  • Fairview La Beryl, a Traditional Handcrafted Straw Wine, Personifies the Quintessence of Grape
    2006 Fairview La Beryl, a traditional handcrafted straw wine, personifies the quintessence of grape. The grapes were carefully hand harvested into small baskets and transferred to an old barn where they were delicately laid out on beds of straw to desiccate. Eventually the bunches lost about 75% of their volume, intensifying flavour and sweetness. The grapes were gently pressed and the juice fermented in French oak barrels. La Beryl is fragrant, succulent and crisp, a sumptuous dessert wine of balance and finesse. I am proud to honour my late mother with this wine. Harvest Date: February 2005 Oenological Treatment: Chenin Blanc and Semillon were harvested at 22 balling. The harvesting was done extremely carefully so not to damage any fruit. Picked into small lug boxes, and transported to a well ventilated shed to where they were carefully laid out on racks lined with straw to dry. It takes about 4 weeks for the grapes to dry out to a raisiny state. They are then pressed and allowed to ferment naturally. The fermentation can last up to 4 - 6 months, in old French Oak barrels. Winemakers Tasting Notes: This is a very special wine with enormous poise and concentration. The blend is approximately 50% Chenin Blanc and 50% Semillon. The wine has an abnormally high volatile acidity of 1.16 g/l. For a normal dry white or red wine this would be totally unacceptable, but a higher level is necessary in a straw wine, and adds another level of complexity. Colour: Warm golden straw. Aroma: Ripe creamy peach and apricot aromas.

    Fact Sheet Wine: 2008 Straw Wine (Chenin blanc) Bottling Date: 22nd January 2009 Production: 3 000 bottles / 250 cases (375ml) Wine of Origin: Swartland Technical Details at Bottling: Alcohol Residual sugar Total acidity Volatile acidity Total SO2 Free SO2 pH 10,5% 289 g/l 10,0 g/l 1,26 61 24 3,48 Source of Grapes: Grapes for our 2008 Straw Wine come from a single parcel of 28 year-old Chenin blanc planted in the stony Shale and Schist based soils of Riebeek Kasteel Mountain. This is the parcel of Chenin that gives us the best acidity at harvest. We lease the parcel on a long term basis, and have close and direct involvement in its complete viticultural management. Date(s) Harvested: Grapes were harvested on the 2nd February 2008 Yields: Harvested: 6 tons/ha = 33 HL/ha. Final yields after drying: 100L/ton = 6HL/ha Winemaking: Grapes are harvested at normal ripeness level of 23° Brix. They are left to dry outdoors in the shade for roughly 3 weeks. This process allows moisture to evaporate from the berries, concentrating sugars, acids and flavor. When the grapes have shriveled half way to becoming raisins and the sugar has increased to about 48° Brix, they are brought to the cellar where they are crushed and pressed (for 36 hours) whole bunch, and racked straight to old 225L barrels. A small amount of sulphur (30ppm) is added to inhibit bacteria, and fermentation is allowed to proceed naturally, without any additions. Fermentation takes roughly 6 months, and ends naturally. To build complexity, the barrels are not topped, and the wine is bottled unfiltered and unfined.

  • Straw Wine 2018
    STRAW WINE 2018 INTRODUCTION This wine has been made using a centuries-old process of drying grapes on straw in order to produce dessert style wines. Grapes are harvested at the same ripeness required to make table wine and are then laid out on straw for a number of weeks. This allows the grapes to slowly dehydrate, concentrating their natural sugar, acid and flavour. The straw also acts as a wick for any excess moisture, ensuring the grapes do not rot. After gently pressing the dehydrated grapes the concentrated juice is slowly fermented in stainless steel tanks to create a balanced luscious dessert wine. VINTAGE This vintage was impacted by the fourth year of the ongoing drought in the region. The 2017 Winter was cold and dry, followed by a dry Spring and Summer, with bouts of unusual weather. A number of thunder storms resulted in a late onset of additional vigour in the vineyards. Unsettled weather and wind during flowering, along with a freak hail storm and low levels of soil moisture decreased yields by 20% to 50%. The harvest began closer to its average start date and the smaller berries and bunches yielded lower juice volumes per ton. The lower yields resulted in the wines showing excellent concentration and body, producing rich, robust reds and fruit forward, expressive whites and rosé.     chapter 15 Sunshine Wine on the Nile Nicole Hansen Introduction In his 1982 work Weinstudien: Untersuchungen zu Anbau, Produktion und Kon- sum des Weins im arabisch-islamischen Mittelalter, Peter Heine devoted a chap- ter to wine production methods. While he collected valuable evidence, he treated wine production across Arabic-speaking countries as undifferentiated, giving short shrift to regional variations. He also relied solely on lexical texts and poetry to reconstruct the methods of wine production.1 This approach is not surprising, for the study of the early Islamic period in Egypt has been traditionally based on non-documentary textual evidence. However, such texts alone only give us a small part of a bigger picture. Archae- ology is the study of the traces left behind by human activity. While not neces- sarily as deliberate an act of leaving a record as writing a text, these traces are important for our understanding of history. Equally important for supplement- ing our knowledge is art, a non-verbal alternative to textual documentation, but similar to textual sources in that it is a product of the human hand and a human desire to record information for future consultation. Finally, ethnographic evi- dence, or in the case of this article, the observations of early European travelers to Egypt, is invaluable. Five years after Heine’s work appeared, an early Arabic cookbook was pub- lished, which forms the focus of this article: the Kitāb al-Ṭabīkh of Abū Muḥam- mad al-Muẓaffar ibn Naṣr ibn Sayyār al-Warrāq. It was probably compiled in the second half of the tenth century ce in Baghdad.
