West Side Wine Club May 2011 President’s Musings ! ! April showers bring…. May showers. Our cool spring continues, although the grapevines have budded, the next stumbling block is blossoming. Once blossoming has occurred, the rate of ripening is has little room for variation. A grape, after all, can only ripen so fast. But there are factors at work that do effect ripening. In a perfect year, we would have 80 degree days all day, never over- but Scheduled Meetings rarely under. January 19, 2011 During this time period, we watch carefully hoping to purchase good grapes. This year has been a Crush Talk struggle so far. Viticulturists in eastern Washington have been hesitant to commit so far. The freeze January 22, 2011 last fall has wine makers running around trying to find out how much they have and if they can Holiday Party/Awards replace any shortfalls. This means that when the growers tells us what’s available, we will need to Gala jump on our orders to insure we can get a variety of grapes. Some grapes will not be a problem. Others will be difficult to purchase. Sammy has been in discussions with growers and will let us know February 16, 2011 when he knows more. Red Bordeaux Tasting But this is also a time to think about purchasing barrels. May15th is the deadline for purchasing February 27, 2011 barrels at Bouchard cooperages at a discount and with no shipping cost. They make Damy, Vicard, Argyle Winery Tour Billon and Cadus barrels. All their barrels are quite good, although each provides different component to a wine. -

Authenticity
THE BEST PROOF OF AUTHENTICITY 45 CHEESES, 3 BUTTERS, 2 CREAMS PROTECTED DESIGNATION OF ORIGIN PDO, PROOF OF GUARANTEE AND HIGH PROTECTION Origin of all manufacturing steps. Manufacturing in the production area (milk production, processing and ripening) is the number one guarantee by a PDO. Protection against theft. A product with a designation may not be copied! This means Reblochon wouldn’t be Reblochon without a PDO! Similarly, all Cantal cheeses are PDO and so on, it can’t be any other way! Preserving expertise. Because not just anyone can make a PDO however they decide, all the steps of obtaining a PDO are strictly defined in a specification note which is tightly controlled by an independent certification organization. Helping the economy of French territories. PDO products boost economic activity in areas that are often limited in terms of agricultural production. Total transparency. With PDO, nothing is hidden; everything is clearly and unambiguously laid out in the specifications. Diversity of flavors. Choosing a cheese, butter or cream PDO is to choose among 50 pro- ducts, all very diverse in their tastes, just like the richness of man and the “terroir” of each product. PDO products also promise not to all have a standardized taste. 1 11 REGIONS OF PRODUCTION PDO CHEESES, BUTTERS AND CREAMS 7 11 5 4 3 8 10 2 9 1 6 THE BEST PROOF OF AUTHENTICITY 2 CONTENTS PDO values p. 1 7 NORMANDY 1 THE SOUTH-WEST • Camembert de Normandie p. 16 • Pont-L’évêque p. 17 • Ossau-Iraty p. 4 • Livarot p. 17 • Rocamadour p. -

4Th June 2017 Domaine Auguste Clape
Prices valid from 23rd May - 4th June 2017 Domaine Auguste Clape Now in his eighties, Auguste Clape is one of the few remaining old-school proponents of French winemaking, a pioneering and unassuming genius who falls almost effortlessly into the category of ‘great.’ In reality, of course, there has been much effort involved, the Clapes inserting themselves into the northern Rhône landscape in the early 1900’s to build their fortunes from next to nothing. Indeed, the Clape Syrahs from the Cornas appellation are among the most celebrated in France. Auguste paved the way there as the first to bottle his own wine. Today he works alongside son Pierre and grandson Olivier, farming a mere eight hectares of precipitous terraces by hand using traditional methods. Here, old vines are harvested as late as possible in a gamble with Nature to produce wines capable of tremendous longevity. The King, then, of Cornas, both because his wines are widely considered to be the best from this tiny appellation, and because he has at times fought single-handedly to maintain its integrity. PLU Brand Name Vintage Retail Now 42403 DOMAINE AUGUSTE CLAPE CORNAS 2007 $160.00 $152.00 90-92/100 | Robert Parker: "A bigger wine, the 2007 Cornas exhibits notes of scorched earth, new saddle leather, blackberries, cassis, figs, and tobacco leaf. Luscious by Clape’s standards, it should age nicely for 15 years." It has been accepted for inclusion in Senior Theses by an authorized administrator of Scholar Commons. For more information, please contact [email protected]. 1 Thesis Summary The Spanish wine scene is incredibly diverse, and an immense number of different wines are made in the country. Likewise, Spain is incredibly rich in culture, with a wide array of languages, histories, cultures, and cuisines found throughout the nation. The sheer number and variety of Spanish wines and the incredible variety of cultures found in Spain may be daunting to the uninitiated. Thus, a guide to Spanish wine and culture, which not only details the two but links them, as well, may prove very helpful to the Spanish wine newcomer or perhaps even a sommelier. This thesis-guide was compiled through the research of the various Denominaciones de Origen of Spain, the history of Spain, the regions of Spain and their individual histories and cultures, and, of course, the many, many wines of Spain.
