That’s how two coffee authorities from two coffee capitals describe the silky coating left on the taste buds by the fi rst deposit of espresso crema. Espresso, Ital- ian for “express,” can be explained as “fast coffee.” The word is also associated with espressamenta, meaning “expressly” (as in a coffee “expressly for you”).
