Sam Choy, American Airlines’ Celebrity Consulting Chef Growing up in the small town of Laie on the North Shore of Oahu, Sam Choy learned to cook in his father’s restaurant, The Hukilau Café. Today, with three restaurants of his own, Choy is recognized worldwide for his delicious fare and friendly personality. He characterizes his award-winning cuisine as “a melting pot of the freshest ingredients from every culture on these islands.” In 2007, American Airlines utilized Choy’s expertise of Hawaiian cooking, which is strongly influenced by the Pacific Rim, California and Europe, by collaborating with him to design First and Business Class menus for American’s Hawaii flights. To customers’ great delight, his signature menu items are still served inflight on American Airlines’ Hawaii flights. In addition to creating palate-pleasing entrees for American, Choy has authored eleven top-selling cookbooks and frequently appears on hit Food Network programs including Extreme Cuisine, Emeril Live!, East Meets West with Ming Tsai, Sarah Moulton’s Cooking Live, Iron Chef America, The Food Network’s Luau Challenge and most recently Dinner Impossible. When he is not filming his weekly cooking show, Sam Choy’s Kitchen, or traveling to make special appearances or give cooking demonstrations, Choy oversees his talented team of executive chefs for his three restaurants located in Tokyo, Guam and on the Big Island of Hawaii. After handpicking each chef, Choy collaborates with them to develop a diverse menu for each restaurant. The result culminates in perennial awards of excellence for the restaurants and a carefully honed roster of loyal customers. Choy is a four-time nominee for the James Beard Best Pacific Regional chef award and in 2004, Sam Choy’s Kaloko Restaurant was the recipient of the James Beard/Gallo of Sonoma American Classics Award. Choy attended the local Kapiolani Community College where he discovered his love for cooking. .

This cookbook is a compilation of all the recipes in a unique and easy to read format. The recipes come from foodnetwork.com and can also be found in verbal form from the episodes of the show. Print out the Odd pages first, restack and flip and then print out the Even pages next. What s up with the format of the recipes? I hate the normal format for recipes. You can t find where you are in the recipe very easily and it s hard to determine which ingredient goes in when. With the layouts in this cook book, each step is linked to the ingredients for that step and each step is broken out and numbered for easy remembering. I hope you like it. Where d you get the data for each recipe? That, too, came from Food Network. I sometimes filled in my best guess. However, if there s little or no info, that s because Food Network didn t provide it. What if I need more info about the recipe? Each recipe notes he show from which it came. (Note: The title noted is the actual title.

Beard nurtured a genera- tion of American chefs and cookbook authors who have changed the way we eat. James Andrew Beard was born on May 5, 1903, in Portland, Oregon, to Elizabeth and John Beard. His mother, an independent English woman passionate about food, ran a boarding house. His father worked at Portland’s Customs House. The family spent summers at the beach at Gearhart, Oregon, fishing, gathering shellfish and wild berries, and cooking meals with whatever was caught. He studied briefly at Reed College in Portland in 1923, but was expelled. Reed claimed it was due to poor scholastic performance, but Beard maintained it was due to his homosexuality. Beard then went on the road with a theatrical troupe. He lived abroad for several years study- ing voice and theater but returned to the United States for good in 1927. Although he kept trying to break into the theater and movies, by 1935 he needed to supplement what was a very non-lucra- Biography tive career and began a catering business. Jonathan Scinto is a Chef, TV Personality, Spokesman and Host from Long Island, N.Y. He was born to an Italian Jewish family in Queens, New York. While, most toddlers were watching Sesame Street, Jonathan watched Julia Child, Emeril Live and Iron Chef Showdown in Japanese with his mother Alison. She allowed Jonathan to experiment in the kitchen using the blender to make crazy concoctions, scrambling eggs on the floor and even practicing his knife technique on his parent’s new vinyl chairs. The love of food was evident to his mom and dad. The Long Island native utilizes rustic Italian flavors and Asian influences to create what Chef Jonathan calls “Itasian”, a fusion of Italian and Asian cuisines. When Newsday asked Chef Jonathan about his cooking style, he told the journalist that he relies on his design knowledge to create plates of art work. “You eat with your eyes, then your mouth, so it’s important to grab your attention at first site then first bite, I don’t believe in using pre-made ingredients, I use only the freshest herbs and spices for my clients to achieve my #boldassflavors” and plates of art. After graduating college with a BFA degree from NYIT, Jonathan was hired by Post Perfect to work in their Catering/Client Services department working with such A-list clients like, HBO's Sopranos, Sex & the City, Back Street Boys, O-Town, Mariah Carey, Linkin Park and Alicia Keys. Long ii ABSTRACT Sue Carter Wood, Advisor This study positions cookbooks and their associated discourse as rhetorical, relevant to the field and worthy of scholarly study. I argue that cookbooks are more than a simple collection of recipes; the ways in which the texts construct and are constructed by society establish their significance as rhetorical texts. As women have been historically silenced and prevented from using dominant communicative methods, they have needed to develop alternative practices. Naming cooking as a women’s discourse created out of these alternative practices, I argue this form of communication constructed for women and by women has a powerful rhetorical impact which establishes women as experts within their own (private) sphere. This discourse not only enables women to value their own existence but it also gives them a space in which to perform rhetoric, in effect constructing a feminist practice. This analysis is based on synthesis between Certeau’s concept of “making do” and multimodal practice, as I argue cookery discourse is inherently multimodal. I develop my argument exploring what I identify as the major modes used in the discourse: social, visual, and performative. As my project works to extend theories of multimodality, making the concept more widely applicable in rhetorical scholarship, it also furthers work begun by Bizzell, Glenn, and others concerning the limited representation of women in the rhetorical canon, and aids in the rewriting of rhetorical history as women’s stories continue to be added.
