    Cochinita Pibil This recipe from the Yucatan Peninsula serves 10 to 12. Recipe adapted from Rick Bayless’s Mexico: One Plate at a Time cookbook. Directions for working ahead are listed at the very bottom of this recipe. While the pork shoulder cooks, make the salsa and the simple pickled red onions. Ingredients 5 Tbs.
