  • Spring-Summer Menu KASHMIR VALLEY & WAAZWAAN
Spring-Summer Menu KASHMIR VALLEY & WAAZWAAN “Gar Firdaus bar-rue zamin ast, hami asto, hamin asto, hamin ast.” “If there is heaven on earth, it is here, it is here, it is here’’ A famous quote by Mughal Emperor Jehangir when he visited Kashmir in the 17th Century By the Grace of India and Lavendra family, we bring you a new restaurant, experience and menu inspired by WaazWaan – the legendary 36-course banquet feast embodying Kashmiri’s proud history, tradition and heritage. The history of the banquet feast began in 14th century India. During the reign of Nasiuddin Muhammad of Tughlaq dynasty came the invasion of the Mongol ruler Timur. From Samarkand, Timur brought excellent cooks to the valleys and mountains of Kashmir. These skilled cooks were named Wazas. From twilight to dusk, the Waza’s cooked meat and gravy into different styles of dishes in preparation for a 36-course feast. The Sanskrit and Persian immigrants later coined this feast WaazWaan. We are excited to bring rare hidden gems of the Kashmiri delicacy to the forefront of Sydney’s North Shores. Here at WaazWaan, we will experience the depth of India’s traditional craftsmanship of culinary excellence. • The Bombay Parsi Cafe
DINE IN- DELIVERY- TAKE AWAY The Bombay Parsi Cafe BAWA CERTIFIED GOOD FOOD - GOOD INGREDIENTS NO FOOD COLOR - NO PALM OIL - NO ARTIFICIAL THICKENERS The quintessential café culture was pioneered in the 60’s by the Irani cafés in Bombay, passionately run by Parsis. They mushroomed all over the place by the hundreds, however, sadly you would find only a handful of them around today, endangered in existence, just like us Parsis. The bent wood chairs, marble tables, walls clad with vintage Parsi frames and the very strict and bizarre café rules to follow. They made hordes of fans, from the rich and famous, the filmy glamour to the common Bombay man. The simplicity of a morning chai with bun maska to their eclectic gourmet fare appealed to every Bombaiya’s palate. Cafe Funkie Town is an ode, a tribute to the cafés of that old Bombay era. Once upon a time the talk of the town, and today a fading memory for most of us. I invite you to join me on a delectable gourmet experience, reliving the good old days and seeing Bombay cuisine with me, just my way. Come, let’s celebrate the Bombay I knew, again. Cheers, Firoz Burjor Mithaiwala Recipes perfected since 1930 by Perin and Shirin Mithaiwalla. ALL DAY BREAKFAST Ain't no party like a breakfast party !!! • History India’S Story Is One of the Grand Epics of World History
© Lonely Planet Publications 39 History India’s story is one of the grand epics of world history. Throughout thousands of years of great civilisations, invasions, the birth of religions and countless cataclysms, India has time and again proved itself to be, in the words of its first prime minister, Jawaharlal Nehru, ‘a bundle of contradictions held together by strong but invisible threads’. Indian history has always been a work-in-progress, a constant process of reinvention and accumulation that can prove elusive for those seeking to grasp its essential essence. And yet, from its myriad upheavals, a vibrant, diverse and thoroughly modern nation has emerged, as enduring as it is dynamic and increasingly well equipped to meet the challenges of the future. INDUS VALLEY CIVILISATION The Indus Valley, straddling the modern India–Pakistan border, is the cradle of civilisation on the Indian subcontinent. The first inhabitants of this land Harappa (www.harappa were nomadic tribes who cultivated land and kept domestic animals; indeed, .com) provides an it is no leap of the imagination to wonder whether in some parts of rural illustrated yet scholarly India, little has changed.
