The Echoes of Yesterday's Memories nada lama is a space which evokes the memories of the past - from the beautiful tiles on the floor, to the gracious strains of music wafting through the space, to the tantalising scents of our family recipes brought to the present day. nada lama celebrates the heritage of Penang in a distinctly modern space. We recognise that food has the ability to recall the remembrance of past joys - and a good meal is able to create new stories and journeys. Ingredients are sourced locally where possible; and most of the herbs and spices employed in the dishes are not only grown in our very own garden but also lovingly cared for and nurtured by our team of chefs. Herbs and spice are a norm in every culinary dishes as they uplift the cuisine and delight the taste buds of diners at Hotel Equatorial Penang. Cultivated with tender and love by one of our personal Chef Looi Soon Lee, the organic herbs and spice garden produces a variety of plants ranging from basil, thyme, rosemary, oregano, and many other plants used for dressing and garnishing in the restaurants. Having an in-house herbs and spice garden also ensures that the dishes we serve you are fresh not only from the main ingredient but all the way to the tiny details such as garnishing of your cuisine. We take pride in keeping up to your expectation, serving you the best flavours while providing the exquisite dining experience. Our organic herbs and spice garden is open to public from 8:00 a.m to 7:00 p.m daily, take the advantage to explore our organic herbs and spice garden and be amazed by the variety of other plants when you have the time. Chef Looi will even be delighted to bring you on a small garden tour between 3:00pm to 4:00pm.
