It is specified that, since all ‘Castelmagno’ is produced at more than 600 m above sea level, the labels may include the wording ‘prodotto della montagna’ (mountain product).

Identification of a mark of conformity, known as the ‘sventolina’ (little fan), which, prior to marketing, is placed on the same face of the cheese as that occupied by the origin mark. 4.1. Name: ‘Castelmagno’

4.2. Description: Raw cow’s milk cheese possibly with added sheep’s and/or goat’s milk from a minimum of 5 % to a maximum of 20 %. The cattle used must belong to the following breeds: Barà Pustertaler, Bruna, Pezzata Rossa d’Oropa, Pezzata Rossa, Montbeliard, Grigio Alpina, Piemontese, Valdostana and their crossbreeds.

The characteristics of the PDO after the minimum ripening period (60 days) are as follows: cylindrical, with flat faces of 15-25 cm diameter and a heel of 12-20 cm, weighing between 2 kg and 7 kg. It is a semi-hard pressed rennet cheese that is produced throughout the year, except for the Alpine pasture variety which is produced in the May-October period. After the minimum ripening period the rind is inedible, thin, reddish-yellow and smooth, tending to be rigid and regular. As ripening progresses it darkens, thickens and becomes coarse. The flesh of the cheese is a pearly white or ivory white colour after the minimum ripening period and, as ripening progresses, it takes on an ochre yellow colour, possibly with internal greenish-blue veining, perhaps obtained by piercing the cheeses using the traditional technique (manual with long iron prongs). After the minimum ripening period the cheese is crumbly, becoming denser as ripening progresses. After the minimum ripening period its flavour is subtle, delicate and moderately salty, becoming more flavoursome as ripening progresses. The minimum fat content is 34 % of fat in dry matter.

The cheese may be sold whole or in segments for slicing, in portions or pre-packaged. Cutting and pre- packaging may be carried out outside the geographical production area.

4.3. Geographical area: ‘Castelmagno’ cheese must be produced and ripened in the administrative territory of the following municipalities in Cuneo Province: Castelmagno, and Monterosso .

4.4. Proof of origin: Each stage of the production process must be monitored, listing all inputs and outputs. In this way, and by drawing up lists managed by the inspection body of livestock farmers, producers/ripeners, packagers and cutters, keeping registers of production and packaging and notifying the inspection body of the quantities produced, product traceability throughout the production chain is guaranteed. Furthermore, the milk produced and the relevant cattle and sheep/goats must undergo fitness-for- purpose checks. The data sheet for the rennet and a reference to the batch in use must always be present. Every month, the number of cheeses produced must also be notified. For ‘Castelmagno’ cheese boasting the additional wording ‘di Alpeggio’ (from Alpine pasture), the parcels on which the animals are kept at pasture must be entered in a list kept for that purpose by the inspection body. For these parcels, the maximum quantities of milk produced for each animal species are determined, and account will be taken of this in issuing the authorisation for using the mark. The maximum potential of the area under pasture in terms of the sustainable number of litres of milk must be estimated taking account of the composition of its flora, the time of use, and the animal type and density. In addition, each year the inspection body must be informed of the beginning and end of pasture activity. Alpine pastures must be surveyed by the inspection body. All natural and legal persons recorded in the relevant lists will be subject to checks by the inspection body according to the terms of the production specification and the corresponding inspection plan.

The conditions to be fulfilled apply to facilities used for producing, processing and ripening the milk. The sheds where the milk is produced must be registered pursuant to the legislation in force and processing locations must have either the EEC mark or, for operators selling directly, appropriate health authorisation issued in accordance with the national legislation in force.

By the 10th day of each month, the inspection body must be informed of the number of cheeses produced or ripened by each operator in the previous month.

