To prevent wine from spoiling, the producers found a way to fortify the wine to survive these extensive voyages at sea. The process was to repeatedly heat the wine which developed new flavours such as roasted nuts, stewed fruit, caramel, and toffee, a process that now defines Madeira’s robust taste.
