Don’t try to rush the sauce; it really needs to thicken slowly. Total time: 1 hr Yield: 4 Servings Ingredients 1 1/2 lb chicken tenderloin (substitute skinless chicken breast) 6 8" skewers fresh cilantro (for garnish) 2 Tbsp fish sauce 3 Tbsp light brown sugar 1 1/2 tsp Madras curry powder (or use what's in you pantry) 2 tsp garlic (minced) 1 pinch ground cumin 1 pinch salt 2 cup coconut milk 1 tsp green curry paste 1 tsp paprika 2 Tbsp creamy peanut butter 4 lime kafir leaves (substitute zest from one lime) 1/4 cup chopped roasted peanuts (unsalted, found in your Asian aisle as blanched peanuts) Prep Time: 1 hr Total Time: 1 hr Instructions Make the marinade ahead. Combine all marinade ingredients (1 teaspoon fish sauce,1 teaspoon light brown sugar, curry powder, 2 cloves minced garlic, ground cumin, salt, 3 tablespoons coconut milk) and let it sit for at least an hour. You can also soak your skewers at this time. Combine all the sauce ingredients (green curry paste, paprika, 2 teaspoons minced garlic, 2 tablespoons fish sauce, peanut butter, 3 tablespoons light brown sugar, 2 cups coconut milk, lime kafir leaves, chopped peanuts) in a medium pan and simmer gently until it reduces and becomes thick. Reserve ¼ cup of the sauce for brushing on the chicken during the cooking process. The chicken tenderloins need to be cut to half their original thickness. -

Aishwarya Bachelor of Dental Surgery, Saveetha Dental College and Hospitals Abstract: Boesenbergia rotunda (L.) (Fingerroot), formerly known as Boesenbergia or Kaempferiapandurata (Roxb). Schltr. (Zingiberaceae), is distributed in south-east Asian countries, such as Indonesia, Malaysia and Thailand. The rhizomes of this plant have been used for the treatment of peptic ulcer, as well as colic, oral diseases, urinary disorders, dysentery and inflammation. As people have started to focus more on natural plants species for their curative properties. B. rotunda is a native ingredient in many Asian countries and is used as a condiment in food. It is also used as traditional medicine to treat several illnesses, consumed as traditional tonic especially after childbirth, beauty aid for teenage girls, and as a leukorrhea preventive remedy for women. Its fresh rhizomes are also used to treat inflammatory diseases, in addition to being used as an antifungal, antiparasitic, and aphrodisiac among Thai folks. Moreover, AIDS patients self-medicate themselves with B. rotunda to cure the infection. With the advancement in technology, the ethnomedicinal usages of herbal plants can be explained through in vitro and in vivo studies to prove the activities of the plant extracts. The current state of research on B. rotunda clearly shows that the isolated bioactive compounds have high potential in treating many diseases. Authentic Thai Food for the World Green Curry It is good to eat with anything. Let us guess which Thai menu is this. In the past, it was popular to eat with hot rice. Then, it started to be eaten with rice flour noodles. Nowadays, it is popular to eat with roti. Normally, its taste is mild, not too spicy and not too plain, mixed with coconut milk for the grease and using green curry paste. After hearing all this, nearly one hundred percent must answer correctly that the menu being described now is green curry, one of the curries with a long history with the most unique flavor of Thai menus. The background of green curry must turn to the past. Originally, the curry in Thai style was clear curry, like Kaeng Liang or Kaeng Pa. In other words, in the past, Thai people did not eat curry with coconut milk. They only ate clear curry with other ingredients and finely pounded chili. Then, coconut milk was used as an ingredient in food and this was the complete birth of the curry spices. “Kaeng Daeng” or “Kaeng Phet” came from the coconut milk spices with red chili. This spice was later adapted from the red chili to the green chili. That was the origin of the name Kaeng Khiao Wan. It did not come from the sweet taste like everybody understands, but from the color of the curry. When you put the green curry spices into floating undiluted coconut milk, vegetables, and meat, the curry will become a light green color. -

The name refl ects the pungent taste, which resembles a peppery compound of cloves, cinnamon and nutmeg or mace. Good with eggplant, most fruit, pumpkins and other squashes, sweet potatoes and other root vegetables. Combines well with chili, cloves, coriander, garlic, ginger, mace, mustard, pepper, rosemary and thyme. AAnisenise The aroma and taste of the seeds are sweet, licorice like, warm, and fruity, but Indian anise can have the same fragrant, sweet, licorice notes, with mild peppery undertones. The seeds are more subtly fl avored than fennel or star anise. Good with apples, chestnuts, fi gs, fi sh and seafood, nuts, pumpkin and root vegetables. Combines well with allspice, cardamom, cinnamon, cloves, cumin, fennel, garlic, nutmeg, pepper and star anise. BBasilasil Sweet basil has a complex sweet, spicy aroma with notes of clove and anise. The fl avor is warming, peppery and clove-like with underlying mint and anise tones. Essential to pesto and pistou. Good with corn, cream cheese, eggplant, eggs, lemon, mozzarella, cheese, olives, pasta, peas, pizza, potatoes, rice, tomatoes, white beans and zucchini. Combines well with capers, chives, cilantro, garlic, marjoram, oregano, mint, parsley, rosemary and thyme. BBayay LLeafeaf Bay has a sweet, balsamic aroma with notes of nutmeg and camphor and a cooling astringency. Fresh leaves are slightly bitter, but the bitterness fades if you keep them for a day or two. Fully dried leaves have a potent fl avor and are best when dried only recently. Good with beef, chestnuts, chicken, citrus fruits, fi sh, game, lamb, lentils, rice, tomatoes, white beans.