4.5. Method of production: Cattle providing milk for the PDO must be milked no more than twice a day. It is not permitted to use milk that has been stored for more than two days, i.e. a maximum of four consecutive milkings. As regards farm management, the cattle’s dry cycle must not be outside the typical production area, except for cattle belonging to persons practising Alpine pasture. The staple diet of the cattle and, where relevant, sheep and goats must be composed of green or hay fodder obtained from meadows, pastures and hay from mixed-grass meadows, predominantly originating from the municipalities of Castelmagno, Pradleves and . The use of maize silage is prohibited. The feed components supplementing the diet must be made up of cereals, pulses, mineral salts and vitamins that are permitted under the legislation in force. It is permitted to cool the milk for storage to a temperature not lower than 6 °C. After possible surface creaming, the milk must be heated to a temperature of 30 °C-38 °C. The milk may not undergo pasteurisation or thermisation. The use of enzymes is prohibited. Coagulation occurs at a temperature of 30 °C-38 °C over a period of 30 to 90 minutes with liquid calf rennet (with at least 70 % chymosin). The mass is worked in the vat for 10 to 15 minutes by constant stirring. The curd broken in this way is left to settle at the bottom of the vat or is drawn off. The curd is left to rest for at least 18 hours and may be cooled. After 18 hours, the 24.12.2009 EN Official Journal of the European Union C 320/31

curd is placed in recipients and submerged in the whey from previous production operations for a period of between two and four days for normal fermentation. The curd is then broken and finely ground, mixed and salted. The product is then wrapped in a cloth of plant or synthetic origin, placed for moulding in the cheese strainers made of wood or another suitable material where it remains for at least one day and is manually or mechanically pressed. Additional dry salting of the cheese is permitted in order to give colour and consistency to the rind. Ripening must occur in cool, damp natural caves — or in premises that replicate these environmental conditions — for a minimum of 60 days on boards of wood or another suitable material. Ripening must occur at a temperature of 5 °C-15 °C, with humidity of 70 %-98 %, so as to ensure the necessary conditions for the correct development of the natural moulds that are typical of ‘Castelmagno’ PDO. During ripening, the cheeses may be brushed and/or washed using natural substances that have no direct colouring effect, so as to prevent the development of unwanted moulds and mites. ‘Castelmagno’ cheese may bear the additional wording ‘di Alpeggio’ (from Alpine pasture) provided that the milk comes exclusively from cattle, goats and sheep fed at pasture with at least 90 % local flora for a period between the start of May and the end of October, that the entire production process occurs in Alpine areas and that the cheese making occurs more than 1 000 m above sea level.

4.6. Link: Natural factors: the climatic conditions of the mountain area concerned that influence the quality of the fodder, which is characterised by Alpine essences, and the natural ripening of the product. Human factors: the continuity of a centuries-old tradition, including as regards the technical aspects of the process, which, over time, has continued to follow consolidated practices.

4.8. Labelling: The product is marked by the producer by stamping the logo on the face that is in contact with the base of the cheese strainer at the time of moulding. Prior to placing on the market, an identifying label is affixed to compliant cheese. This is the mark of conformity, known as the ‘sventolina’ (little fan), and it is on the same face as the origin mark. The origin mark is a stylised ‘C’ with the outline of Alpine peaks in the upper part and, in the centre, the elliptical shape of a cheese wheel with a segment cut out. The mark comes in two sizes: 11 cm × 12 cm for cheeses between 2 kg and 3 kg, and 15,3 cm × 16,3 cm for cheeses between 3 kg and 7 kg.

Since all ‘Castelmagno’ cheese is produced at more than 600 m above sea level, the labels include the wording ‘prodotto della montagna’ (mountain product). When milk production and cheese making occur more than 1 000 m above sea level, the PDO cheese will bear not only the wording ‘prodotto della montagna’ (mountain product) but also the wording ‘di Alpeggio’ (from Alpine pasture). Where ‘Castelmagno’ cheese is a ‘mountaing product’, the writing on the ‘sventolina’ mark will be on a blue background. Where it is ‘from Alpine Pasture’, the wording ‘Di alpeggio’ (From Alpine Pasture) will be written on the four blades of the ‘fan’, with the word ‘Castelmagno’ being written on a moss-green background and the characters of the wording ‘Di Alpeggio’ (From Alpine Pasture), located below the word ‘Castelmagno’, being 6 mm high. The product may be marketed with the ‘Castelmagno’ protected designation of origin only after such marking and labelling. The conformity mark is a circular paper label with four ‘fan blades’ cut out. It has a diameter of 18 cm and features the same design as the origin mark. The marks must bear the statutory wordings, the wording ‘Denominazione di Origine Protetta “Castelmagno” ’ (Castelmagno Protected Designation of Origin) and, as appropriate, the additional markings ‘prodotto della montagna’ (mountain product) or ‘di Alpeggio’ (from Alpine pasture). Where it is sold in portions or pre-packaged, the origin mark and the identifying mark must always be recognisable. In such cases, the labels must bear the name of the producer and ripener and must be in line with the legislative provisions in force concerning the labelling and presentation of food products. Bilateral negotiations with Switzerland on the protection of geographical indications are underway. In this context, the protection in the European Community, as geographical indications, of the names set out below is under consideration.

