.

In my experience, wines made by Grenache, regardless of location, have the fruitiness and generosity of flavor to please those who gravitate towards California Pinot Noir. Perhaps the most famous versions, Chateauneuf du Pape and Priorat, also have very intriguing lore about the history of their production… ask your waiter!

Merlot

Dear Blackbird,

Merlot (From French word merle meaning Blackbird) is the rounder, juicier sibling to Cabernet, which has more notes of red currant and chocolate, and can reach quality levels as high as any Cabernet. Merlot hails from the Right Bank, which is the area of Bordeaux North of the Dordogne River around the communes of St. Estephe and Pomerol where more clay is pres- ent. The clay is better because it keeps the roots of the vigorous Merlot vine cool and slows down ripening. Merlot is often blended with Cabernet because it compliments the sturdy tannic Caber- net by softening the edges and adding a luscious, silky aspect to the wines. It has been an underrated wine since the Sideways era, and most certainly holds its own as a premium quality stand-alone varietal. Merlot found in moderate to warm climates around the globe tends to be the best examples outside of France and at the highest quality are supremely velvety and plummy with finely integrate oak spice and tannin.

Cabernet Franc

Dear Court Jester,

Though a Native to South West France (Basque Country), it gained recognition in as a Spicy blending partner to Cabernet and Merlot in Bordeaux, and found its claim to fame on the Loire Valley of Northern France. Cabernet Franc is the Court Jester because it plays second Fiddle in the blend and adds complex red bell pepper and graphite flavors.

On its own in areas such as Saumur and Chinon of the Loire Valley, it is medium bodied and ranges from tart bright strawberry to darker boysenberry and has ferrous spicy notes mentioned before. RED - CABERNET FRANC 42

Cabernet Sauvignon

Dear King of the Left Bank,

Known for dominating a maritime gravel heavy area called the Medoc on left bank of the Girondee Estuary in Bordeaux. It flourished and dominated the blends of the area with its counterparts (Merlot, Cabernet Franc, Carmenere, and ) long before gaining popularity around the world. The fruit is always a range of dark cassis to red currant with secondaries ranging from herbal mint to green bell pepper and tobacco.

Cabernet Sauvignon marries extremely well with oak ageing aromatics like cedar and vanilla, and is one of the most resilient red wines for aging. Further ageing brings notes of leather and mushroom that bring welcomed complexity in most cases. The best quality examples are from warmer areas with cool nights such as Napa and Stellenbosch, but too much heat can result in flabby wines. Generally, the propensity for high quality wines from Cabernet Sauvignon is greater because of the depth and length and flavors the grape provides deep complexity. This along with the sturdy tannins and nature of the grape allow for structure that will stand the test of time. That being said all of this varies greatly from producer to producer and country to country. My experience with working with Cabernet Sauvignon was with the late Denis Malbec (Former winemaker of Chateau Latour), who I assisted during the 2010 harvest. He always said that the best quality Cabernet came from the vines that struggled the most on hillside vineyards. He said it forced them to making better fruit so the birds would come eat them and spread the seeds.

Malbec

Some high elevation vines from Argentina (Up to 4000 feet) produce plump violet laced wines with ample body and fresh acidity. It is a wonderful full-bodied selection with plump texture and soft tannins that can be found as a blend. It is less commonly found as a blender from Bordeaux and shares parentage with Merlot. It finds its French origins near the commune of Cahors, South East of Bordeaux, where it is called Cot and is more medium bodied.

Zinfandel

Zinfandel cites its origins in Croatia where it was originally called Tribidrag (As early as 1518) or more recently Crljenak Kaštelanski. The vine migrated to Puglia (The heal of the Staletto) where it is called Primitivo. It wasn’t until 1832 where it was discovered in a Boston vine nursery and given the name Zinfandel. The grape finds its new home in California where is produces an array of styles and flavors ranging from full bodied, sun jammed peach with soft tannins to spicy dark bramble berry with more sturdy structure.
