Pegasus Farm Handbook A collection of recipes and instructions for the Pantry’s bulk foods. Recipes and Instructions Sourdough Bread Mix 3.75 lb. mix (makes 2 recipes) Use approx. 5 cups of mix 1 3/4 cup warm water 1 1/2 tbsp. dry yeast Add yeast to water & let sit 5 min. Add mix & stir till all “drys” are wet. Knead or mix till smooth. Cover dough & let rise for 40-45 min. Divide into 2 loaves & place on sheet pan (covered) for 30-45 min. Bake for 35-40 min. at 375. Cut recipe in half for bread machine. Seven Grain Bread Mix 3.85 lb. mix (makes 2 recipes) Small package makes one recipe For one recipe use approx. 5 cups mix 1 1/2 cups warm water 1 1/2 tbsp. active dry yeast Add yeast to water & let sit 5 min. Add mix & stir till all drys are wet. Knead till smooth Cover & let rise for 45 min. Divide into 2 loaves. Place in greased bread pans & let rise till double in size. 1 Bake at 375 for 30-45min. Cut recipe in half for bread machine Blueberry Muffin Mix – 4 cups muffin mix 1 cup cool water Stir with a large spoon until smooth. Deposit batter into greased or paper lined cups and bake at 375 for 18-22 minutes or until done. Yield: 12 (2 1/2oz.) muffins Deluxe Pancake Mix 3 cups mix 1-1/2 cups water Combine mix and water. Blend with large fork. Pour on griddle (375). When top starts to bubble all over, flip cakes and bake till done. Yields approx. 15 pancakes. Dawn Pizza Dough Mix 1 2/3 cups mix 1/2 cup water Dough temperature 80F. Mix 10 minutes on low speed. After mixing, allow dough to rest for 30 minutes. Mold dough to shape & add sauce and filling. Bake at 425 until crust is golden brown. Yield 1 (11") crust. 2 Dutch-Whip Topping & Frosting, 1 ¼ cups Ice Cold Water (not iced) 1 ½ cups Dutch-Whip Topping Powder Place the mixing bowl and beaters in the freezer for 30 minutes before mixing. Pour ice water (no ice) into the bowl; add the powder; Mix on low for 1 minute. Scrape down the bowl; Mix on medium until peaks form and hold (4-6 minutes). Use immediately or refrigerate for later use. Options: Flavorings and colors can be folded in for use as a delicious, light, “not so sweet, creamy, cake & pastry frosting. Natural Black Raspberry Gelatin – “Gelatin Dessert the way it used to be” ….with Real Fruit, Natural Fruit Flavors & Natural Colors. ½ cup (level) gelatin mix 1 cup boiling water or juice 1 cup cold water or juice Add the gelatin mix to the boiling water and stir until dissolved. Add the cold water and stir. Fruit and other ingredients may be added as long as you add the juice as part of the cold water. Flavored Gelatin – Use a heaping 1/3 cup of gelatin for 1 cup boiling water and one cup of cold water. Cold Chocolate Milk Mix – ¼ cup (heaping) Cold Chocolate Mix, 16 oz. (1 pint) Cold Whole, 2%, or Skim Milk Pour milk into a pitcher Add the Cold Chocolate Mix, whip well with a wire whisk, and serve. More of less mix may be added according to taste. 3 7 Bean Soup - Dutch mini dumplings. 1 1/2 cups 7 Bean Soup 1 Ham Hock 1 Medium onion, diced 2 cups Celery, diced 2 cups Carrots, diced 5 Tbsp. Boyd's Ham Base 1/2 tsp. Black Pepper 3/4 cup Flour 1 Large Egg Soak beans in 4 cups water overnight in the refrigerator. Drain the water. Simmer beans (enough to cover) until tender. Drain and reserve the liquid. Cook 1 ham hock in 2 quarts of water until meat falls from the bone. Dice meat and reserve broth. Combine reserved broth and liquid from beans (add water to make 2 quarts) and cook the vegetable until tender. Beat egg. Place flour in a bowl. Pour egg in the middle. Use a fork to draw egg through the flour to form crumbs. Sprinkle