The Commission invites any Member State or third country or any natural or legal persons having a legitimate interest, established or resident in a Member State or in a third country to submit objections to such protection by lodging a duly substantiated statement.

Statements of objection must reach the European Commission within 2 months from the date of this publication. Statements of objection should be sent to the following e-mail address: AGRI-B3- [email protected]

Statements of objection shall be examined only if they are received within the time limit set out above and if they show that the protection of the name proposed would:

(a) conflict with the name of a plant variety or an animal breed and as a result is likely to mislead the consumer as to the true origin of the product;

(b) be wholly or partially homonymous with that of a name already protected in the European Community under Council Regulation (EC) No 510/2006 of 20 March 2006 on the protection of geographical indications and designations of origin for agricultural products and foodstuffs ( 1 );

(c) in the light of a trademark's reputation and renown and the length of time it has been used, be liable to mislead the consumer as to the true identity of the product;

(d) jeopardise the existence of an entirely or partly identical name or of a trademark or the existence of products which have been legally on the market for at least five years preceding the date of the publication of this notice;

(e) or if they can give details from which it can be concluded that the name for which protection is considered is generic.

The criteria referred to above shall be evaluated in relation to the territory of the Community, which in the case of intellectual property rights refers only to the territory or territories where the said rights are protected. The eventual protection of these names in the European Community is subject to the successful conclusion of these negotiations and subsequent legal act.

This present notice is without prejudice to the possibility of applying for registration of names from Switzerland under Article 5(9) of Regulation (EC) No 510/2006.

The product is specific in terms of the historically established composition and method of production. The term ‘Bratislavský rožok’ is used exclusively to denote this particular type of fine bakery ware.

The Slovak name ‘Bratislavský rožok’ began to be used in about 1920, after the city of Pressburg, then part of Czechoslovakia and the capital of Slovakia, had been renamed Bratislava. As of that year, the name of the pastry was adapted in line with the city's new name, hence ‘Bratislavský rožok’. After the new name of the city was adopted, the expression Kipfel began to be used in Austria, instead of the usual Beugel, together with the old name of the city. This custom has persisted in Austria to the present day and we therefore recommend the name ‘Pressburger Kipfel’ as the German version. The name originally used in Hungarian was Pozsonyi patkó (which translated as ‘Bratislava horseshoe’). According to current information from several Hungarian bakers or confectioners, particularly in Budapest, this product is manufactured and marketed under the name ‘Pozsonyi kifli’, which translates as ‘Bratislavský rožok’, the name of the city being in use from 1918. In view of the established custom, we propose that the name ‘Pozsonyi kifli’ be retained.

Organoleptic characteristics: Colour: brown to dark brown crust; on the cut surface, after a few millimetres of rough pastry case there is filling only — the poppy-seed filling is dark grey to black, and the walnut filling is brown;

Appearance: a uniform glossy brown to dark brown surface with delicate mottling in a lighter shade, resembling marbling, on the upper crust;

Consistency: pastry case: firm, thin, crumbles when broken;

Aroma and flavour: delicate, typical of the chosen filling (i.e. typically walnut or poppy-seed flavour), pleasant sweet taste with an aroma of the ingredients used.

Weight: usually 40 to 60 g.

Production method: The dough is prepared by mixing the flour with 2,00-2,50 kg of water or water to which powdered milk has been added, yeast, salt, sugar and edible fat (vegetable oil, margarine or butter). The mixed dough is left to rise for 30 to 40 minutes. After the dough has visibly increased in volume, it is briefly rekneaded and then separated into pieces which are formed into balls. After rising for 15 to 20 minutes, these are rolled out into elliptical strips measuring 12-15 cm along their longer axis. The thickness of the rolled pastry strip must be 2 to 3 mm. Cylindrical pieces of poppy-seed or walnut filling are placed on the rolled pastry strips and wrapped to form cylinders 12 to 15 cm long, gradually narrowing in diameter from the centre to the end. When the filling has been wrapped, the dough should be joined evenly and the point at which the joint is made must be on the underside of the product when it is shaped into a crescent on the baking tray. The product is formed into a horseshoe shape for the poppy-seed filling or into a letter C shape for the walnut filling. The shapes must be sufficiently different for it to be clear at a glance which filling they contain.

