YOUR O.A.T. ADVENTURE TRAVEL PLANNING GUIDE® Enhanced! Northern Greece, Albania & Macedonia: Ancient Lands of Alexander the Great 2022 Small Groups: 8-16 travelers—guaranteed! (average of 13) Overseas Adventure Travel ® The Leader in Personalized Small Group Adventures on the Road Less Traveled 1 Dear Traveler, At last, the world is opening up again for curious travel lovers like you and me. And the O.A.T. Enhanced! Northern Greece, Albania & Macedonia: Ancient Lands of Alexander the Great itinerary you’ve expressed interest in will be a wonderful way to resume the discoveries that bring us so much joy. You might soon be enjoying standout moments like these: As I explored the monasteries of Meteora, I stood in awe atop pinnacles perched in a boundless sky. I later learned that the Greek word meteora translates to “suspended in the air,” and that’s exactly how I felt as I stood before nature’s grandeur and the unfathomable feats of mankind. For centuries, monks and nuns have found quiet solitude within these monasteries that are seemingly built into the sandstone cliffs. You’ll also get an intimate view into two of these historic sanctuaries alongside a local guide. Could there be any place more distinct in Europe than Albania? You’ll see for yourself when you get a firsthand look into the lives of locals living in the small Albanian village of Dhoksat. First, you’ll interact with the villagers and help them with their daily tasks before sharing a Home-Hosted Lunch with a local family. While savoring the fresh ingredients of the region, you’ll discuss daily life in the Albanian countryside with your hosts.

JAKOBOVIĆ, 2015. Pomace brandy quality of cultivar Riesling White from Kutjevo vinegrowing region. Bulg. J. Agric. Sci., 21: 917–925 The research on pomace brandy from grape pomace cultivar Riesling White from Kutjevo vinegrowing region was con- ducted in the year 2004. The experiment with pomace obtained after pressing mash (pomace K) was set in five variants with three repetitions (pomace fermentation with epiphyt microflora, fermentation of pomace supplemented with yeast, treatment of pomace before boiling with commercial preparation of pectolitic enzymes – three different enzymes). Two series of experi- ments were carried out in the year 2005: pomace obtained after pressing mash (series K) and pomace remaining after sepa- ration of the free-run juice (series J). In that year with two main variants (pomace fermentation with epiphyt microflora and fermentation of pomace supplemented with yeast), the experiment of pomace treatment with one of the applied preparations of pectolitic enzymes was repeated. The analysis of the chemical composition of pomace brandy comprised the determination of the alcohol, the total titratable acidity, the share of

  • Accelerated Aging of the Traditional Greek Distillate Tsipouro Using Wooden Chips
beverages Article Accelerated Aging of the Traditional Greek Distillate Tsipouro Using Wooden Chips. Part I: Effect of Static Maceration vs. Ultrasonication on the Polyphenol Extraction and Antioxidant Activity Theodora Taloumi and Dimitris P. Makris * Department of Food Science & Nutrition, University of the Aegean, Mitr. Ioakim Street, Myrina 81400, Lemnos, Greece; [email protected] * Correspondence: [email protected]; Tel.: +30-2254-083-114 Academic Editor: James Harbertson Received: 29 November 2016; Accepted: 7 January 2017; Published: 17 January 2017 Abstract: The Greek traditional grape marc distillate Tsipouro was subjected to accelerated aging, using wooden chips from acacia, cherry, chestnut and oak wood. The processes included treatments under static maceration and ultrasonication and the evolution of the total polyphenol concentration was monitored over a period of 30 days. During this period, leaching of polyphenols from the chips into the distillate was found to obey first-order kinetics, but no statistical differences were shown between the two treatments regarding the enrichment of the liquid in polyphenolic substances. The determination of the antioxidant activity demonstrated that aging with chestnut chips may provide Tsipouro with particularly strong radical scavenging and reducing effects, highlighting its importance as a material that could be used to turn distillates into foods with functional properties. Keywords: aging; antioxidans; distillate; kinetics; polyphenols; Tsipouro 1. Introduction Aging is an important process affecting the quality of distilled beverages and it has become a common practice for several distilled drinks, such as whiskies and brandies, to mature, usually in oak casks [1]. The aging period in wooden casks is considered fundamental in contributing to the organoleptic characteristics of distillates, but there is an increasing trend in the implementation of alternative techniques of aging.
