Sejumlah sastra kuliner yang muncul dalam satu dasawarsa terakhir menjadi salah satu fenomena mutakhir sastra Indonesia. Sastra berwawasan kuliner telah menarik minat para sastrawan dalam memilih diksi dan membangun struktur cerita dalam bentuk puisi, cerpen, dan novel baik di media cetak maupun digital. Gastro kritik menjadi paradigma yang sesuai untuk mengkaji dan mengapresiasi munculnya sejumlah sastra kuliner tersebut. Pada makalah ini diuraikan tentang konsep paradigma gastro kritik, fenomena sastra kuliner dalam karya sastra Indonesia, fungsi dan peran gastro kritik. Sastra berwawasan kuliner bisa menjadi bahan kreatif penulisan untuk memperkaya identitas sastra Indonesia sekaligus sebagai wahana mengenalkan dan melestarikan kuliner Nusantara. Kata kunci: gastro kritik, sastra kuliner, sastra Indonesia Abstrak As the times progressed, Indonesian literature showed a development toward infinite creativity. A number of culinary literature that emerged in the last decade became one of the latest phenomenon of Indonesian literature. Culinary-minded literature has attracted the interest of writers in choosing diction and building story structures in the form of poetry, short stories, and novels in both print and digital media. Gastro criticism becomes an appropriate paradigm to examine and appreciate the emergence of a number of culinary literature. In this paper described the concept of gastro criticism paradigm, culinary literature phenomenon in Indonesian literary works, functions and the role of gastro criticism. Culinary-minded literature can be a creative writing material to enrich the identity of Indonesian literature as well as a vehicle to introduce and preserve the culinary of Nusantara.

Such case occurs on students from Pattani, South Thailand, who study in IAIN Tulungagung. To overcome that culture shock, Pattani students do communication accommodation to make them feel comfortable in a new environment, and thus can be accepted by Javanese students from Indonesia. This research was a kind of qualitative study. The data were collected by using observation and interview techniques. To find out the forms of communication accommodation performed by Pattani students, the researchers adopted communication accommodation theory by Giles. The results of this research revealed that there were two forms of communication accommodation performed by Pattani student. Firstly, convergence, was performed when Pattani students tried to level communication behavior with their speech partners. Convergence done by Pattani students can be classified into pre-convergence, convergence process, and post convergence. Secondly, divergence is defending Pattani identity when communicating with Javanese students. Divergence accommodation was performed in two forms namely verbal and non- verbal. Traditional food processes such as drying, canning or refrigeration offer a partial solution to this demand as the sensory quality of such food may be significantly affected or the products may be contaminated by pathogenic bacteria during preparation. For developing countries, safe shelf-stable food without the need for refrigeration would offer advantages. In addition, the increasing number of immuno-compromised populations in many countries requires a new approach to food safety to meet their needs. Irradiation offers a potential to enhance microbiological safety and quality of food through shelf-life extension. The benefits of irradiation as a sanitary treatment of many types of food are well known, some of which are applied commercially in several countries. Little data were available, however, on the effect of irradiation on minimally processed food and composite food including prepared meals. A Co-ordinated Research Project (CRP) on the Development of Safe, Shelf-Stable and Ready-to-Eat Food through Radiation Processing therefore was implemented by the Joint FAO/IAEA Division of Nuclear Techniques in Food and Agriculture in 1996 to evaluate the role of irradiation for such food.

Penelitian ini bertujuan : 1. Mengetahui genotype yang tahan ditanam di dataran rendah. 2. Membuat booklet cara pengolahan makanan berbasis biji gandum. Penelitian ini menggunakan metode percobaan dan explorasi. Pengujian adaptasi genotype dilakukan melalui penanaman 10 genotipe menggunakan Rancangan acak Kelompok dengan 3 Ulangan Perakitan teknologi tepat guna pengolahan makanan berbasis biji gandum dilakukan melalui tahapan :1. Penelusuran pustaka, 2. Penyusunan kerangka jenis olahan dan prosesnya, 3. Penyusunan resep olahan dan modifikasinya, 4. Percobaan pengolahan, 5. Pengujian organoleptik dan laboratories, 6. Penyusunan Booklet. Hasil penelitian menunjukkan bahwa : 1. ada 6 genotipe yang bisa bertahan ditanam didataran rendah. 2. Telah berhasil disusun dan dicetak suatu booklet berisi 25 resep dan cara membuat makanan berbasis biji gandum. Kata kunci : dataran rendah, gandum , olahan, pengembangan.