The poppy-seed filling is prepared by dissolving the sugar in a small quantity of water and bringing it to the boil. Ground poppy seeds mixed with powdered milk are gradually added to the dissolved sugar under constant stirring and boiled to produce a fairly thick mass. The poppy-seed filling is then cooled and a generous portion of chopped fresh lemon peel or lemon paste is added, together with a small amount of vanilla sugar where necessary. The walnut filling is not cooked, but the ground walnut kernels are simply mixed with sugar, hot water and an appropriate quantity of flavouring. A maximum of 10 % by weight of ground walnut kernels may be replaced by sweet crumbs.

Both fillings must be thick enough for small balls to be formed by hand.

The shaped products are placed on a baking tray and brushed with whole egg pulp or yolk only, diluted with a very small quantity of water. The egg-coated products on the trays are left in a cool place with air circulation so that the flow dries their surface slightly. Once the surface is dried, the products are placed in a proving oven. The risen products are baked as yeast-based pastry products. During rising and particularly during baking, the dry airflow on the surface creates fine fissures and the typical marbled structure of the product's upper crust.

If the intention is to make the ‘strongly marbled’ surface of ‘Bratislavský rožok’, the croissants are removed from the proving oven halfway through rising, coated again with whole egg pulp or yolk, allowed to dry (15 to 30 minutes) and then returned to the proving oven to finish rising. This produces more marbling. The products are baked without steam at a temperature of 180-200 °C.

Baking time depends on the size of the products; at 30-35 g the baking time is 7-8 mins, at 40-50 g the time is 10-12 mins and at 60 g and above the time is 15 mins or more. C 320/44 EN Official Journal of the European Union 24.12.2009

After cooling, the baked products are prepared for dispatch and sale.

Labelling: the highlighted name of the product ‘Bratislavský rožok’ or the equivalent in German or Hungarian

the Community logo or the logo and the inscription Zaručená tradičná špecialita (Traditional speciality guaranteed). The abbreviation ZTŠ (TSG) may appear on the packaging.

Method and place of sale: The ‘Bratislavský rožok’ is sold by the piece in the manufacturer's specialist outlets or in confectioners’ shops, cafés and fast-food outlets.

Storage: It is stored at a temperature of up to +10 °C.

3.7. Specificity of the agricultural product or foodstuff: — the specific character of the product lies in its distinctive surface, which is ‘marbled’, i.e. finely self- mottled with lighter colouring than the rest of the upper crust. Other bakery or confectionery products do not have this type of surface,

— the product differs from similar types of fine short pastry wares on the market by virtue of its different form and weight, but also of the quantity of filling. The dough has more fat added to it than other products, and no other type of bakery ware has marbling on the surface,

— the product has a specific aroma and flavour achieved through the use of poppy-seed or walnut filling,

— the product has a distinctive appearance and a horseshoe or letter C shape,

— the product is hand-made and not mass produced.

To preserve the traditional character of the product, the following recipe requirements must be met when it is prepared:

— for the preparation of the dough, the recipe must specify at least 30 % edible fat in proportion to the quantity of flour used,

— the filling must constitute more than 50 % of the total weight of the baked product,

— whole egg pulp or yolk only must be brushed on to the product before baking and, according to the production method, must produce marbling on the baked product.

3.8. Traditional character of the agricultural product or foodstuff: The traditional character of the product is based on its traditional composition, i.e. the filling must constitute more than 50 % of the total weight of the baked product.

The product with its specific name has already been made for more than two centuries, including in the neighbouring countries of Hungary and Austria with which Slovakia shared a single constitution less than 90 years ago.

Vladimír Tomčík's book S vareškou dvoma tisícročiami (tracing 2 000 years of gastronomy) quotes entries from ledgers indicating that the ‘Bratislavský rožok’ was being served in inns in 1590, although the secret of its manufacture is much older.

