Har Gow Shrimp Dumplings Xiā Jiaˇo Makes 32 dumplings, serving 6 to 8 as a snack Well known by their Cantonese name har gow, these delightful pinkish-white morsels are among the most popular offerings at dim sum houses. They go fast, and I’ve chased down my fair share of dim sum ladies to get a fresh order. When I started making my own and realized that they can be kept refrigerated and frozen, my fear of har gow scar- city diminished. These are difficult to prepare only if you aim to produce exemplary diminutive ones, which most dim sum places don’t. Start out with ones that are a little bigger and scale down as you gain dexterity. You can even make these dumplings as half-moons, and they’ll taste swell. Use the best shrimp possible, and immerse the canned bamboo shoots in boiling water to rid it of its tinny flavor before chopping. To make the pork fat easier to mince, blanch it in boiling water for 1 minute, or until firm. Obtain the fat from fatback (I go to a Latino butcher counter) or cut it off a pork chop. Fatty bacon works well, too. Filling the shrimp into a bowl and add the pork 2/3 pound medium shrimp, peeled and deveined fat, bamboo shoots, and scallion. Stir with (9 ounces net weight) chopsticks or a fork to evenly distribute the 3 /4 teaspoon salt ingredients. 11/2 tablespoons minced pork fat or fatty bacon 3 tablespoons finely chopped bamboo shoots 2. in a small bowl, combine the remaining 2 teaspoons minced scallion (white part only) 1/2 teaspoon salt, the cornstarch, sugar, white 1 1 /2 teaspoons cornstarch pepper, rice wine, and sesame oil, stirring to 3 /4 teaspoon sugar dissolve the cornstarch. -

asie de l’est • CHINE • La culture alimentaire chinoise correspond à un amalgame d’habitudes alimentaires, variant selon les différentes régions de la Chine. En effet, le nord de la Chine a subi une grande influence de la Mongolie pour la méthode de cuisson dans un bouillon (ex. : fondue chinoise). De plus, une grande variété de produits céréaliers y est consommée, car le blé est assez répandu dans cette région. Pour ce qui est du sud de la Chine, l’aliment de base est le riz à grains longs. Les habitudes gastronomiques sont liées à la cuisine cantonaise qui est réputée pour sa diversité d’ingrédients, ses méthodes de préparations ainsi que pour la fraîcheur de ses plats. L’est de la Chine consomme surtout le riz glutineux ainsi que beaucoup de poissons et de fruits de mer. L’ouest de la Chine utilise beaucoup d’épices dans la préparation des recettes (ex. : poivre de piment et poivre de Sichuan) et les produits de blé sont souvent préférés. Malgré quelques différences et particularités entre les régions de la Chine, il est possible de faire ressortir des caractéristiques communes des repas. En effet, la méthode de cuisson à la vapeur est assez fréquente pour préparer les aliments. Le riz est aussi souvent présent aux repas et il est accompagné de légumes ainsi que de viande, de poisson ou de tofu. Un bouillon accompagne généralement les repas. Dans cette culture, on croit que le choix des aliments doit se faire en respectant un équilibre de froid (yin) et de chaud (yang) dans le corps. -
