Bab I Pendahuluan
BAB I PENDAHULUAN 1.1 Gambaran Umum Objek Penelitian 1.1.1 Sejarah Mie Aceh Cirasa Bengkalis Provinsi Riau Dilatarbelakangi oleh seorang ibu Reni Susanti yang berasal dari Minang yang bertempat tinggal di Pekanbaru. Beberapa tahun kemudian, ibu Reni Susanti menikah dengan bapak Razali yang berasal dari Aceh. Setelah menikah mereka pindah ke Bengkalis, yang pada saat itu pekerjaan bapak Rajali hanya bekerja sebagai pengangkut pasir menggunakan gerobak sehingga mereka memiliki ekonomi yang sangat rendah. Setelah mempunyai dua orang anak akhirnya pada tahun 2006 bapak Razali mempunyai niat dan keinginan untuk membuka usaha Mie Aceh di Bengkalis. Dimana, usaha Mie Aceh tersebut beroperasi di pasar kaki lima. Setahun setelah itu, pesanan konsumen terhadap Mie Aceh meningkat dari hari ke hari sehingga bapak Razali kekurangan tenaga kerja untuk melayani konsumen, oleh karena itu bapak Razali mendatangkan tiga orang pegawainya dari Aceh. Perkembangan Mie Aceh selama tiga tahun operasional cukup baik maka atas dasar itu ibu Reni Susanti kemudian membuka usahanya di Ruko Ahmad Yani Bengkalis dengan mendatangkan lagi pegawai dari Aceh sebanyak lima orang. Dan ibu Reni pun memberi nama usaha tersebut dengan “Mie Aceh Cirasa”. Pada awalnya mie yang digunakan oleh bapak Razali merupakan mie basah yang di pesan kepada pihak lain. Bapak Razali pun mencoba untuk membuat mie basah sendiri dan mendapatkan respon yang baik dari konsumen. Mie basah yang awalnya hanya di buat untuk mie Aceh kemudian dibuat untuk pesanan konsumen dan juga diletakkan ke warung-warung terdekat. Pesanan terhadap mie basah pun juga semakin meningkat, bapak Razali pun menambahkan lima orang pegawai untuk diletakkan di bagian pembuatan mie basah tersebut. -
1. Kuliner Ikonik Dari Provinsi Aceh
Dalam pengembangan pariwisata suatu daerah atau Provinsi dari seluruh Indonesia biasanya terdapat juga Kuliner yang menjadi ikon dan khas dari daerah tersebut. Kuliner ikonik ini contohnya Mie Aceh dari Provinsi Aceh, Rendang dari Sumbar ada juga Ayam Taliwang dari Lombok NTB nah artikel ini akan mengupas lebih dalam terkait ragam kuliner Ikonik yang menyebar di seluruh Nusantara. 1. Kuliner Ikonik dari Provinsi Aceh Terkenal dengan Syariat Islam kota Banda aceh menyimpan ragam kuliner yang siap menyambut para wisatawan yang datang ke kota ini. Salah satu yang paling ikonik ialah Mie Aceh, versi lain dari mi aceh ini ada mie racing namun miimin sendiri belum pernah mencicipi mi racing ini, so kita akan membahas mi aceh biasa aja yang mudah di temui di Banda Aceh. 1.a Mie Aceh dan Timun Serut kelezatan mi aceh kering dan basah (img custom via google img) Varian dari mie aceh terdiri dari mi aceh basah dan kering, sementara varian campuran terdiri dari, kepiting, daging sapi, udang dan telur ayam. Biasanya konsumen akan memesan sesuai selera, untuk anda yang kolestrol tinggi mungkin jangan varian kepiting yang standar biasa aja. Tidak lupa pelengkap minuman yang khas dari pasangan miaceh yaitu timun serut. Jika anda mengininkan makanan berat ada ayam sampah atau ayam tangkap, yang dicampur dengan dedaunan khas Banda Aceh. 1.b Kopi Sanger (Bean Gayo) Kenikmatan kopi sanger espresso banda aceh (img via kampretnews) Jenis kopi sanger ini terdiri dari Hot dan Ice, dengan campuran susu kenikmatan kopi sanger aceh ini sangat pas. Bean yang digunakan dalam racikan kopi ialah Gayo yang di mix antara robusta dan arabika dengan roasting standar barista aceh. -

Nurul Faudhiah, M.Pd5 Program Studi Pendidikan Kesejahteraan Keluarga Tata Boga FKIP UNSYIAH [email protected] Abstract: Noodle is one of favorite food for people in Aceh. It can be obtained at almost all of shops there. Consuming noodle is at the second place right after consuming rice. The objective of this research was to figure out the standard recipe of instant noodle with Aceh curry, its organoleptic properties, and the consumer acceptance. Experimental method was used in this research. The experiment was conducted at Culinary Arts Laboratory of Faculty of Teacher Training and Education of Syiah Kuala University in Darussalam, Banda Aceh. The instan noodle with Aceh curry was rated based on its organoleptic properties (sight, smell, touch, and taste) by five panel members by considering sensory evaluation and preference test of 100 consumers. Least Significant Difference (LSD) test with significance level of 0.05 and a Completely Randomized Design (CRD) with three treatments and three repetitions were used in the process of data collection and analysis. The results indicated that according to the panel members, the instant noodle with Aceh curry that had the best sight, touch, and taste was the noodle on treatment Tc while the one on treatment Tb had best smell. However, the consumers prefer the noodle on treatment Ta for its sight, smell, touch, and taste. -