In the publication Ulice a námestia mesta Bratislavy (‘Streets and Squares of the City of Bratislava’) by Tivadar Ortvay, published in Bratislava in 1905, page 305 reads as follows: ‘not far from Viktor Mayer's confectioner's shop, the old Scheuermann bakery (now Lauda) bakes the poppy-seed and walnut horseshoes which made Bratislava famous as a speciality’. Pages 304 and 305 in Hungarian of the book named in Annex 1 mention the Scheuermann bakery in connection with today's Hviezdoslavovo námestie. The relevant part of the text reads: ‘Nearby there is the old Scheuermann (now Lauda) poppy-seed and walnut horseshoe bakery, which established Bratislava's fame for this speciality. The publication Chlieb náš každodenný (‘Our Daily Bread’) by V. Szemes and V. Karovič, published in Bratislava in 1992, states on page 52: ‘For St Nicholas’ Day in 1785 the baker Schiermann placed in his shop window a new kind of filled bakery product which went down in history as the prešpurské beugle. We regard the difference in the names Scheuermann and Schiermann as a typographical error; the correct name is Scheuermann.

Several bakers in Bratislava went on to make ‘Bratislavský rožok’. One of the best known is Ágoston Schwappach, whose bakery was founded in 1834 and offered poppy-seed and walnut horseshoes. Two of the successors to the ‘Bratislavský rožok’ bakers Scheuermann and Lauda were the master baker Johann Korče, who lived from 1851 to 1919 and was a knight of the Order of Franz Josef, and his son, the master baker Hans Korče. The Korče family was succeeded by Emil Kastner.

The Gustáv Wendler bakery in Štefánikova ulica in Bratislava, which also sent ‘Bratislavský rožok’ by mail order, was also well known.

In the former Bratislava journal Pressburger Wegweiser of 1863, the Anton Pressberger confectioner and bakery advertises, inter alia, ‘poppy-seed and walnut beugle’.

The Viennese newspaper Neue Freie Presse of 16 April 1938 has a recipe for Pressburger Kipfel — Bratislavské rožky. The description of the recipe and production method is almost identical to that used today.

Terézia Vansová and Ján Babilon also described the ‘Bratislavský rožok’ in their book in 1870.

A series of bakers and confectioners have made the ‘Bratislavský rožok’ in several European cities, particularly in Austria, the Czech Republic and Hungary. According to information gathered from bakery experts in other countries, a product bearing the name ‘Bratislavský rožok’ is made in several cities, or its shape, approximate recipe and production method is at least known. Practical training in the making of the ‘Bratislavský rožok’ was given at vocational colleges of bakery and confectionery in the former Czechoslovakia, particularly after 1950. The name ‘Bratislavský rožok’ began to be used in 1918, after the founding of Czechoslovakia and the re-naming of the city from the original Pressburg or Pozsony to Bratislava. The name of the product also changed. The original name beugle was in Hungarian turned into patkó, meaning ‘horseshoe’. The term rožok apparently began to be used together with the new name of the city. In Hungary the name ‘Pozsonyi kifli’ (‘Bratislavský rožok’), i.e. the old name for the city with the new name for the shape, is used to the present day. In Austria, too, the name ‘Pressburger Kipfel’ is used more often and the term beugle is rarely heard.

The ‘Bratislavský rožok’ is a historic product despite its present-day popularity. According to estimates, it is regularly made in Slovakia by more than 20 bakeries and confectioners and at least once a week by dozens more manufacturers.

In 1999 and 2005, the Slovak bakers’ cooperative presented ‘Bratislavský rožok’ amongst the competition products in the final of the Lesaffre Bakery World Cup in Paris and they were highly commended by the judges.

At the beginning of 2007, an international competition for the best ‘Bratislavský rožok’ was held for the first time in history as part of the Danubius Gastro exhibition in Bratislava, attracting nine teams from three countries (front page of Bratislavské novíny, 25 January 2007).

Bratislava newspapers and several nationwide periodicals ran a series of articles about the competition.

On 25 July 2008, the daily Nový čas ran an article on the ‘Bratislavský rožok’. The article also contains a traditional recipe from 1938, and the description of the product states that: ‘… it is formed into a horseshoe shape with poppy-seed filling or a letter C with walnut filling.’.

