Mix well and season to taste with 1-2 jalapeño peppers salt and pepper. Pour contents into a greased 13 x 9 inch pan. Melt butter in small frying 4 tbsp. butter, melted pan. Mix in the bread crumbs. Sprinkle on top 2 eggs of the kugel.     Page 1 SEDER MEAL PLANNING So you want to have a traditional Passover Seder dinner? It is very advantageous to start at least 2 months in advance of the date for the dinner. If you are using this as an outreach to witness to nonbelievers, is also wise to plan to have it on the second night of Passover week so that you can invite your Jewish friends who probably will be having their family dinner on the first night of Passover. After you have picked the night then you must find a room big enough for the number of people you will be able to handle. There should be easy access to a kitchen also for cooking, and clean up after the meal. We have found that the table size should not exceed 8 so that each table could represent a family unit. Decide whether to use paper and plastic or more formal china, silverware and glass glasses. Linen table cloths or paper must also be chosen. You will need to have people in charge of music, food, program, hospitality, set up, clean up, and publicity. In the following pages I will tell you how to plan and prepare the food part of the Seder. First pick the menu. I have given as an example the Seder we did in 2002 for 180 people. Most churches want to have lamb as the meat, but do not realize that Jesus is the sacrifice and there is no more sacrifice for sin so there is no lamb for Passover.     Paksiw na lechon June 17th was my husband’s birthday. We had a little dinner party last night to celebrate. Nothing fancy, though. The only expensive item on the menu was the two-and-a-half kilos of lechon. The national food of the Philippines, lechon refers to a whole pig roasted over live coals. Best eaten while the rind is still crisp, with the sweet-sour liver dunking sauce on the side, lechon does not taste so good after reheating. The most popular way of serving leftover lechon is by cooking them as a stew–paksiw. Paksiw is the generic name for stews made with vinegar. To make paksiw na lechon, the meat is slow-cooked in a mixture of vinegar, soy sauce, peppercorns, bay leaves, sugar, salt and whatever leftover liver sauce there is. It sometimes happens that there is no leftover sauce. In which case, some substitutions may be in order. One option is to used commercial lechon sauce available bottled in most supermarkets. Another option is to use a can of liver spread diluted in a cup of meat broth. Or, if you have a lot of leftover lechon, you may choose both options and mix them all together. In this recipe, since we had about a kilo of leftover lechon and no leftover sauce, I used a whole bottle of commercial lechon sauce. Ingredients : 1 kilo of lechon 1 head of garlic, crushed 3 onions, halved and sliced 1/2 to 3/4 c. of vinegar 1/2 c. of dark soy sauce 8 peppercorns, pounded 3/4 to 1 c.
