    Innovations involved in Champagne Production circa 1700 - still, unblended, low alcohol (~9%), low tannin, acidic, darkish rosé (oeil de perdrix) - mild fruity/yeasty flavor (verjus pétillant) - sold in barrels in the spring - derived from crushed grapes & made from the first three pressings today - sparkling, blended, 12.5% EtOH, - low tannin, white, delicate complex - minimally fruity, toasty flavor, - 2nd fermentation in spring, - released $18 m after production - sold bottled - derived from whole grape clusters & primarily from the first pressing Knowledge and conditions ~ 1700 - the role of yeasts and bacteria in fermentation and wine ‘diseases’ unknown; - no means of measuring the sugar content of wine (leading to variability in degree of effervescence) - no tirage - cork closures and availablity of glass bottles just appearing - extensive bottle rupture due to the glass irregularity and inability to sustain the carbon dioxide buildup - occurrence of the “Little Ice Age,” (associated with early and late frosts, and poor grape maturation) - riddling unknown; inefficient disgorging procedures Current procedures - manual harvest (aiming for low EBrix) and EtOH 9–9.5% - slow pressing of whole grape clusters - use of oak as fermentation or maturation cooperage individualistic - malolactic fermentation (reduce excess grape acidity) - maturation and clarification until spring - blending to produce the assemblage - addition of a tirage (sugar, yeast, yeast nutrients, fining agent) - second fermentation (~10 EC) - storage for at least 15

    Sparkling Wines Seminar With Nicolay Castro February 20, 2014 France Champagne • Champagne is the premier sparkling wine of France, indeed of the world, the one most producers outside of the region try to imitate. • The main varietals used in Champagne production are chardonnay, pinot noir and pinot meunier. Certain minor varietals are also allowed to be used by law: petit meslier, arbane, pinot de juillet, pinot gris, and pinot blanc. • Champagne are rated according to a system known as ‘Echelle des Crus,’ which rates vineyards on a percentage basis between 80-100%: 90-99% are considered to be Premier Cru and those at 100% are Grand Cru. • Of the three major production areas in the Champagne region, Montagne de Reims is known for pinot noir, Vallee de la Marne for pinot noir and pinot meunier and Cote des Blanc for chardonnay. • Champagne must come from Champagne, France to be entitled to the appellation, and secondary fermentation must take place in the bottle. France Other French Sparklers • Crémant - methode champenoise wine made outside of Champagne: Jura, Alsace, Loire, Bourgogne, Limoux*, Bordeaux, Die (Rhone) • Mousseux- A sparkling wine produced in France that does not have to undergo methode champenoise: Anjou, Limoux* (Ancestrale* is another indication of a sparkling wine from Limoux), Bourgogne, Die, Saumur (Loire), Touraine (Loire) • Limoux: • Blanquette de Limoux- The oldest recorded AOC. Has to be produced from at least 90% Mauzac; the other allowed varietals are chardonnay and chenin blanc • Blanquette Methode Ancestrale- Has to be 100% Mauzac; due in part to the lack of disgorgement. Traditionally sweeter and cloudier than modern sparkling wines • Crémant de Limoux- See Crémant Italy Prosecco • Prior to 2009, Prosecco was both the name of the grape (which is now known as Glera) and a style of sparkling wine; primarily from DOCs in the Veneto region: Conegliano-Valdobbiadene, Conegliano, and Valdobiadenne.

Aubry Fils (JOUY-LES-REIMS) Philippe Aubry works with his brother Pierre and brother-in-law Noël Poret and has been trying to give expression to Champagne’s indigenous varieties such as Arbanne and Petit Meslier, as well as Pinot Gris (the local name is Fromenteau) and Pinot Blanc. “One of the most original estates in Champagne, Aubry Fils is located in the village of Jouy-lès-Reims, in the western sector of the Montagne de Reims. Of the estate’s 15 hectares of vines, 12 lie in Jouy and the nearby villages of Pargny-lès-Reims, Villedommange and Coulommes-la-Montagne, all of which are classified as premier cru; the other three hectares are located elsewhere and are sold off to the négoce. Proprietors Pierre and Philippe Aubry are twin brothers, although after a few visits it’s easy to tell them apart: Pierre says very little, and always seems to have a lit cigarette; while Philippe (pictured) is garrulous and inquisitive, as interested in what you have to say about the wines as he is in showing them to you. Outline analyses were carried out to compare the morphology of archaeological grape seeds from Troyes and Reims (frst c. AD to ffteenth c. AD) with that of a reference collection of modern seeds, including wild vines and traditional grape varieties, believed to be ancient and characteristic of the French vine heritage. This allows us to document the chronological dynamics of the use of the wild Vitis type and of the diversity of the varieties used, based on morphological disparity. After showing the existence of morphological types corresponding to geographical groups, we highlight a geochronological dynamic. Our results show that the wild type is used throughout the series, up to the Middle Ages. In addition, domestic forms, morphologically related to southern varietal groups, are very early involved in the Champagne grape agrodiversity. The groups corresponding to the typical grape varieties of today do not appear until the second millennium. These previously unsuspected dynamics are discussed in light of the social, societal and climatic changes documented for the period. According to archaeological and archaeobiological data, six centuries separate the development of viticulture in Mediterranean France from the advent of Champagne vineyards, which are now famous worldwide.

    Innovation in the vine sector: the Champagne region invents the grape varieties of tomorrow Press pack – 21 april 2016 2 FROM VINE DOMESTICATION TO THE EMERGENCE OF THE CHAMPAGNE REGION’S GRAPE VARIETIES The origin of the vine species Vitis dates back more than 60 million years to the early Tertiary Era. At that time, primitive strains of vine were confined to the Northern hemisphere. In the Champagne region, a fossilised vine leaf dating from the Paleocene Age (60 million years ago) was found in the Sézanne area. The Romans brought vine cultivation to Champagne between the 2nd and 3rd centuries of our era. The first ampelographic texts relating to the Champagne region date back to the 16th century. “La Maison Rustique” cites “Morillon, Pinot Aigret, Fromenteau or Pinot Gris and Gouais” among the best types of vine stock. Meunier, Pinot Gris and Pinot Blanc are some mutations of Pinot Noir. Petit Meslier is the result of a cross between Gouais and Savagnin. The origin of the Arbane grape remains a mystery to this day. For the most part, Champagne is produced from old grape varieties, along with one more recent arrival, Chardonnay, which has only been around for just over a century. Currently, there are seven approved Champagne grape varieties: Pinot Noir, Meunier, Chardonnay, Arbane, Petit Meslier, Pinot Blanc and Pinot Gris.