An article entitled ‘The Bratislavský rožok — a tradition with a long history’ on p. 52 of EPICURE magazine states that the product: ‘with poppy-seed filling is shaped into a horseshoe, and with walnut filling has a letter C shape’.

3.9. Minimum requirements and procedures to check the specific character: The basic analytical characteristics of the given recipe are checked — the dough recipe must contain at least 30 % edible fat and the filling must constitute more than 50 % of the total weight of the finished product. Checks are carried out on the raw materials used for manufacture and on compliance with the precise proportions of the ingredients according to the recipe. The following parameters are also inspected: — organoleptic characteristics visual inspection of the surface and appearance; both must comply with the characteristics set out in point 3.5 of the specifications; sensory analysis of aroma and flavour, — physical, chemical and microbiological requirements the shape of the product is inspected visually; it must comply with the characteristics set out in point 3.5 of the specifications, the fat and dry matter content is monitored using standard analytical methods, the filling must constitute more than 50 % of the total weight of the baked product, as set out in point 3.7 of the specifications, — compliance with the technological production method. The frequency of inspection by the authority or body verifying compliance with the product specifi­ cation is once per year. Sensory checks on the organoleptic characteristics are as a rule made once per year. Each manufacturer performs his or her own interim checks. 4. Description of the product to which the name in (1) applies: ‘Hessischer Handkäse’/‘Hessischer Handkäs’ denotes small cheeses which were originally formed by hand and so became palm-sized. ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is to be classed among the sour milk cheeses. Sour milk cheeses are made primarily from sour milk quark produced only by acidification (without rennet).

‘Hessischer Handkäse’/‘Hessischer Handkäs’ can take the form of smeared acid curd cheese (yellow cheese) with mould formation. In the latter case, the extent of the mould formation varies. The characteristic whole-cheese shape of ‘Hessischer Handkäse’ is determined by its traditional production. Each cheese weighs between 20 g and 125 g. ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is produced only in the low-fat category.

‘Hessischer Handkäse’/‘Hessischer Handkäs’ has the following characteristics:

(a) As smeared acid curd cheese (yellow cheese):

The composition of ‘Hessischer Handkäse’/‘Hessischer Handkäs’ depends on the raw material: sour milk quark. Table 1 shows the main substances contained in ‘Hessischer Handkäse’/‘Hessischer Handkäs’.

As the main ingredient for the cheese, it is of central importance. It is produced exclusively from cow's milk. Further ingredients are ripening salts, table salt (possibly iodinated), caraway, depending on the recipe variation, possibly casein and the pure cultures (red smear cultures).

In order to produce ‘Hessischer Handkäse’/‘Hessischer Handkäs’ the sour milk quark used must have the following characteristics:

Production consists of the following stages:

— blending and grinding of the individual batches of sour milk quark,

— mixing with the ingredients such as ripening salts, table salt, possibly caraway, as well as the ingredients and cultures required for the respective types ‘smeared acid curd cheese’ or ‘Hessischer Handkäse’/‘Hessischer Handkäs’ with lactic mould formation,

— forming of the cheeses,

— ripening of the cheese in the sweating room followed by post-ripening until the ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is packaged.

3.6. Specific rules concerning slicing, grating, packaging, etc.: The fully ripened cheese is packaged at the makers in the geographical area, since the cheese cannot be taken to other regions for packaging, as the quality of these small cheeses, each weighing at most 125 g, would suffer a great deal if they were transported unpackaged. Their surface would dry out during transport from the maker to another packaging firm. There would also be an excessively high risk of bacteriological infection during transport to the new packaging firm.

5. Link with the geographical area: 5.1. Specificity of the geographical area: ‘Hessischer Handkäse’/‘Hessischer Handkäs’ has been produced for centuries in a traditional manner on farms. The recipes and production methods have been maintained over time in Hessen's cheese factories and, adapted to modern requirements in sour milk cheese making, use the traditional production method.

The first historical mention of ‘Hessischer Handkäse’/‘Hessischer Handkäs’ was in 1813, when people from the town of Gross Gerau sold their hand-formed cheese on the market in Mainz.

