Sixteen percent of this (1.46 billion kilograms) was consumed in the U.S. alone. For environmentally conscious coffee consumers in the global north, their “daily grind” may feel like an uncomfortable compromise: coffee is only grown in tropical and equatorial areas. It must be shipped long distances. To complicate things further, the coffee value chain is incredibly diverse. Companies of all types and sizes operating across the globe may all contribute to a single cup of coffee. Life cycle assessment (LCA) is one way in which we can measure some of the environmental impacts associated with coffee consumption and its complex value chain (shown above). Beginning with farm production and processing to distribution, roasting, packaging, brewing, and disposing the coffee and packaging waste, considering the environmental impacts associated with each stage of the coffee bean life cycle can help empower coffee drinkers and coffee purveyors to make environmentally sound choices. This project also explores the evolution of coffee culture in the United States and how coffee has become both gourmet and a cultural commodity in the present-day, primarily considering the growth of Starbucks. Extensive research was done on coffeehouses in London spanning three centuries (from the mid-1500s onward). Research in Eugene was completed via participant observation, where I went to several local cafes and spent hours observing how people interacted within them. The outcome of this research shows that people make an effort to privatize space while they are in public, communal areas. With the backdrop of historic London’s coffeehouses, I compare the two environments and have found gaping differences in the function of cafes. This body of work has value because coffeehouses are a dominant “third space” in the world today, and how we use them and interact within them is an important facet of our cultural environment.

Numerous coffee brewing methods have been developed to make a cup of coffee. In industry, coffee flavor and aroma is determined by using a method called cupping, but in order to quantitate flavor and aroma in coffee, descriptive sensory is a better option. This study identified how brew methods influence coffee aroma and flavor. Four different roast level Folgers® commercial coffee (Breakfast blend, Classic roast, 100% Colombia and Black silk) were brewed by four brewing methods (pour over, drip, French press, and cold brew) and were tested using a trained descriptive panel using the World Coffee Research (WCR) coffee lexicon. Twenty-five main aroma attributes and thirty-five main flavor and texture attributes of coffee were used. Cold brew method produced the mildest coffee among the four brew methods while drip produced a much stronger coffee. The sensory aroma and flavor differences between different coffee types were not as great as differences between brew methods. From chemical tests, Brix percentage and TDS (Total Dissolved Solids) differed across coffee types and brew methods.