crumbs into boiling broth. Cover and simmer 10 minutes. Add the ham & beans and serve. Natural Creamy Brown & Wild Rice Soup - NO MSG 1 ½ cups water 1 cup milk ¾ cup Creamy Brown & Wild Rice Soup Mix Pour water and milk into stock pot or double boiler, add the soup mix and stir. Let it sit for 5 minutes to re-hydrate vegetables. Heat on medium, stirring frequently (to prevent scorching) until it nearly boils. Reduce the heat to low and simmer for 20 minutes. Remove from the heat, cover and let steam for 5 minutes. Serve. Options: Add pieces of cooked chicken, ham, game, salmon or cheese to the finished soup for single dish meal. 4 Creamy Broccoli Soup, No MSG Added* ½ heaping cup Creamy Broccoli Soup Mix 1 ½ cups water 1 cup milk Mix liquid with soup mix in saucepan. Using a wire whisk stir well and bring the mixture to a near boil. Stir constantly to prevent scorching. Reduce heat and simmer 3-5 minutes. Remove from heat and cover for 5 minutes to allow the vegetables to hydrate completely. Serve. Options: Fresh broccoli florets can be placed in the liquid in the beginning of the process. Diced chicken or turkey may be added Hearty Soup Mix 8 cups water or broth 1 ½ cups Hearty Soup Blend 1 ½ tsp. salt 2 carrots 2 celery stalks 2 cups shredded cabbage 1 quart tomatoes 1 lb ground beef 5 Simmer Hearty Soup Blend for 1 hour. Add 2 carrots, 2 celery stalks, 2 cups shredded cabbage, 1 quart tomatoes, 1 lb. cooked ground beef. Simmer for 20 additional minutes. Organic Himalayan Rice Grain Blend 1 c. Org. Himalayan Grain Blend 2 c. Water 3-4 Tbsp. Butter or Oil 3/4 tsp. Salt Place rice and oil in large saucepan. Fry on med. high heat stirring constantly until lightly browned. Carefully add the liquid. Bring to a boil and reduce heat to low. Cover and let simmer 35-40 minutes. Do not stir. Turn heat off and let steam for 15 minutes. Fluff with a fork and serve. Serving Suggestions: Fresh vegetables like: carrots, onions, snow peas, celery, bok choi and/or mushrooms can be julienne cut and added at the end of the cook time and allowed to steam. Add your favorite spices like: black pepper, parsley, curry, oriental 5 spice, or soy sauce to make a delightful pilaf. Chicken broth can be used instead of water (Cooked meats may also be added). -Cook extra; store in the refrigerator to add to other meals, soups, or heat & add a little to milk, honey, and cinnamon for a nutritious breakfast. 6 Organic Harmony Soup Blend 2 cups Harmony Soup Blend 1-3 lb. Whole Chicken 3 quarts water 1 Tbsp. Dry Savory Leaves 1/2 tsp. Black Pepper 1 1/2 tsp. Garlic Salt 1 quart Water 1 cup Fresh Diced Carrots 1 cup Fresh Chopped Onion 1 cup Fresh Diced Celery with leaves 2 tsp. Salt (or to taste) 1/2 tsp. Turmeric ~Soak the harmony soup blend overnight in (1) quart water in the refrigerator, then drain and throw the water away. ~In a 6 quart pot, place the chicken, 3 qts. of water, and the pre-soaked soup blend. ~Add the garlic, salt, turmeric, black pepper and savory; cook for 1 hour or until the chicken is tender; remove the chicken so it can cool. ~Add the carrots, celery and onions; cook for 20 minutes; while you de-bone the chicken. ~Add the cooked chicken meat; bring back to a boil; remove from the stove and serve. 7 Dutch Potato Salad Mix 8 Cups Cooked Potatoes - Diced (Russet potatoes, boiled in the skin, then peeled & diced are preferred). 