Fairview La Beryl, a traditional handcrafted straw , personifies the quintessence of . The were carefully hand harvested into small baskets and transferred to an old barn where they were delicately laid out on beds of straw to desiccate. Eventually the bunches lost about 75% of their volume, intensifying flavour and sweetness. The grapes were gently pressed and the juice fermented in French barrels. La Beryl is fragrant, succulent and crisp, a sumptuous wine of balance and finesse. I am proud to honour my late mother with this wine.

Harvest Date: February 2005

Oenological Treatment: and Semillon were harvested at 22 balling. The harvesting was done extremely carefully so not to damage any fruit. Picked into small lug boxes, and transported to a well ventilated shed to where they were carefully laid out on racks lined with straw to dry. It takes about 4 weeks for the grapes to dry out to a raisiny state.

They are then pressed and allowed to ferment naturally. The fermentation can last up to 4 - 6 months, in old French Oak barrels.

Winemakers Tasting Notes: This is a very special wine with enormous poise and concentration. The blend is approximately 50% Chenin Blanc and 50% Semillon. The wine has an abnormally high volatile acidity of 1.16 g/l. For a normal dry white or this would be totally unacceptable, but a higher level is necessary in a , and adds another level of complexity.

Colour: Warm golden straw. Aroma: Ripe creamy peach and apricot aromas. Vanilla humbugs (a traditional English candy) with subtle white flower and wild honey hints. Palate: Good balance and a full mouthfeel. Long finish, with intense ripe stone fruit flavours. Cellaring: The wine drinks well right now and will age for many years.
