It is particularly the mantle, the arms, the ink, and part of the intestines such as the liver that have been used. In addition to being consumed in the fresh and raw states, the various world cuisines have prepared cephalopods by a wide range of culinary techniques, such as boiling and steaming, frying, grilling, marinating, smoking, drying, and fermenting. Cephalopods are generally good nutritional sources of proteins, minerals, omega-3 fatty acids, as well as micronutrients, and their fat content is low. This year we will be starting off the evening by letting our taste buds teach us about sake. We will play a Sake Matching Game. Participants will try to match 10 different sakes. Prizes of Ishishima Sake will be handed out to the 1st , 2 nd , and 3 rd place winners. Following the matching game, Michael Simkin will discuss the sake making process and the “Quality Categories” of sake. He will also talk about “sake kasu” (酒粕), which is the lees (dead yeast) leftover from sake production. It can be used as a pickling agent, the main ingredient of amazake, a cooking paste to add flavor to food and as a marinade and is used in many other foods. The program will finish by enjoying the sakes we tasted and eating delicious Tako Grill Japanese foods. Michael John Simkin is one of the world’s preeminent sake experts. Mr. Simkin developed his love for Japanese culture, studying the Japanese language and pursuing a degree in East Asian Cultural Studies at Cornell University. It was this marriage of Japanese culture and restaurant experience that would later blend harmoniously to form his current role as a sake expert.