1 cup mayonnaise 1 cup Dutch Potato Salad Mix 1/2 cup water 3 - 6 hard boiled eggs - peeled and diced (optional). Cole Slaw Dressing 1/2 Head Cabbage- Shredded (about 2lbs) 1 cup Mayonnaise 1/2 cup Sour Cream 1/4 cup Apple Cider Vinegar 3/4 cup Creamy Coleslaw Dressing Mix Instructions: Mix the dressing together, then fold in your cabbage, let set for 1 hour or more, refrigerate and serve. Amish Macaroni Salad Mix 1 LB Elbow Macaroni 2 cups Mayonnaise (16oz) 1 cup water 1 cup Amish Macaroni Salad Mix 3-4 Hard Boiled Eggs - peeled and chopped (optional) Instructions: 1. Mix mayonnaise, water, and Amish Macaroni Mix together and set aside. 2. Cook macaroni in boiling water; cool well under cold water; drain well. 8 3. Fold the drained macaroni & egg into the dressing, cover and refrigerate overnight. Natural Sloppy Joe Mix 1lb Fresh Ground Meat (beef, pork, turkey, chicken, venison) 1 cup (0.38lb) Natural Sloppy Joe Mix 1 cup Water 1. In heavy pan brown meat on medium high; drain fat if excessive. 2. Add Nat. Sloppy Joe Mix; stirring until thoroughly blended into meat. 3. Add water, stir in well, simmer on low for 10 or more minutes to cook vegetables in mix. Sloppy Joe can now be transferred into crock pot if need for serving. Options: Serve on hotdogs. Try adding Cumin & Hot Peppers for a southwest version. Also great in pulled Chicken, Pork, or Beef by adding the mix and water together; heat to thicken; then pour over the meat; gently fold together. Ranch Dip Mix (No Msg) Ranch Dip Mix 8 ounces Sour Cream 9 1/4 cup Ranch Dip Mix Blend the sour cream and the dip mix together well.

    American Punk: The Relations between Punk Rock, Hardcore, and American Culture Gerfried Ambrosch ABSTRACT Punk culture has its roots on both sides of the Atlantic. Despite continuous cross-fertiliza- tion, the British and the American punk traditions exhibit distinct features. There are notable aesthetic and lyrical differences, for instance. The causes for these dissimilarities stem from the different cultural, social, and economic preconditions that gave rise to punk in these places in the mid-1970s. In the U. K., punk was mainly a movement of frustrated working-class youths who occupied London’s high-rise blocks and whose families’ livelihoods were threatened by a declin- ing economy and rising unemployment. Conversely, in America, punk emerged as a middle-class phenomenon and a reaction to feelings of social and cultural alienation in the context of suburban life. Even city slickers such as the Ramones, New York’s counterpart to London’s Sex Pistols and the United States’ first ‘official’ well-known punk rock group, made reference to the mythology of suburbia (not just as a place but as a state of mind, and an ideal, as well), advancing a subver- sive critique of American culture as a whole. Engaging critically with mainstream U.S. culture, American punk’s constitutive other, punk developed an alternative sense of Americanness. Since the mid-1970s, punk has produced a plethora of bands and sub-scenes all around the world. This phenomenon began almost simultaneously on both sides of the Atlantic—in London and in New York, to be precise—and has since spread to the most remote corners of the world.

Stuffed Celery Jeanette New, The Village Homemakers INGREDIENTS — Cream Cheese Chopped pecans DIRECTIONS — Mix well and stuff celery. NOTE: May substitute peaches and/or pineapple for pecans. Teriyaki Chicken Wings Marilyn Watson, Town and Country Homemakers INGREDIENTS — 3 lbs. chicken wings 3/4 teaspoon pepper 1/4 teaspoon garlic powder 1/3 cup lemon juice 1/4 cup catsup 1/4 cup soy sauce 1/4 cup oil 2 Tablespoons brown sugar DIRECTIONS— Mix sauce, then add chicken and marinate overnight in refrigerator. Arrange in a single layer baking dish and cook until done.
