The name “Hokusetsu”, or “Northern Snow,” was chosen to reflect the ideal sake brewing conditions on the island during the coldest days of winter. Chef Nobu first experienced Hokusetsu sake in 1987 when his Japanese rock-musician friend brought a bottle to the original Matsuhisa restaurant in Beverly Hills. Impressed by the quality, Nobu obtained exclusive rights to sell Hokusetsu sake in the United States. Once blossoming has occurred, the rate of ripening is has little room for variation. A grape, after all, can only ripen so fast. But there are factors at work that do effect ripening. This year has been a Crush Talk struggle so far. Viticulturists in eastern Washington have been hesitant to commit so far. This means that when the growers tells us what’s available, we will need to Gala jump on our orders to insure we can get a variety of grapes. Some grapes will not be a problem. Others will be difficult to purchase. Sammy has been in discussions with growers and will let us know February 16, 2011 when he knows more. Red Bordeaux Tasting But this is also a time to think about purchasing barrels. May15th is the deadline for purchasing February 27, 2011 barrels at Bouchard cooperages at a discount and with no shipping cost. They make Damy, Vicard, Argyle Winery Tour Billon and Cadus barrels. All their barrels are quite good, although each provides different component to a wine.

    Prices valid from 23rd May - 4th June 2017 Domaine Auguste Clape Now in his eighties, Auguste Clape is one of the few remaining old-school proponents of French winemaking, a pioneering and unassuming genius who falls almost effortlessly into the category of ‘great.’ In reality, of course, there has been much effort involved, the Clapes inserting themselves into the northern Rhône landscape in the early 1900’s to build their fortunes from next to nothing. Indeed, the Clape Syrahs from the Cornas appellation are among the most celebrated in France. Auguste paved the way there as the first to bottle his own wine. Today he works alongside son Pierre and grandson Olivier, farming a mere eight hectares of precipitous terraces by hand using traditional methods. Here, old vines are harvested as late as possible in a gamble with Nature to produce wines capable of tremendous longevity. The King, then, of Cornas, both because his wines are widely considered to be the best from this tiny appellation, and because he has at times fought single-handedly to maintain its integrity.     Mordoree Condrieu La Reine des Bois Domaine de la Mordoree France - Rhone Valley - Condrieu AOC Domaine de la Mordoree owns the vineyards in the Condrieu appellation. The appellation is named after the commune of Condrieu, meaning a corner (coin) of land where two streams meet (rieu, akin to the Spanish rio). The vineyard was abandonned back in the 1960 as the work couldn't be done by machine. Christophe Delorme found some old plantings of Viognier in the middle of the growing vegetation that took over the piece of property. The planting was completly redone in 2004. The soil is extremely poor, which is great for low yield, intense and concentrated wines. The Condrieu AOC produces wine from a single grape varietal - Viognier, giving rise, not far from the city of Vienne, to a wine like not other - a white wine of high quality and great delicacy.
