Whipped Cream Has Been Around Since The 16th Century On January 5, add a little extra something special to desserts to celebrate National Whipped Cream Day. Add whipped cream! Not only does it add creaminess and bit of pizzaz, but it also makes the difference between the ho-hum or a celebration kind of beverage or dessert. This holiday falls on the birthday of Reddi-wip founder Aaron “Bunny” Lapin. Aaron who invented Reddi-wip in 1948, was born on January 5, 1914, and died on July 10, 1999. It was in 1946, when the aerosol can was first invented by Aaron Lapin, that sales and popularity of this dessert delight really took off. Whipped cream is also sometimes called Chantilly cream or creme Chantilly. Recipes from the 16th century included whipped cream that was sweetened and aromatised. The names milk snow and snow cream were used. The English name whipped cream found its beginning in 1673. The name snow cream continued to be used throughout the 17th century. Chilled cream whips better than warm cream, at times if not chilled properly the cream may not whip. Also, it renders a deeper taste. Cream must be below 50 degrees to whip, at 50 or above it churns into butter rather than whips. Whipped cream has been around since the 16th century. It was included in recipes that date back to 1549 in Italy and 1604 in France. Until the 19th century, recipes for whipped cream called for whipping the cream with a willow or rush branch in place of the modern whisk. -

Oranges, lemons and grapefruit, singly and in combina- tions, offer great variety to salads. They are all-the-year fresh fruits, always available. They combine well with other fruits and with many vegetables. They are equally good in all forms of salad, the simple mixed salad, the jellied salad, the dessert or sweet salad and the frozen salad. In any of these forms the vitamins in the fresh uncooked citrus fruits will increase nutrition and vitality. The minerals and acids contained so richly in the California citrus fruits aid diges- tion as well as furnish these necessary elements to the body. These fruits are a correct balance to the protein foods that make up the main course of luncheon or dinner, for although acid in flavor their reaction in the body is alkaline. All fruits for salads should be carefully prepared so that they look attractive and appetizing. When oranges or grapefruit are used they should be peeled first and then all the thin white separating membrane should be removed from the sections. The California citrus fruits are easily peeled and separated into sections or segments and the scarcity of seeds makes them especially well adapted to use in salads. Lemon juice used in all forms of salad dressing in place of vinegar gives a delicate and individual flavor that blends harmoniously with the other ingredients and develops their individuality. -

Kraft traces its history to three of the most successful food entrepreneurs of the late 19th and early 20th centuries — J.L. Kraft, who started his cheese business in 1903; C.W. Post, who founded Postum Cereal Company (later renamed General Foods Corporation) in 1895; and Oscar Mayer, who began his meat business in 1883. The Story of J.L. Kraft The history of KRAFT goes back to 1903, when, with $65 in capital, a rented wagon and a horse named Paddy, J.L. Kraft started purchasing cheese at Chicago’s Water Street wholesale market and reselling it to local merchants. Within a short time, four of J.L. Kraft’s brothers joined him in the business, and, in 1909, they incorporated as J.L. Kraft & Bros. Co. In 1914, J.L. Kraft and his brothers purchased their first cheese factory in Stockton, Illinois. In 1915, they began producing processed cheese in 3-1/2 and 7-3/4 ounce tins. J.L.
