They all come in different shapes, sizes, and colors! They can be white, yellow, and even purple--talk about colorful mashed potatoes! This also means there are so many different potato dishes out there that aren’t french fries or mashed potatoes. Match the potato dish with its description, and maybe try them out sometime! 1. A SWEET SUCCESS Did you know that roasting vegetables will make them taste sweeter? This is because dry heat cooking will release the natural sugars within the vegetables and caramelize them. This gives vegetables their sweet, toasty flavor. Caramelization will not only make the vegetables taste good, but also smell delicious because during the last stages of caramelization, hundreds of aromatic compounds will form. For most kinds of sugar, caramelization will occur at 320⁰F. Root vegetables, squash, and tubers are best for roasting. These include cauliflower, broccoli, Brussel sprouts, and potatoes.
