Potato Kugel Potato Kugel (low oil) Ingredients: 4 medium potatoes 1 to 1 1/2 medium sweet onion 3 large eggs 1/8 cup oil 2 tablespoons of all-purpose flour ½ heaping teaspoon of salt ¼ to ½ teaspoon of pepper Parve cooking spray 10” non stick frying pan with top Recipe: Start with browning in the frying pan, sprayed with Parve cooking spray, 1 or 1½ sweet onion that has been chopped. While this is cooking, take 4 medium potatoes slice them to fit in the Cuisinart and pulverize them. When the onions are done add them to the processor and pulse them in. Then take the mixture, pour it into a fine mesh strainer and let the excess water ooze out for about 10 minutes. Place this mixture in a glass mixing bowl. Add the eggs, oil and the dry ingredients and mix them with a fork till it becomes homogeneous. Preheat the frying pan stovetop for 2 minutes on high and then spray it well with a Pam like material and pour potato mixture into pan. After 2 minutes, with the mixture in place, turn heat down to medium and cook for 20 to 25 minutes with the pan covered. Flip the kugel onto a plate, then respray the frying liberally, and slide the kugel into the pan with uncooked side down. Turn the heat to high for 2 minutes then back to medium while the kugel is covered. Cook for 10 more minutes. Slide it out on a plate. Cut slices like a pie and serve while warm. .

    Page 1 SEDER MEAL PLANNING So you want to have a traditional Passover Seder dinner? It is very advantageous to start at least 2 months in advance of the date for the dinner. If you are using this as an outreach to witness to nonbelievers, is also wise to plan to have it on the second night of Passover week so that you can invite your Jewish friends who probably will be having their family dinner on the first night of Passover. After you have picked the night then you must find a room big enough for the number of people you will be able to handle. There should be easy access to a kitchen also for cooking, and clean up after the meal. We have found that the table size should not exceed 8 so that each table could represent a family unit. Decide whether to use paper and plastic or more formal china, silverware and glass glasses. Linen table cloths or paper must also be chosen. You will need to have people in charge of music, food, program, hospitality, set up, clean up, and publicity. In the following pages I will tell you how to plan and prepare the food part of the Seder. First pick the menu. I have given as an example the Seder we did in 2002 for 180 people. Most churches want to have lamb as the meat, but do not realize that Jesus is the sacrifice and there is no more sacrifice for sin so there is no lamb for Passover. There is also no more temple to sacrifice the lamb at.

Mix thoroughly. Feel free to adjust the quantities. 2) Take about a ball of dough the size of a walnut or golf ball and roll it out on a floured countertop. 3) Use a spatula to move it onto a cookie sheet. 4) Make holes in the rolled-out dough using one or more forks. This is important; if you don’t make the holes it will bake into a pita bread. 5) Bake at 400⁰ until it’s hard, then let them cool on a rack. Note: When I’m rolling out the dough I sprinkle some kosher salt (large crystals) and roll the salt into the dough.

Selections from our “Mucho Easy” Recipe Collection Mondshein Family Potato Kugel It has come to our attention that we have never sent out this family favorite recipe. Please accept our apologies for its tardiness! We even grew our own potatoes this summer (they did escape the many critters who feasted in our garden) so it was that much more special. We use a food processor to make this go really fast, using the chopper blade to chop up the onions rst, switching to the grating blade to make quick work of the potatoes. You can always hand grate both if you don't have one. Ingredients: 8 large potatoes, peeled if necessary 2 large onions 4 eggs, lightly beaten 1/4 cup potato starch or our 1 Tablespoon salt 1/4 tsp black pepper 1/4 cup chopped parsley, spinach, kale, or other green 1/2 cup Extra virgin olive oil Process: Peel and cut into quarters the onions, then pulse in food processor using the chopping blade in bottom until chopped nely. Dump in big bowl, then change to the medium ne grating blade to grate all the potatoes. Dump them in bowl too, then add the remaining ingredients and stir well. Pour in oiled pans . Depending on the size of potatoes, this will make at least one 9 x 13" casserole , usually that large pan plus a 8x8" . Bake at 375 for 40-50 minutes or until top is crispy and browned. I bake both in the oven at the same time because we like a LOT of Kugel because it tastes so good re-heated the next day! If you are feeling generous you can always gift the small one to a very good friend, too.

  • Traditional Chanukah Potato Latkes
    Traditional Chanukah Potato Latkes I recently realized that while I've shared my recipes for corn latkes, butternut sguash sweet gotato latkes, vegetabl e latkes and beet latkes stuffed with goat cheese, I've never shared my traditional potato recipe. ! You'll need onion, oil, salt, potatoes, eggs, flour and oil. While the recipe works with any type of potato, using Yukon Gold will be much more aesthetically pleasing because they discolor much more slowly than other potatoes and will keep your mixture looking bright and fresh for longer. They also have a buttery taste which will take your latkes to the next level ! Most latke recipes call for raw onion, but I like to fry them off first to give the latkes more flavor. Dice the onion and saute it in 2 tbsp. oil and 1 tsp. salt until golden. Peel and grate the potatoes (by hand or with a food processor) and immediately put the potato shreds into a bowl of cold water. Continue shredding until all the potatoes are grated. Place the eggs, flour, fried onion and 2 tsp. salt in a separate bowl. Drain the grated potato well, add it to the rest of the ingredients and mix immediately. Heat 2-4 tbsp. of oil in a frying pan, over medium heat. Test the oil by dropping a tiny bit of the mixture into the pan. When the oil sizzles upon contact, it is ready. TIP: Add a small piece of carrot to the oil you're fry ing in. When the carrot starts to looks shriveled and brown, replace it with a fresh piece.