As production increased, ‘Hessischer Handkäse’/‘Hessischer Handkäs’ became a staple food for ordinary people. The economic and cultural significance of ‘Hessischer Handkäse’ was underlined by the invention of the cheese machine in 1893. This invention, by Peter Traiser II from Gross Gerau, enabled production of ‘Hessischer Handkäse’/‘Hessischer Handkäs’ to be further increased. The Hütten­ berger Land region, now in the Lahn-Dill District, was and still is a centre of production. From as early as 1835 onwards the local chronicle of Hochelheim municipality reported that trading with cheese brought money into the village.

Over time a separate tradition has developed around the way ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is eaten. One of the region's best-known variants involves placing the cheese in a special marinade of onions, vinegar and oil to produce so-called ‘Handkäs mit Musik’. The traditional recipes for both production and consumption and the name ‘Hessischer Handkäs’/‘Hessischer Handkäse’/‘Hessischer Handkäs’ have been retained up to the present day. ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is now produced in a few small and medium-sized artisanal cheese factories. They produce the speciality using traditional recipes and methods, adapted to modern technologies.

5.2. Specificity of the product: ‘Hessischer Handkäse’/‘Hessischer Handkäs’ is highly regarded in Hessen and neighbouring areas and is known as a typical Hessen dish. Every inn in Hessen simply has to offer both ‘Äbbelwoi’ (cider) and ‘Hessischer Handkäse’/‘Hessischer Handkäs’. Its major significance for the people of Hessen, both as a food and as an economic factor, led in the past to ‘Hessischer Handkäse’/‘Hessischer Handkäs’ acquiring a special status in the region. ‘Hessischer Handkäse’/‘Hessischer Handkäs’ therefore occupies a position of very special importance as part of Hessen’s food culture and in the public’s mind as a high-quality foodstuff. Today it is still regarded as typical of Hessen. Respect is paid to ‘Hessischer Handkäse’/‘Hessischer Handkäs’ as Hessen's best-known food through the television programmes ‘Handkäs mit Musik’, which reports about Hessen's culinary delights. The uniqueness of ‘Hessischer Handkäse’/‘Hessischer Handkäs’ derives from the long experience of the Hessen cheese dairies in obtaining the best characteristics from each batch of sour milk quark in order to emphasise the best properties of the quark. This increases quality and ensures a uniformly high quality primary product. The traditional artisanal production and the experience contribute to the uniqueness and special nature of ‘Hessischer Handkäse’/‘Hessischer Handkäs’. ‘Traditional production’ means the selection, individual composition and mixing of individual batches of sour milk quark from different quark manufacturers into a production batch for ‘Hessischer Handkäse’/‘Hessischer Handkäs’. This method ensures a raw material that is almost completely homogeneous. The formed cheeses are ripened for 2-3 days, the temperature in the sweating room rising from about 18 °C to about 30 °C at the end of ripening. This ‘traditional method’ gives the cheese a stronger flavour.

The uniqueness and special character of ‘Hessischer Handkäse’/Hessischer Handkäs, above all the version with ‘Musik’, means that it is known as a Hessen speciality beyond the region's borders.

5.3. Causal link between the geographical area and the quality or characteristics of the product (for PDO) or a specific quality, the reputation or other characteristic of the product (for PGI): The long tradition of making the product in Hessen, the resulting special know-how of Hessen's cheese factories which guarantees high quality and the rooting of ‘Hessischer Handkäse’/‘Hessischer Handkäs’ in gastronomy in Hessen as the region's typical dish have made it a well-known and popular regional speciality.

Subscriptions to the Official Journal of the European Union, which is published in the official languages of the European Union, are available for 22 language versions. The Official Journal comprises two series, L (Legislation) and C (Information and Notices). A separate subscription must be taken out for each language version. In accordance with Council Regulation (EC) No 920/2005, published in Official Journal L 156 of 18 June 2005, the institutions of the European Union are temporarily not bound by the obligation to draft all acts in Irish and publish them in that language. Irish editions of the Official Journal are therefore sold separately. Subscriptions to the Supplement to the Official Journal (S Series — tendering procedures for public contracts) cover all 23 official language versions on a single multilingual CD-ROM. On request, subscribers to the Official Journal of the European Union can receive the various Annexes to the Official Journal. Subscribers are informed of the publication of Annexes by notices inserted in the Official Journal of the European Union.
